ChickenCoupe, I would say that the orange looking small sweet potatoes were probably the Beauregard, though I am not an expert, I have never seen any white looking ones. Of course I bought the one's that I raised at the grocery store to make slips so do not know what kind they are for sure. I have read post that state they didn't like the Beauregards or that they were not as sweet as other kinds. But I have read that the Beauregards are famous for they're turn out. But if they are not sweet enough a little sugar can help that. A little dark brown sugar or molasses can is fantastic. I believe sometimes the soil has something to do with the way things taste. I know it does with watermelon & cantaloupe, as they will seem to taste sweeter if raised on sandy land than on dirt natured soil. Sweet potatoes may be the same way. I think onions taste different on different types of soil as some are more stronger tasting on some soils than others. But like I said that is just my opinion. And it doesn't count for much.

I make Baked Honey Custard often; it's easy, not too sweet, and comforting. BAKED HONEY CUSTARD Source: lifesafeast.blogspot.com 3 large eggs ý cup (125 ml) runny (liquid) honey ü tsp salt 3 cups (700 ml) milk ý tsp vanilla extract Nutmeg Preheat the oven to 350ðF (180ðC). Prepare 6 to 8 ramekins or oven-safe custard cups; place them in a baking pan that will hold water. Place the 3 cups milk into a saucepan and gently (over low to medium heat) bring it just up to the boil. Immediately remove from the heat. Whisk the 3 eggs in a medium to large bowl. Add the honey and salt and whisk briskly until well blended. Pour the scalded milk into the egg and honey mixture in a slow stream while whisking constantly. Once all of the milk has been blended in, stir in the vanilla. Evenly divide between the custard cups which are already sitting on the baking pan. I find it easier to pour the liquid into a large measuring cup with a spout, which allows you to pour cleanly into the cups without making a mess. Dust the top of each custard with just a tiny pinch of nutmeg and place the baking pan in the preheated oven. Very carefully pour very hot water (tap water is fine) in the baking pan, around the custard cups, careful not to get any water in the custards. Bake the custards for 40 - 50 minutes (the original recipe called for closer to 35 minutes for individual custard cups while mine baked closer to 50 minutes. Just check often.) The custards are done when set in the center; test by very gently touching the top of the custard or gently jiggling the pan. The will continue to firm up a bit when chilling. When set, remove the pan from the oven and place on a cooling rack. Allow to cool for about 10 minutes. Carefully lift each custard from the water bath and place on a cooling rack until cool enough to refrigerate. Cover each in plastic wrap and chill. Teresa

Here is the lime Jello recipe. Make it the day before serving. I will look up the au gratin recipe for you later. Buy the small box of lime flavored Jello and the small sized can of crushed pineapple and 8 ounces of sour cream. Drain the pineapple well, pressing the pineapple with a large spoon in a sieve to get the juice, and save the juice. Follow the directions on the box for how much boiling and cold water to use to mix it, but use all the drained juice for the cold water, adding enough water to make it the right amount. Sometimes I use 2 or 3 tablespoons less of the cold water to help make the Jello firmer. When the Jello is thoroughly dissolved, stir in 1 cup of sour cream--I use a whisk and room temperature sour cream to make it combine well but do not beat it with the whisk or it will make it frothy, just stir it. Then cool it in the mixing bowl in the refrigerator until it is starting to set and is somewhat thickened. Stir in the crushed pineapple so it is evenly distributed and pour into a very lightly oiled mold or individual molds or custard cups. Put back in the refrigerator for several hours or overnight. When it is time to serve, garnish the individual salad plate or serving plate with leaf lettuce. Run your finger around the edge of the mold to loosen the top of the mold from the very top of the edge. Fill a large bowl or the sink with hot water and dip the bottom of the mold up to the edge of the Jello into the hot water. 5 to 10 seconds for a custard cup size mold, 10 - 15 seconds for a large mold. Tip over the cup mold into your hand and give it a good shake. It should drop out onto your hand. For the big mold, quickly tip it onto the lettuce on the plate and give it a good shake to loosen it. Voila. You can make a larger recipe by increasing all the ingredients if you are using a large mold. You could even make this in a lightly oiled glass baking pan, cut it into squares and use a spatula to lift out each serving.

This will be the first year I’ve not made DH’s beloved cheesecake. In the interest of ‘adding’… I see above that I abhorred chocolate pot de crème due to the grainy texture, but since then I’ve acquired a sous vide, and as Islay wisely said, no better (or easier) way to make the perfect pots de crème, even non-grainy chocolate. Here’s my recipe: Sous Vide Chocolate Pots De Crème Ingredients: 4 cups of heavy cream 1, 9.7-ounce bar of Schaeffer bittersweet chocolate (or your favorite brand) 3 t espresso powder, divided 6 T sugar plus 1 t sugar, divided 2 pinches kosher salt 8 egg yolks Directions: Heat the cream in a pan over medium-high heat until the cream around the edges of the pan just starts to bubble. Do not let the cream come to a full boil. Remove from heat. While the cream is heating, coarsely chop the chocolate. While the cream is hot, whisk in the chopped chocolate, espresso powder, sugar, kosher salt. Whisk until smooth. Whisk in egg yolks one or two at a time, whisking completely after each addition. Pour the mixture into a large measuring cup suitable for pouring. Pour 6 ounces of the cream and chocolate mixture into 8, 8-ounce mason jars, leaving about 3/4" of air space in each jar. Do not fill to the top. Screw the lids on using your fingers only until the lids are finger tight. Do not overly tighten as air needs to escape from the jars during the cooking process. Fill a large pot or a 12-quart storage container with room temperature water and secure your sous vide circulator onto the vessel. Place the jars in the pot or container. Turn the sous vide circulator on and set it to 176 degrees Fahrenheit. When the water reaches 176 degrees set the timer for one hour. The water should cover the lidded jars. When the timer goes off, turn off the circulator and remove the mason jars from the circulator with a pair of tongs. Set the jars on a dry kitchen towel and allow to cool for a few minutes and then store in the fridge for at least two hours and up to several days. Top with sweetened crème fraiche, fresh raspberries, shaved chocolate, chopped toasted almonds, or best of all, serve plain : ) I hope others will chime in and add some of their recipes to this!
