I make this a lot, it's easy and everyone loves it.

Buy 2 large containers of cool whip and a large pack of chocolate chip cookies.

Dip the cookies in chocolate milk. Just one dip, you don't want them to fall apart from being too soggy. Line the bottom of a springform pan with the wet cookies. Cover with one of the containers of cool whip (thaw it a bit or completely, whatever way is easiest for you to spread it on).

Make another layer the same way on top.

Then you can sprinkle whatever you want on top. I use crushes Crispy Crunch bars but you can use chocolate chips, shaved chocolate, coconut, drizzled chocolate or caramel or a combination of all of them.

Freeze until 10 or 15 minutes before serving.

This dessert looks incredible made in a clear glass bowl! Easy and tastes yummy too!

Buy a brownie mix and bake that. Everybody likes brownies! I always make them when I visit my old office buddies.

I make this often - in a hurry-

ECLAIR CAKE

2 cups whole milk
2 boxes french vanilla instant pudding
1 box graham crackers
1 12 oz. container cool-whip- thawed
1 can chocolate frosting

Mix pudding with milk, fold in coolwhip.
Line bottom of a 13X9 pan with crackers.
Layer 1/2 of pudding mix over crackers.
Place another layer of crackers on top of pudding.
Place remaining pudding mix on crackers.
Place remainder of crackers on top.
Spread icing on top.
Cover and chill.

You can always use whatever flavors you like but I like these best.

Dessert Pizza? I love cherry and blueberry! I've not made this yet, but what I'd do is buy the pizza crust and then top it.

Pizza Hut Dessert Pizza
Thin Crust
1 cup water
2 cups all-purpose flour
1 1/2 tablespoons vegetable oil
3/4 cup cake flour
1 teaspoon salt
1/4 teaspoon active dry yeast (proofed in water
at approximately 105 degrees F)

Crumb Topping
1/2 cup flour
1/2 cup brown sugar
1/2 cup quick oats
1/2 cup firm butter or margarine
1 teaspoon cinnamon

Vanilla Glaze
2 cups confectioners' sugar
3 tablespoons milk
1 tablespoon melted margarine or butter
1 teaspoon vanilla extract

Combine all crust ingredients in a mixer and knead for 10 minutes. Place in a large bowl, cover the bowl with plastic wrap and allow to ferment as long as possible (12 to 24 hours).

Punch down dough now and then when you get a chance.

Preheat oven to 550 degrees F.

Roll the dough as thin as desired. Roll, flour, flip and repeat until you end up with a shape equal to 90% the size of your pan, as it will stretch when you transfer the dough. Place dough on pizza stone or in pan. Brush with vegetable oil and prick with fork. Pre-bake for 3 minutes.

Remove from the oven and spread with cherry, blueberry or apple pie filling. If you want whole pieces of fruit with a thick topping, you will need 1 whole large can, otherwise you will need to purée half the filling if you want a thinner topping. After you have spread on the filling, you put on the crumb topping. Mix well with a fork or pastry blender. Spoon over pie filling. Use as much as you want of the topping. Put the rest in a zip-type bag in the refrigerator to save. Return pizza to the oven and continue to bake for 10 to 15 minutes or until crust is light golden brown. Remove and drizzle with Vanilla Glaze.

Yields one 16-inch dessert pizza.

Strawberry Magic Cake
1 10oz pkg. miniture marshmallows
1 box yellow cake mix prepared as directed on package
1 3oz box strawberry jello
1 16oz. box frozen sliced strawberries, slightly thawed, but do not drain
2/3 cup cold water

Spread marshmallows evenly over the bottom of a greased 10x13 baking pan. Spread prepared cake batter evenly over marshmallows. Sprinkle dry jello powder evenly over the cake batter. Spool slightly thawed strawberries here and there over jello powder and then drizzle evenly with 2/3 cup water, but do not stir. Slip cake carefully onto
center rack of a 350o oven, and bake 55-60 minutes or until top is golden brown. Let cool in pan at least 30 minutes before cutting.
Serve with Cool Whip or whipped cream. Refrigerate leftovers. Freezes well

A few months ago my neighbor made these Smores jumble dessert-They were bite sized little pieces and heavenly!

