I bake mine instead of frying.

When done you cut them in half for eating.

OK. Perhaps I should have made it more clear: The fine creek sand that I used was not cold. It was fresh from the creek, but I did mix it with HOT water. I simply used it like sandpaper. I scrubbed about 12 eggs that way. I do NOT use that method any more. I do NOT use cold water in any part of my cleaning process, and I don't soak the eggs. I pour hot water over them in a wire basket, but I don't soak them. My birds are housed at night in a predator-proof coop with nest boxes lined with straw. They lay eggs in these boxes before I release them, and I have never had one laid on the ground. If an egg looked like a dirt clod I wouldn't use it. My ducks spend the day along our rocky, clean, cold, spring-fed, fast-moving mountain creek. My birds are mostly Welsh Harlequins imported directly from Holderreads Waterfowl Farm. I chose them for their egg-laying ability, which is reportedly equal to or better than a good chicken. I've had dozens of eggs so far even in fall/winter, and they taste great. I realize that as ducks (and chickens) age, their egg production decreases. I will deal with that later. I don't have the info in front of me now, but as I remember it, The North Carolina Egg Law applies its stricter rules for those selling over 30 dozen eggs per week. I will not ever come close to that, but if I did, my eggs are still cleaned in compliance with the law. I've been in contact with the NC agricultural authorities to be sure. I started this whole endeavor as a fun hobby to do with my young daughters, and I will sell at most a few dozen eggs a week at a local tailgate market. I'm not a commercial grower, just a stay-at-home-mom trying to reconnect with her farm roots. I appreciate where you're coming from, and I can see that you have valuable information, but I really don't need someone implying that duck eggs are "bad" just because they come from ducks. They're not. I'm trying to sell a quality product here, and this is simply meant to be a fun, educational bonding experience with my kids.

Prices have gone up on milk and dairy products a lot in Annie's part of the world, but I'm not going to begrudge the farmer any part of it. The real cost is not in the bio-fuel industry, although a lot of non-farmers with acreage got dollar signs in their eyes and planted corn. We promptly got 7 weeks without a drop of rain and the corn crop went kaput and the non-farmers got a taste of farming reality. The real problem for farmers is the cost of fuel. It's way, way up, of course, and those tractors don't run on air. The more fuel costs, the more it costs to plant corn, cut and bale hay, whatever. The more it costs the farmer, the more he has to charge. Fertilizer has gone up, so has the price of seeds. Sigh. I'll also point out that much of that increase goes to the middle man, the one trucking stuff from one side of the country to the other. And there's the cost of fuel for that too.... I agree with LindaC, maybe the answer is to make less expensive goodies, substitute like Booberry is, make do with less. (shrug) I could do with a bit less butter and a few less cookies anyway, a dozen spectacular cookies on a nice platter would be greatly appreciated in my house, I can tell you that. Annie

