Q about almond bark

I plan on making almond bark in the next couple days and was wondering if, what would happen if I put a drop or two of almond extract in the melted white chocolate? I really like the almond flavor and thought his would pump up it up a bit. Or would the chocolate harden up like it did once when I tried to thin it out with some water, for dipping. Thanks for any in-put.

Almond extract I think will make it seize up Dotmom. Doesn't it have alcohol in it? Almond oil I don't think you'd have a problem with tho.

OR just to be on the safe side, I wonder if you could add the almond extract to the unmelted chocolate in the kettle or bowl or whatever you melt it in and try that?

I'm really not sure about the almond extract. Oil candy flavorings are safe. I used to melt the disk chocolates for candy lollipops etc and flavor with the little bottles of oil flavoring.

I grew up on a dairy farm in N.E.Ohio where we had 14 Belgian Draft horses, one team of mules, 3 donkeys and one riding horse. Although we had a tractor we did neary all of our farm work with horses, mules and donkeys. I was 5 years old when i began driving the draft horses and worked up from there. While it is commonly believed that donkeys and mules are stubborn that is not true, they are just smarter than horses. If you overload a horse they will keep on trying to pull even to the point where they will injure themselves but mules and donkeys are smarter. They know what their limits are, and if you ask them to pull loads up to their limits they will work fine, but if you try to overload them as you might the horses, the mules and donkeys simply refuse until you lighten the load.

Hi - I'm thinking the 'snap' may be due more to ambient temperature than anything inherent in the chocolate - do you store it in the fridge as the recipe directs? Or maybe...2 pounds spread on 11X17 baking sheet sounds rather thick - maybe use 2 sheets & spread thinner? I make almond bark w/ Sunspire organic choc. chips & a bit of fresh vanilla bean seeds(split bean & scrape out) &/or a few drops orange oil plus toasted almonds - spreading the melted mess onto parchment paper as thinly as possible. It comes out quite hard. Perhaps it's the white chocolate in the above recipes - doesn't that have a higher cocoa butter content? FWIW, HTH

Can't you just keep it room temperature? Whenever I made chocolates I would store them in a cupboard, well wrapped, away from other flavours. I think you will always get a haze on frozen chocolate even refrigerated chocolate.

Ack! I just noticed I typed chinos instead of CHISOS oak. Squirrels and I are at serious war; are they eating bark for food? Will neem oil help? I consider myself observant of my garden so was upset about this development. Either happened overnight or was so gradual that I overlooked. Other than abused bark, Tree is beautiful so no alarms had sounded off in my head.

Anything water based will make the bark seize up for sure. I've read about Peppermint bark so oil based additives must be okay - just as gel and powder colorings seem to be.

I just melt the white or dark bark, add the almonds in all states of whole and broken up and that's that. That's enough almond flavoring - for me, anyway, additional almond extract in anything can be a bit overwhelming.

Thanks KT gang...I guess I'll make my A.bark with just the white chocolate and sliced almonds. I really shouldn't make it at all....did you know Almond bark talks? After it sets and is ready to break into pieces.....it continually calls my name. LOL