If I had to guess how she made them, put broken bite sized graham crackers in a large bowl and sprinkle in mini marshmallows. Melt some chocolate bars and drizzle enough on top so all the ingredients stick together. Stir well. Place on cookie sheet to "dry"

If I was 6 and you were making a dessert for me and the family, I would want you to bring Gumdrop Cookies. And I bet you have a recipe for them, too, Sandy! lol (That list of a million cookie recipes, remember?)

If you wanted something a little more grown up, how about this? it makes a big pan, you won't need all of it, just cut it into 1" squares and serve them at room temp or warmer, not cold. Cold makes them hard and they're really sweet, so warm is better. You can freeze what you don't take and have them for an emergency later! lol You could also add coconut if you'd like.

Chocolate Revel Bars Makes: about 75 bars
Prep: 30 minutes
Bake: 25 minutes

Ingredients
1 cup butter or margarine
2 cups packed brown sugar
2 eggs
2 teaspoons vanilla
2-1/2 cups all-purpose flour
1 teaspoon baking soda
3 cups quick-cooking rolled oats
1 14-ounce can (1-1/4 cups) sweetened condensed milk
1 12-ounce package (2 cups) semisweet chocolate pieces
1 cup chopped walnuts (I used pecans)
2 teaspoons vanilla

Directions
1. Set aside 2 tablespoons of the butter or margarine. In a large mixing bowl beat the remaining butter or margarine with an electric mixer on medium speed for 30 seconds. Add brown sugar; beat until well mixed. Beat in eggs and 2 teaspoons vanilla. In another large bowl stir together flour and baking soda; stir in oats. Gradually stir dry mixture into beaten mixture. Set aside.

2. In a medium saucepan combine the reserved butter or margarine, the sweetened condensed milk, and chocolate pieces. Cook over low heat until chocolate melts, stirring occasionally. Remove from heat. Stir in walnuts and the 2 teaspoons vanilla.

3. Press two-thirds (about 3-1/3 cups) of the oat mixture into the bottom of an ungreased 15x10x1-inch baking pan. Spread chocolate mixture over the oat mixture. Using your fingers, dot remaining oat mixture over the chocolate.

4, Bake in a 350 degree F oven about 25 minutes or until top is lightly browned (chocolate mixture will still look moist). Cool on a wire rack. Cut into 2x1-inch bars. Makes about 75 bars.

Make-Ahead Tip: Line the baking pan with foil, extending the foil over edges of pan. Prepare and bake bars in foil-lined pan as above. Cool; lift bars out of pan on the foil. Place uncut bars in freezer bag or container. Seal, label, date, and freeze up to 1 month. Thaw bars at room temperature about 15 minutes. Once thawed, cut into bars.

Quick and easy, and it involves ice cream - the best of all possible worlds!

ROSALINDÂS PARTY DESSERT

Arrange 12 ice cream sandwiches in a 9 X 13 pan.

Cover with large tub of Cool Whip.

Crush 4 Â 5 Skor bars and sprinkle over the top. Freeze.

Thaw a bit before cutting into squares for serving.

What great ideas...I was going to suggest the Eclair cake, so easy to make and so yummy....Just remember, if you do make it, make it the day before, it has to sit in the frig over night.....

How about Glenda's Crustless Buttermilk Pie? Can't get any easier than that!

CRUSTLESS BUTTERMILK PIE Â courtesy Glenda_Al

1 1/2 cups sugar
1 cup buttermilk
1/2 cup biscuit mix
1/3 cup melted margarine
3 eggs
1 tsp. vanilla

Preheat oven to 350 degrees F.
Mix ingredients with electric mixer. Pour in well-greased 9-inch pan.

Bake at 350 degrees for 30 minutes until firm.