I love custard! BAKED ORANGE CUSTARD (serves 5-6) 1 cup cream 1 cup orange juice 1/4 cup sugar 3 eggs, lightly beaten 1 1/2 tsp grated orange zest Pinch of salt Preheat oven to 325Â°. Combine all ingredients & blend well. Pour the mixture into custard cups & place in a pan of hot water. Bake until a knife inserted in the center comes out clean, 40-50 minutes.~~Craig Claiborne Here's a plain baked custard that's a really old recipe: CUSTARD 2 cups scalded milk 3 eggs 4 TBL sugar 1/8 tsp salt 1/2 tsp vanilla Nutmeg Scald the milk. Mix sugar, eggs, salt & vanilla & combine with the scalded milk. Pour into custard cups set in a pan of hot water, sprinkle tops with grated nutmeg & poach in a preheated 300Â° oven until firm.~~ (Do the knife test.) CHOCOLATE CREME CARAMEL (serves 8 if using 1/2 cup molds) Caramel base: 1/2 cup sugar 2 TBL water Juice of 1/2 lemon Chocolate custard: 2 cups milk 4 oz semisweet chocolate 4 eggs 4 egg yolks 1/2 cup sugar Preheat oven to 350Â°. Combine the 1/2 cup sugar, water & lemon juice in a saucepan & bring to the boil. Let cook, bubbling until the syrup becomes a light amber color. Don't let the syrup burn or it will be bitter. when the syrup is ready, immediately pour equal amounts of it quickly into the 8 custard cups. Swirl the syrup around so it covers the bottom of each mold. Let cool at room temperature. Heat the milk w/the chocolate, stirring often until the chocolate is dissolved. Beat the eggs, egg yolks & 1/2 cup sugar until thickened & smooth. Pour the milk mixture into the egg mixture & blend well. Strain the custard & skim off & discard surface foam. Ladle the custard into the 8 prepared molds. Arrange the molds in a baking dish & pour boiling water around them. Place the dish in the oven & bake until the custard is set in the center, about 30 minutes. Remove the custard cups & let cool. Unmold when ready to serve.~~Craig Claiborne COLD LEMON CUSTARD SOUFFLES (serves 8) 1 cup sugar 1/4 cup flour 1/8 tsp salt 2 TBL butter, melted 5 TBL lemon juice Grated zest of 1 lemon 3 egg yolks, well beaten 1 1/2 cups milk, scalded 3 egg whites Preheat oven to 325Â°. Generously butter 8 custard cups. Combine the sugar, flour, salt & butter. Stir in the lemon juice & zest. Whisk a little of the hot milk into the beaten yolks; whisk all the yolks back into the milk. Stir the yolk mixture into the lemon mixture until well blended. Beat the whites until firm but not dry. Fold the lemon mixture into the beaten whites. Spoon into the prepared custard cups. Place the filled cups in a baking pan. Pour enough hot water into the pan to com halfway up the sides of the cups. Bake 45 minutes. Cool to room temperature. Refrigerate until chilled, about 4 hours. Serve cold.~~San Francisco Encore

This is a link to a story in today's Baltimore Sun, and I have been thinking about these pastries for a looong time. First let me post the recipe.. Galaktoboureko Serves 16 This recipe for galaktoboureko squares comes from Nora Kefalas, who says any leftovers should be refrigerated uncovered to maintain crispness. Syrup may be made ahead and stored in a refrigerator for up to three weeks. Galaktoboureko also can be made into baked rolls of custard-filled phyllo dough. Custard: 4 eggs 1 teaspoon vanilla extract 6 cups milk 2 tablespoons unsalted sweet butter 1 1/2 cups sugar 1/2 teaspoon lemon extract rind of 1/2 lemon 1 cup semolina or farina Syrup: 1 tablespoon squeezed lemon juice 1 cup water 1 1/2 cups sugar 1 whole cinnamon stick Dough: 1 pound phyllo dough 1 1/2 cups melted butter-flavored Crisco for brushing phyllo cinnamon to sprinkle on top honey (optional) For the custard: In a small bowl, beat the eggs with vanilla extract and set aside. Then, in a pot, add milk, butter and sugar, using a wire whisk. Stir and bring to a boil. Turn heat down to medium and add lemon extract and lemon rind. While continuing to stir with whisk, slowly add farina. Continue to cook and stir until mixture thickens (about 3 to 5 minutes). Remove from stove and mix in the beaten eggs. Let cool for about 10 minutes. To make syrup: Place all ingredients in a pot, bring to a boil and let cook for 15 minutes. Remove from heat and remove cinnamon stick. Spread half the phyllo sheets on the bottom of an 11-inch-by-15-inch pan, leaving some hanging over the edges. Coat each sheet with melted Crisco. Then pour the custard in the pan, fold over the sheets and continue to coat with Crisco and layer the remaining sheets. Make several slits on top layer -- not cutting to the bottom. Bake at 350 degrees for about 35 minutes or until golden brown. Let stand for 10 minutes and then, with a ladle, pour syrup on top. Sprinkle with cinnamon. (If your custard is warm, your syrup must be cold.) Cut into squares and serve warm or cold. If desired, you may also drizzle honey on top. Per serving (square version): 515 calories, 8 grams protein, 25 grams fat, 6 grams saturated fat, 65 grams carbohydrate, 1 gram fiber, 64 milligrams cholesterol, 200 milligrams sodium Then here are the notes as to how the women prepare the bits and pieces in advance. A good idea if you ever want to get a bunch of people doing this together. It usually takes about 10 women to prepare the hundreds of cigar\-shaped galaktoboureko rolls for the festival. Weeks before the event, Kefalas and others meet at the church in the morning and make the custard, which takes more than two hours. "The church is what brought everybody together," Kefalas said. "We're all like a family down there. It's like home." On the stove, the mixture of milk, butter and sugar needs plenty of stirring to keep it from burning. Demonstrating in her kitchen, Kefalas makes it seem effortless. Then come the lemon extract, rind and farina, followed by the beaten eggs and vanilla, added slowly. The lemon helps cut back the smell of the eggs she'll mix in later (she always thought her mother and grandmother made it too eggy). This is the easy part. When the large batch of custard is finished, a second group of women arrives to roll up the filling in phyllo dough. They butter the thin, flaky dough sheets with a brush, spread them out, pour a line of custard in the middle, roll it all into neat little cylinders and freeze them. The syrup, made of lemon juice, water, sugar and cinnamon, is readied closer to festival weekend because it doesn't keep as long, she said. In the morning of each festival day, the women will bake the rolls, drizzle on the syrup and sprinkle some cinnamon on top. Each roll costs $1.50 and comes in a small wrapper.

