Couple questions about chocolate bark

I'm making several barks for gifts this year. I've already made the white chocolate/craisin/toasted almond one and its wrapped well in the freezer.

I haven't made the chocolate/peanut/raisin one yet, since I didn't want it to get a bloom in the freezer. I really want to make this stuff soon, since I'll be too busy later in the week. So when I make it, it will have to be at room temp until I give them away on Saturday.

So.....here are my questions.......Would chocolate always get a bloom in the freezer? If so, how far ahead could I make it and just keep it at room temp? Would it get a bloom in the fridge too?

Next question: If I wanted to plump the raisins with something like rum, would that mess up the chocolate they get mixed with for the bark?