This is one of my favorite desserts...make a day ahead or weeks ahead

FROZEN VELVET
1 8oz pkg cream cheese
1 cup mayo(I use Hellmans)
1/4 cup icing sugar
2 cups mini marshmallows
1 14 oz can peaches chopped in small pieces
8 marachino cherries chopped
whipping cream or 1 envelope dream whip prepared
Mash cream cheese in a mixing bowl
Add mayo and icing sugar...beat to combine.
Stir in marshmallows,well drained peaches and cherries
Fold in whipped cream or dream whip
Pack into a mold or empty cans(I use empty hunts tomato sauce cans,but whatever size you have on hand.
Cover with plastic wrap and put in freezer at least overnight.
Just before serving run warm water over can for just a second,remove other end from can and slide onto serving plate.
Cut into 1 in slices...top with a dollop of whipped cream or dream whip and top with a cherry.
I promise you this is smooth and creamy and not overly sweet.
I keep a couple cans of this in the freezer for unexpected company.
It sounds like a lot of work,but makes up in a couple of minutes.

That's sounds really good, Eliza Ann, thanks! I've saved that. It's similar to something I make using sour cream and fruit cocktail and bananas and cherries and nuts, but yours sounds even more like something I remember from way back.

Sandy, here's one that we love, and it takes about 10 minutes at the most to make.

CHERRY DESSERT
1 cup flour
1/2 cup butter, softened (room temp)
1/2 cup brown sugar
1/3 cup oatmeal (raw oats)
1 can cherry pie filling

Cut butter into flour and brown sugar until crumbly. Add oatmeal and combine. Put half of this in bottom of 8" square pan and pat down. Spread cherry pie filling over top of this. Sprinkle remaining crumbs on top. Bake at 350 for 30 minutes. Can double recipe and use 9x13 baking dish.

I have made Casey's dessert and it is very good and oh so easy. But I just use regular milk, not chocolate, to dip the cookies in. I don't think you would be able to tell any difference, and there's no need to have the added expense of chocolate milk, unless you have some on hand. I actually think you could dip them in water! The idea is to moisten the cookies, and the taste comes from the cookies and whipped topping. Also, I put it in a 9x13 pan, layering it about 3 cookies high. Whenever I see Chips Ahoy and Cool Whip both on sale, I know it's time to make that dessert. It doesn't sound particularly good, but tastes great!

FRUIT PIZZA

1 batch sugar cookie dough OR 1 roll Slice and Bake sugar cookies - baked according to package directions. Put cookies close together so there won't be any space between them. Bake in a regular-sized pizza pan. COOL.

Mix together:
4 oz. Cool Whip
8 oz. softened Cream Cheese
1 Tablespoon Sugar
1 teaspoon Vanilla Extract

Spread mixture on cooled dough, almost to edge of pan.

Top with circular pattern of any fresh fruit you like. I use canned peaches, and whatever other fruit desired (i.e., kiwi, berries, etc.). Bananas are great, but put a little lemon juice on them first so they don't turn brown.

Then spread peach or strawberry pie glaze over the top

When I read the title of your thread, before I even opened it, my first thought was "Hmmmm, A Quick/Easy GOOD Dessert"... go to a good bakery. lol Sorry, I'm no help at all, am I?

Here's the Fudge Pie that so many people made.
Fudge Pie
1 stick butter melted
1 cup sugar
1/4 cup flour
1/4 cup cocoa
2 eggs beaten
1 tsp vanilla.
Mix sugar, flour, cocoa, eggs, vanilla until blended, stir in melted butter,
Pour into regular thawed pie crust.
Bake at 325 for 35-45 minutes. Mine bakes in 35 minutes.

Hershey Bar Pie
6 regular Hershey bars, with or without nuts
20 large marshmellows
1/2 cup milk
1 graham cracker crust
cool whip

Melt bars, marshmellows and milk in microwave on low - stir often until completely melted.
Pour in pie crust
Refrigerate until completely set

Top with cool whip

I make a simple ice cream pie with a pre-made graham cracker crust, about 1 quart of ice cream (per pie), softened so that you can press it into the crust, whipped cream (I use a can, but you could use Cool Whip) on top and shaved chocolate (buy a plain candy bar and use a vegetable peeler) on top.

take a grahmcracker and put a hershey bar on top and then a couple mini marshmellows. put in microwave for 30 seconds, or until melted.