Glenda, one of my fav take to a party breakfast is scotch eggs. So many people wonder how I get the sausage to stick to the egg. I tell them, what else would I use but Scotch tape~??
I love to serve them with hallendaise (sp) sauce too.
Yummy, and they really go a long way.

Tri, I roll mine in flour before wrapping with the sausage then roll in bread crumbs.

Is that how you do yours?

I made scotch eggs once years ago, just for myself, because I found a recipe in a cookbook. They turned out great and delicious too. Think I just covered a hard boiled egg in sausage and baked them. Mmmmmmmm. Now that I've read this post I need to try them again.

Glenda, would you please post your recipe for these scotch eggs? I'd really appreciate it - thanks for the tip of rolling in flour first.

If all you do is roll a hardboiled egg in flour, then sausage, then bread crumbs, then I guess that's it, LOL. But is there some hidden ingredient or secret that I don't know about? Do you bake them on a rack or just in a pan? Approximately how long does it take to bake? I see you made them the night before, so that's one question answered!

This could be great for my visitors coming this week, thanks!

For 6 large eggs, use 1 1/2 lb good sausage, divided into 6 large patties. Roll eggs in flour, then cover with the sausage, and roll in bread crumbs. I put them in the palm of my hands and rolled them softly before the bread crumbs.

Then store them on wax paper in a container overnite. I take them out of refrig at least 1/2 hrs ahead of baking.

Bake on a broiler pan that I sprayed lightly with pan.

Set oven for 400. Bake them 15 minutes, then turn and 15 more minutes. Should be perfectly done.

NOW be prepared for the sausage on some of them to separate. That's ok, cause when you cut them in half, cut where there is the flaw.

This morning I had to cook mine a bit longer, cause the first one I cut was still a little pink. Then they were a little overcooked.

Ones I made yesterday, for Christmas, were cooked the exact same way and came out perfectly done. DUH!

Think next time, I might use Jimmy Dean's with sage OR use Italian bread crumbs.

If you have a good dijon mustard, put it out, as some like mustard spread on their eggs.You CAN make them the night before, and serve them cold.

You cut them in half when serving.Let them cool a bit before attempting to cut.

LOL, my son loves these, and when I asked him if he had eaten one, his reply was: MOM, I already ate three.

I made six whole eggs = 12 halves

As I said, be prepared for some of the sausage to separate. But when you cut them in half, you will never know.

Thanks, Glenda! I think I'll be making them soon - the kids come on Wednesday through Sunday. (And they're definitely a mustard crowd.)

I just cover the eggs in raw sausage (after the eggs have cooled), no flour, and the warmth of my hands just molds the sausage on the egg. I almost always use store brand hot sausage. I put them in a brown paper lunch bag and shake them in crushed ritz crackers.
I bake them the same as you do. I put them whole in the fridge on wax paper overnight to serve the next day.
Before serving I cut them in half, then in quarters.
They are really easily cut when chilled.
I put them in the oven just on warm while I made the sauce for them, drizzle it over, and serve them warm.
Yummy!
