What Are You Cooking Today?

I am cooking Great Northern soup beans and baking cornbread this morning. I will share with Amber. I just put the cornbread in and the beans are simmering. I might peel some potatoes later and fry them. Cole slaw sounds good too. Are you cooking anything today?

Have no idea yet, prob. do some chicken some way or another. Cooking isn't my favorite thing, mostly not knowing what to cook, after 40 some years of marriage! DH doesn't like my soupbeans, sounds good tho.

My husband doesn't like anyone's soup beans. He just loves sweet things. Didn't even eat his chicken and noodle soup last evening.

Well, breakfast was a slice of my homemade pineapple cheesecake, (balanced, of course; graham crackers are whole grain, cream cheese is a protein, and pineapple filling is fruit, right?) so for lunch I decided to eat some leftover asparagus with no dressing, and a hard-boiled egg. I'm really a happy camper, that cheese cake was so delicious and long over-due as a treat for me. Tonight I'll make some low-fat cream of asparagus soup from the peeled and cooked stems, made richer with leftover mashed potatoes and some powdered milk. CG - I've tried the shrimp in those grill woks, grates, etc. and also right on the grill (Virco). I've decided I like directly on the grill better as there is less surface area to rub off any marinades, etc. I simply turn them once with tongs. Works great and removes 1 more item from cleanup. BSBBQ - I saw a commercial for Johnsonville brats. They say to boil them in beer with chopped/sliced onion and a pat of butter for 12 minutes - then finish on the grill. I'm going to try this but not sure what the butter part would add. Probably coats them a bit to help create a skin/glaze or something when on the grill? I'm now changing this thread to "What DID you cook up on the 4th". :)

Hi Michelle, I'm waving at you from Boulder. We had less snow than you did, just 22 inches but I'm still willing to send some to Alexa. My 76 pound dog does not like the snow so in addition to shoveling the driveway and walks, Max had to shovel and tamp down a small area in the back yard so Oliver would go out. But it's sunny here and warmed up to about 30F so I am seeing some melting and evaporation now. Lindac - thank you! I had just about given up on the mixed bean blends. I have never been able to cook them so that some types wouldn't be hard when the others were cooked. It never occurred to me to soak them; I don't think any of the mixes I have bought have said to soak. I'm cooking beans here today also. Peruano beans - never cooked them before. I did a quick pressure cooker two minute soak then a rinse and 10 minutes under high pressure. They are just a little softer than I would have liked so I put a note in with the rest of the jar to cook for 8 minutes the next time. I'm adding smoked sausage, thyme, garlic, onion, some sort of hot pepper or chiles, and a few chopped tomatoes. I think I'll cook the rest of the ingredients together and then add the beans and just let them blend for a couple of hours since I don't want the beans to cook any more. They're not falling apart just a little softer than I would have liked. It's a good weekend for comfort foods. Lee

Although it seems like a forgiving dough - I can taste that I cheated on the overnight ferment. Sorry your casserole dishes aren't big enough. I bake in a toaster oven so when my bread rises it burns on top. Another reason P a L'A is good - it spreads out more than up. I brush the bread with some slightly salty water right before it goes in the oven. But I lose that lovely floury rustic surface. Do you have a pizza stone? That helped me get a better crust back when I last had an oven - now I use it in my grill to make pitas. Also I read somewhere or another about using a SS restaurant dish lid as a cloche though I've never seen one large enough. I am currently jealously watching a neighbor build a stone wood-fired bread oven by his pond - the ultimate bread oven. He says he will advise me when I am ready to build one - and I definitely do not lack for rocks. However right now my 'yard' is festooned with logs, brush and firewood piles. Hopefully in the near future the logs will become a woodshed and I can move the firewood inside. Then maybe a bread oven - which will entail moving rocks. I'm tired just thinking about it all. Making some tea and toast and taking a nap.

I think I might just pull some homemade chili out of the freezer tonight. I did pork pot roast last night, and fried chicken thighs (and gravy) with brussel sprouts and smashed potato, rutabaga, parsnips and onions the night before. Both after putting in 10 hour work days. It feels like time for a little rest today. Maybe I'll feel like cooking again tomorrow... and definitely on the weekend!

I made turkey chowder from the good turkey broth we froze after T-giving. I had to taste test it and is it ever good! I'll either make corn bread or biscuits, but I'm leaning toward biscuits.

BIG pot of vegan veggie soup. Daughter will be here about the same time as hubby.

Turkey meatballs with rice and rolls. Simple. Daughter is not feeling too well so I'm keeping it simple. I make the sauce for the meatballs by chopping onions, green peppers, garlic and sauteing. I then add tomato puree (lots of it) and let it simmer. I add salt to taste, cumin, rosemary and some blk. pepper. Add the meatballs and it's done. Great over pasta, too.

Since tonite is survivor night, I decided to make some good ol' southern fried chicken and gravy, mashed tatos, and corn. It is cold here too, and I thought it sounded good.
I think we only have one extra coming tonite, so we will enjoy a hot supper and enjoy the show!

I have been in the kitchen all day baking cookies and making peanut butter fudge.
We had left over tacos from one night earlier this week.
Tomorrow I will be back in the kitchen trying to finish up my baking then this weekend
I'll be shopping with DH so he can start and finish his Christmas shopping.
I hope everybody stays warm tonight.
