Making Rosettes for Christmas

We're invited to our DD new in-laws for Christmas dinner. I plan to bring a big plate of Christmas goodies, and will be making rosettes tomorrow or Friday. Anyone out there know the best way to store them so they stay crispy and don't get limp and soft?

Are these made of frosting or candy? I used to store them on a cookie sheet in the freezer.

I'm assuming that you mean the ones that you make by dipping a rosette iron in the batter and then in hot oil, correct? I love those, and I love making them, but haven't in several years.

I used to store them in layers with newspaper between them; that is the way that was recommended to me and it worked perfectly. Do not put them in the refrigerator. Now that I think about it, I'm wondering if the newspaper was a good idea or not, but newsprint never came off on them and they were never a problem. So, if I were to do it again, I'd do it the same way.

My mother wasn't a baker - she was too impatient - but I'm the opposite. The weeks of marathon baking, candy making, caramel corn, fruit cakes (dark and light), pound cakes, party mix (and other snack-mixes), and any number of other assorted goodies I once loved doing are officially over. I honestly don't think I could afford it anymore!!! It was one time of the year we could share our bounty with others. The dining room table was filled with plate after plate, bag after bag, box after box, of goodies distributed far and wide. Now you have to worry who's gluten-free, dairy-free, nut-free, sugar-free, fat-free, cholesterol-free, low-carb, paleo, vegan, vegetarian, and cross-contamination....and it takes all the fun out of it. Years ago, this was about the only time we had these kinds of goodies, and now we are all trying to avoid them (LOL). I remember gallon and 1/2-gallon jars filled with those tiny little Peppernuts. Then there were pressed cookies, thumbprint cookies, whole wheat sugar cookies, gumdrop cookies, snickerdoodles, rosettes, Christmas mince bars, chocolate pixies, turtle cookies, shortbread, ginger creams, spritz, chocolate and almond teacakes, glazed fruit bars, peanut butter oatmeal cookies..... It was great fun to get the whole family involved in production because we always talk about those memories of all the things we made in our dinky little kitchen. How hubby's famous microwave peanut brittle took up the whole kitchen table to cool. Now all fond memories.... :-)

Loonlake, I've always felt that this batter would be ideal for savory fillings. I'm looking for the timbale irons, or flat rosette shells for this purpose, to use with cold chicken, tuna, or egg salad and creamed lobster, etc. I vividly remember a set of flat molds in my mother's cabinet but don't recall her using them. For those who have never made rosettes, I'd like to warn you that there is a technique. Every time that I make them, my first cookie is a failure. It sticks, won't slip off the iron mold. Each cookie is fine after that first one. The reason for the failure is because I haven't submerged the iron long enough in the hot oil. That mold has to be hot, hot, as does the oil. Secondly, you must submerge the hot iron only part way up the sides of that mold or the cookie won't slide off easily into the hot oil. They are very simple and fun to make, but you have to master the technique. I see that there are youtube videos....watch a few of them. I had my grandmother and mother to teach me in person, to give me that visual memory. On its own, the cookie is not sweet. If you bite into a fresh rosette expecting something delectable, you'll be disappointed. It needs something! Powdered sugar is traditional and wonderful, but you can also use cinnamon sugar, drizzled icing, toppings that include jelly, honey, or maple syrup. A little bit makes a big difference. They would also make a lovely shell for the savory foods mentioned above. Dawn....they are very addictive. Very!

I used to bake when we were super poor and had no money. I found baking really inexpensive. I baked all the time for my children so the supplies were almost always on hand. I would bake cookies and bread, and one year I made chocolate covered cherries (I don't recommend it: they take FOREEEVVVER!) I even made Turtles, but over cooked the caramel so they were a little rock hard. hahahaha I even made little sled ornaments out of popcicle sticks. I keep meaning to make them again, they're so cute everyone loved them. But now? I don't have the time, nor the energy to make home made gifts. Besides, todays generation does not appreciate the home made things as much as we used to. I grew up with almost everything home made: my mom cooked from scratch (hardly 0 processed foods growing up), she baked everything (we never ate cookies from Christie), and mom is a seamstress so the vast majority of my clothes were made by mom. She also knitted so I had a lot of home made knit sweaters. I honestly don't know anyone who would appreciate them anymore.

It has been a while since we have had a fresh tree -- we had a cat who sprayed them. When we did have them, we would wash them -- spray them down with water outside when also making the fresh cut on the trunk and putting it in a bucket of water before moving it indoors. It helps, but it may not be enough. Since the tree is already lit, moving it outdoors would be the only real option -- and the sooner the better. I think a lit tree outdoors would be charming -- and some bird feeding ornaments a perfect touch. Patty, it's been a long time since I made these delectible cookies...they are soooo wonderful. I never tried to store them for more than a day or two. As I recall, I lined a box with wax paper, dusted powdered sugar, then placed the cookies in a single layer with more powdered sugar between the layers. Not air tight.

Dorothy, rosettes aren't candy or frosting, but a delicate, lacy deep fried cookie made on a special mold that is dipped in a light batter then carefully submerged in hot oil.

They can be dusted with powdered sugar, chocolate, or served like a waffle....covered with a savory white sauce with chipped beef or mushrooms, etc.

I usually made them the day before I needed them and put them in a tupperware cake carrier but just covered them with foil.

I made Rosettes for many years, and finally I gave up most baking because standing is too hard on my joints now. I taught my DGD, (the cupcake pro) how do make them; it does take a little practice. I gave her my irons and now she often makes some for me. Probably won't this year though because the shop is keeping her so busy.

Rosette's are delicate, and time consuming, yet sooo good. After making them I let them cool on a cookie sheet, lightly covered with a thin tea towel, then after they cooled, covered them with another thin tea towel. You don't want the powdered sugar to "melt" on them. Try them when you have sufficient time to ruin a few at first. ;

maybe instead of newspaper, use a brown grocery bag under them. I would think it would help keep them crisp by absorbing the oil. ? I have no clue though; whenever we made them we NEVER had any left to worry about storing! :)

Properly made rosettes are a real treat. My mother was great at making them. She and the neighbor would often get together at the holidays and spend all day making rosettes. They'd always drain them on paper bags. If anything in the plastic storage containers, occasionally some waxed paper underneath and possibly between them but usually they were the perfect thickness so they wouldn't crumble until you took a bite, then of course when they "explode" your clothes are covered in powdered sugar! I've been meaning to try making some. I'd think it'd be a lot of fun and a lot of memories.

Juellie - precisely - a brown paper bag would be perfect. And you're right, the paper absorbs any extra oil.

With the paper dividing the layers, they are fine for several days. No change in taste or texture. At least in my experience. Also, I do NOT store them in airtight containers.
