Potato Spinach Casserole

Original Recipe Yield 6 to 8 servings

Ingredients

â¢ 7 large potatoes, peeled and cubed

â¢ 1 (10 ounce) package frozen chopped spinach, thawed and drained

â¢ 1 cup sour cream

â¢ 1/4 cup butter

â¢ 2 tablespoons chopped green onions

â¢ 2 teaspoons salt

â¢ 1/4 teaspoon black pepper

â¢ 1 cup shredded Cheddar cheese

Directions

1. Preheat oven to 400 degrees F (200 degrees C). Grease a 2 quart casserole dish.

2. Bring a large pot of salted water to a boil. Add potatoes and cook until tender, about 15 minutes. Drain and mash.

3. In a large bowl combine mashed potatoes, spinach, sour cream, butter, green onions, salt and pepper. Spoon into prepared dish.

4. Bake for 15 minutes. Top with cheese and bake 5 minutes longer.

I just had this yesterday and it is to die for.

Artichoke-Spinach Dip for a Crowd

1 tbs olive oil
1 c diced onions
4 cloves garlic, chopped
4 oz cream cheese
8 oz sour cream
2 boxes frozen spinach, thawed
and drained
1 can (14.65 oz) quartered arti-
chokes, drained
1/4 c chopped red bell peppers
1 c parmesan cheese, shredded
1 pkg (8 oz) monterey jack
cheese

Heat oven to 350. Spray 13x9 baking dish with Pam.

Heat skillet over medium heat. Add olive oil, onions and garlic. Cook approx 2 min or until onion is transparent.

Place cream cheese in microwave safe bowl and heat on high power for 1 min or until soft and melted.

Add cream cheese, sour cream, spinach, artichoke hearts, red bell pepper, and parmesan cheese to the onion garlic mixture. Mix well and pour into baking dish. Top with monterey jack cheese and bake for 35 min or until cheese is melted.

Serve with crackers or toasted bread.

Another recipe from the Milk Calendar: Ginger-Lemon Beef and Broccoli Serve it over rice or noodles to soak up the delicious sauce. 1 lb boneless beef grilling steak, cut into thin strips 1 cup milk 2 tbsp cornstarch 2 tsp grated lemon zest 1/3 cup reduced-sodium soy sauce 1 tbsp honey 1/4 tsp hot pepper flakes or to taste 1 tbsp butter, divided 1 onion, cut in half and sliced 6 cups broccoli pieces tbsp grated fresh gingerroot, or 1 tsp ground 2 tbsp freshly squeezed lemon juice In a bowl, whisk a little of the milk into the cornstarch to make a smooth paste. Whisk in remaining milk, lemon zest, soy sauce, honey and hot pepper flakes; set aside. Heat a wok or large skillet over high heat. Add half the butter and swirl to coat. Add beef and stir-fry for 3 minutes or until browned; transfer to a bowl. Add remaining butter to pan, then onion and stir-fry 1 minute. Add broccoli and ginger and stir-fry for 3 minutes or until onion is tender. Return beef and accumulated juices to pan. Whisk milk mixture and pour into pan. Loaded Mashed Potatoes Recipe courtesy Paula Deen Ingredients a.. 2 heads garlic b.. 6 pounds Idaho potatoes, peeled and quartered c.. Salt d.. 2 teaspoons freshly ground black pepper e.. 1/2 cup butter f.. 1 (12-ounce) carton sour cream g.. 1 (8-ounce) block sharp white Cheddar, grated h.. 1 1/2 pounds cooked bacon, julienned Directions Preheat oven to 350 degrees F. Cut tops off 2 garlic heads. Wrap in foil and roast for 30 minutes. When cool enough to handle remove the flesh from the garlic heads and set aside. In a large stockpot, cook potatoes in enough salted water to cover for 10 to 15 minutes or until tender. Drain and return to stockpot. Beat with an electric mixer until smooth; adding salt, to taste, pepper, butter, garlic and sour cream. With a spatula stir in cheese and bacon. Add more salt and pepper, if necessary. Cranberry-Eggnog Muffins Recipe courtesy Food Network Magazine Prep Time:30 min Cook Time:30 min Serves: 12 muffins For the Muffins: Cooking spray 1 cup dried cranberries, roughly chopped 1/2 cup rum or apple juice 2 1/2 cups all-purpose flour 2 teaspoons baking powder 3/4 cup packed light brown sugar 1/2 teaspoon salt 1 stick unsalted butter, melted 1 1/2 cups eggnog 2 large eggs, at room temperature 1 tablespoon vanilla extract For the Topping: 1 1/2 cups all-purpose flour 1 1/2 teaspoons ground cinnamon 1/2 teaspoon freshly grated nutmeg 1 1/2 sticks unsalted butter, melted 3/4 teaspoon salt 1 1/4 cups packed light brown sugar Prepare the muffins: Preheat the oven to 375 degrees F. Mist a 12-cup muffin pan with cooking spray. Warm the cranberries and rum in a small saucepan over medium heat, then remove from the heat and let steep 5 minutes. Drain. It might be too late for today's dinner, but I'm posting the slow-cooker dressing I made for today. Did you know that it's called Stuffing when it's inside the bird, and Dressing when it's cooked outside of it? I just call it stuffing, regardless. Slow-Cooker Stuffing/Dressing 3 tbsp butter 2 cups chopped celery 2 cups chopped onion 1/4 cup chopped parsley 2 cans mushrooms, drained 12 cups stale bread, cut into cubes (1 loaf) 1 tsp poultry seasoning 1 tsp dried thyme 1/2 tsp dried marjoram salt and pepper 2 eggs, beaten 2 cups chicken broth, approximately In a large skillet, saute onions, celery and parsley in butter until onions are soft. Combine bread crumbs, vegetables and mushrooms. Add seasonings; toss together well. Add egg and enough broth to moisten. Spray the slow-cooker with cooking spray, dump dressing in and cook on low 6-8 hours. **I omitted the mushrooms, as hubby doesn't like them at all. I have always added leftover cooked rice in my stuffings, and I added it here as well. The original recipe called for 4 cups of broth, but you only want it moistened, as the slow-cooker keeps the moisture in. 4 cups would make it too soggy for our tastes.

GS loves my "green" stuff :o)

Creamed spinach
2 packages frozen spinach, (10 oz each)
6 ounces cream cheese, softened ^^I use fat free
1/2 cup butter, melted, divided
1 cup seasoned bread crumbs
Dash of nutmeg: optional
PREPARATION:
Thaw spinach and press or squeeze to remove excess water. Grease a casserole dish and set aside. In a large mixing bowl, combine the spinach, cream cheese, and 1/4 cup of melted butter and nutmeg.
Spoon into casserole dish.

Toss remaining butter with breadcrumbs and add to top of casserole
Bake at 350 degrees for 25 minutes.
Serves 4.
