I originally posted this after a gal brought it for an American meal we were having for a group of guys that were visiting from all parts of the world. Everyone loved it too! I was very hesitant, as I don't like spicy nor blu cheese...at least I didn't think I like blu cheese! LOL She made it pretty mild, so everyone could enjoy it. By the end of the evening, people were using a spatula to get every last bit out of the pan! She had gotten the recipe out of a local paper. I have served it many times since.

I've made it several times and I'm always asked for the recipe. I served mine with celery with makes for a nice lo-carb snack.

Buffalo Chicken Dip

4 boneless, skinless chicken breasts (about 2 lbs) Rotisserie chickens work really well too!
1 12oz. bottle Frank's Hot Sauce
2 8oz pkgs. cream cheese
1 16oz. bottle blue cheese salad dressing(or Ranch if you prefer)
8 oz shredded sharp cheddar, Mont. Jack or a combo

Boil chicken until cooked through, shred with 2 forks.
Preheat oven to 350. In a 13x9, combine chicken with hot sauce and spread evenly.
In a large saucepan over med. heat, combine the cream cheese and dressing, stirring until smooth and hot. Pour evenly over chicken. Bake uncovered for 20 min., then sprinkle with shredded cheese and bake uncovered for another 10 min. Let stand 10 min. before serving.

I get ill just thinking about bleu cheese dressing. LOL Has anyone made it with Ranch? Anyway, sounds like a big hit with everyone.

The first time I made it I used ranch dressing. It was wonderful! This time I made it for a lunch at work. I was a bit worried about the blu chese, but there was none left over.
One of the guys said he didn't like blue cheese, but I saw him going back for seconds. LOL!

I made it with ranch because we are all ranch lovers around here. I also used the rotisserie chicken from costco..what a time saver! My sister is making one but she is going to try it with pace picante sauce (she's addicted to the stuff)...it should be ok huh? I love Blue cheese...think I'll make one for New years Eve with that and less spicy for me!

Do you eat it with chips, since it's called a dip?

I'm intrigued with the recipe and would like to try it. I don't care for bottled dressing of any type, so would make bleu cheese dressing from scratch. I can't imagine an entire 12-oz. bottle of hot sauce!!! I don't think I've ever used more than 1/2 tsp. of it in any recipe, so I can't even imagine cutting it in half and "only" using 6 oz. LOL. To those who have made it, does it set your mouth on fire?

My friends introduced me to this recipe a few years back; I'm surprised many of you are just now hearing of it. There's a lot of differenrt variations of it. I went to a small party a few years back and 3 different people had brought different versions!

I've had it with canned chicken (not my favorite, but a big time saver); Below's a link for that recipe. Some use a lot more hot sauce than others. I prefer the hotter versions, but it seems the milder versions get eaten quicker -- easier to down if not so hot. Some cube the chicken, instead of shredding it. If you shred, don't shred it too small; it's actually good to be able to taste the chicken. I prefer my sauce made with 1/2 ranch and 1/2 blue cheese dressing. If you're wondering what this tastes like -- well, just like chicken wings. If you want more recipe variations the recipe is often also called Chicken Wing Dip.

IMHO, the dip is best served with veggies- celery and carrots sticks, but you can serve with crackers or tortilla chips too. And, it's hot, but the salad dressings and the veggies really do cut the heat. I guess the heat level really depends on your own particular taste and how much hot sauce you decide to use. The dip really does taste like hot wings dipped into ranch or b/cheese sauce. It's yummy and very addicting.

Couldn't you serve this over rice or noodles, as an entree?

We must be weird....I made this last night and I think I'll end up throwing most of it out.The taste isn't bad but I don't care for the cheese on top in a layer.Has anyone tried it with (OMG!) Velveeta?I am thinking that if I mix all the ingrediants together and use Velveeta instead of Cheddar...it would be smoother and tastier...just a thought...Also,I used almost a whole bottle of hot sauce and found it could be hotter.Maybe use the whole bottle AND the Mexican Velveeta...it has Jalapeno's in it.I'm going to tweak it to our liking.It would be a good thing to take to picnics next summer.Also going to put more chicken in it...or perhaps hamburger.Ok...so I didn't really care for it,I'm going to make a whole new recipe that will be similar but not the same...LOL!

I guess to each his own...Not everyone can like everything...

Have you tried the below recipe? Sounds like maybe you would like it. You can use hamburger meat instead of sausage and salsa (as hot as you like) instead of the rotel. It too is a keeper in my book.
