I've been baking for a couple of weeks, but yesterday was the most 'colorful' day. These goodies will add a lot more color to the gift containers.

Emi and her friend Lexie made these:

This is the White Gumdrop Fudge - I loved the way it came out!

These lemon cookies are really good - the recipe came from the Readers Digest's Most Popular Cookies - Link is below - These were so easy - 1 cake mix plus 2 eggs plus 1/3 cup veg oil. The recipe was for Lemon ones, but I also made Cherry and Orange. I'm thinking they'd be really pretty at Easter time as well!

The finished product! Put together with other cookies I'd already baked, packaged (6 of each kind), and ready to go home with family or friends!

Besides the ones we did yesterday, we've also made Sugar Cookies (rolled in green or red sugar), Chocolate Waffle Cookies, Peanut Blossoms (Peanut butter with a candy kiss in the middle), Oatmeal Cinnamon, Oriental Noodle Cookies, Mini-Chip Snowball Cookies, and Peanut Butter Heath Cookies.

I'd still have the ingredients and would like to finish making Sour Cream Raisin Bars, Holly Dolly Bars, and Salted Nut Rolls, as well as some more Sugar Cookies and Oatmeal Cookies.

Christmas baking is expensive and a lot of work and I don't do it every year, but it is sure a lot of fun to have them to hand out. I love doing that!

I know some have already shared pictures of Christmas Goodies in another thread (the one about the kind of Cookies we PLANNED to make), but if you didn't put pics there, how about posting some here? I'd love to see them!

Wow; I'm in awe! I haven't baked like that in years. I spend way to much time on homemade gifts and then don't have the energy or time to bake. Your plates look awesome and I'd love to be on the receiving end of one of them! ;) Are your chocolate waffle cookies made in the waffle iron? I've had that recipe for years but have never tried it. And what are the salted nut rolls? Sound delish! Good work!

Baked Apples This recipe I got fifty years ago from my husband's cousin and I use it all the time. Core apples, I use Golden Delicious. Cut in half and place the cut side up. Fill up a 9 x 13 inch pan. Mix together brown sugar and one small box of instant pudding, vanilla or butterscotch. Sprinkle over all the apples. Dot with butter and cinnamon. Sprinkle just a few drops of water over the top. Bake until done, basting from time to time with the syrup that forms. I never put anything else in them. Thanks, lindac. I think what I had was fresh. It was Reed's, which I think is supposed to be a very good brand. It didn't seem to be dried at all. And yes, it was VERY flavorful! Before baking, that is. I may try candying some myself, To see if that might have been the problem. Rusty

How Do You Make Your Baked Beans?

If we are talking canned beans, bushes vegetarian beans taste better than their orinal pork & beans To make my own I begin by baking a 12 or 15lb ham,, When the ham is baked I remove the skin and save it for my beans. After we have finished the ham I put the ham bone in the crock pot, then I take all the skin that I saved and cut it into 1" squares and put those in the crock pot. I then put two 1lb bags of dried navy or pinto beans in the pot (prefer one bag of each) and chop two or three large onions and toss them in. Add a 1/2tsp of chili powder, 1tsp of course black pepper and a cup of molassass. Turn the crock pot on high and cook for three to four hours (till the beans are done.) Sometimes I add a couple small cans of tomato paste too. Note: when the beans cook down all those pieces of the ham skin will soften and have the same flavor and texture as the chunks of meat in cambels pork & beans.

I usually post on The Diet Chat, but since these aren't diet-friendly LOL, I am posting them here. They are quick and easy and look good. PECAN CARAMEL BROWNIE CUPS 18-22 individually wrapped choc. covered caramels (Milky Way Chocolate Covered Caramels work best!) Mini-fluted foil or paper baking cup liners Â½ C butter (1 stick) 3 ounces unsweetened chocolate, chopped (I use the pre-melted NestlÃ©Âs*) 1 C sugar 1 tsp. vanilla 2 large eggs Â½ C flour Â¼ tsp. salt Pecan halves 1 bar (1.55 oz.) milk chocolate (optional) 1. Preheat oven to 350Âº F. Unwrap caramels and cut each in half with sharp knife. Line mini muffin tins with paper or foil liners. (Make sure to use liners in muffin cups; brownies will stick to pan, even if well greased.) 2. In large microwave-safe bowl, melt butter with unsweetened chocolate in microwave oven on High 1 minute; stir until smooth. (*30 sec. On high if using the pre-melted choc.) 3. With wire whisk, beat sugar, vanilla and eggs into melted chocolate mixture until blended. Whisk in flour and salt until smooth. Spoon batter by rounded measuring teaspoons into prepared muffin-pan cups. Top each with a caramel half and a pecan half (or quarter), lightly pressing caramel into the batter. 4. Bake brownie cups 10-12 minutes or until brownies are firm when lightly pressed. Do not over cook or they will be dry. Cool brownies in pan on wire rack 10 minutes. Remove from pan and cool completely on rack. 5. In microwave-safe cup, melt milk chocolate in microwave oven on High 45 seconds; stir until smooth. Cool slightly. Place brownies on wax paper lined cookie sheet. Pour milk chocolate into small self-sealing plastic bag. Snip 1 corner to make a 1/16-inch opening and drizzle chocolate over brownies. Refrigerate brownies 30 minutes or until chocolate is set. Store brownies in tightly covered container, with waxed paper between layers, at room temperature up to 1 week, or in freezer up to 3 months. Makes 36 Â 44 mini brownie cups. You could melt white chocolate to drizzle over the top to give them a different look. Or tint the white chocolate green or red for a festive look.

I want the Rolos with the Pecan!!!! Gonna make some of those. Do you really just melt them in the oven? For how long?

I think I make those lemon ones. Do they use cool whip? (I couldn't find the recipe on the link). If so, they are one of my all time favorite cookies.

Juellie, yes, the waffle cookies are made in the waffle iron. I've had the recipe forever (well 30 or 40 years) and hadn't made them for at least 6-8 years so decided it was time. I love them. We used to put ice cream between and just frost the top one to have homemade ice cream sandwiches!

Mush, I had the oven at 300 degrees and left the Rolos in for 1 minute plus 10 to 20 additional seconds. I think you could have the oven a little lower and leave them in a little longer and that would soften the caramel a little more instead of just melting the chocolate.

Casey, the pretzel ones are just round pretzels, laided out side by side on a foil covered cookie pan, then a Hershey's kiss placed in the middle. Heat for a couple of minutes in a 300 degree oven or until the kiss gets soft, then push a pretzel filled holiday M&M in the middle.

Carla, this recipe didn't use cool whip in the lemon cookies, just cake mix, 2 eggs, and 1/3 cup of veggie oil. I'd love to try the recipe with the cool whip, though, if you ever come across it.

Thanks everyone, for all the nice compliments. I just loved that White Gumdrop Fudge and the other quick candies. That's what turned my platters from kinda blah to something really pretty and festive!

Oh.. Jasdip, I missed your question. I put the rolos about 2 - 2 1/2 inches apart on the foil covered cookie sheet. I think the trick to not having them melt together is mostly just that of not leaving them in too long. I set that timer right at a minute ten seconds, then gave them another 10 seconds if the pecan didn't push into the rolo easily.

hi can i have the gum drop fudge recipe please i tried to make it yesterday and it didnt come out it was another recipe and i used white bark instead of the white chocolate chips... thanks linda w

I'll be over in a few! :)

I made chocolate Fudge yesterday but it's in the freezer until Christmas. Friday I'll make the Hershey's Kiss cookies.
