I'm invited to 2 functions where I have to bring an appetizer, so I'm going to post them here for opinions. This one looks easy and tasty and I could serve it on crackers.

Chip Pea Spread

1 can channa/chick peas/garbanzo beans, drained

1 heaped tbsp celery, chopped

2 tbsp mayonnaise

1/2 cup tomato, chopped

Place chick peas in a bowl, and mash with a fork, until desired texture is developed.

Add remaining ingredients.

Combine well.

Serve with crackers, bread.

Serves 4

Here are a couple from my Everyday Food cookbook:

White-Bean Dip
"This dip is a favorite among Everyday Food editors. Double the recipe to make extras, as it will keep, covered and refrigerated, up to three days. Navy beans can be used in place of cannellini

4 pita breads (8-inch size)
1 can (19 oz) cannellini beans, drained and rinsed
3 tbsp olive oil
3 tbsp fresh lemon juice (1 lemon)
salt and pepper
chili powder for sprinkling

Preheat oven to 350. Cut pita breads into wedges and place on a baking sheet. Toast until lightly browned and crisp, 10-15 minutes, turning once halfway through. Cool.

In a food processor, combine beans, oil and lemon juice. Season with salt and pepper. Puree until smooth.

Place in a serving bowl, sprinkle with chili powder. Serve with toasted or plain pita wedges.

Mozzarella and Grape Skewers

12 thin slices prosciutto halved crosswise
48 seedless red and green grapes (about 4 cups)
24 bocconcini (small mozzarella balls)

Fold each piece of prosciutto several times about 1" wide. Thread 2 grapes, 1 bocconcini and 1 piece of prosciutto onto each of 24 wooden skewers.

Spinach Dip

I make this each year for New Year's Eve. I do not use water chestnuts but use finely chopped apple. I serve it with veggies and or Hawaiian bread pieces or rolls.

1 envelope LiptonÃÂ® Recipe SecretsÃÂ® Vegetable Soup Mix
1 container (8 oz.) sour cream or 0% fat Greek yogurt
1 cup Hellmann'sÃÂ® or Best FoodsÃÂ® Real Mayonnaise
1 package (10 oz.) frozen chopped spinach, thawed and squeezed dry
1 can (8 oz.) water chestnuts, drained and chopped (optional)
1. Combine all ingredients in medium bowl; chill 2 hours.
2. Serve with your favorite dippers.

Here's a lightened-up Pasta Carbonara, that doesn't use cream. Using water from the pasta pot is a classic cookÂs trick. Starchy and salted, it makes a rich sauce when combined with the bacon, onion, and egg yolks in this recipe. It can also make a light flavorful sauce when mixed with grated Parmesan and herbs. Pasta Carbonara (Real Simple) 1 pound dry linguine 8 ounces bacon, diced 1 small yellow onion, finely chopped 3 large egg yolks 1 cup (4 ounces) grated Parmesan, plus more for garnishing 3/4 teaspoon black pepper Cook the linguine according to the package directions. Drain, reserving 1 Â½ cups of the cooking water, and return the pasta to the pot. Meanwhile, in a skillet over medium-high heat, fry the bacon until crisp. Transfer to a paper towel-lined plate. Spoon off and discard all but 2 tablespoons of the drippings. Return skillet to medium heat, add the onion, and cook until tender, 3 to 4 minutes. Working quickly, add the onion, bacon, and reserved pasta water to the pasta pot. Place over low heat and cook, tossing frequently, until heated through. Remove pot from heat and quickly add the yolks one at a time, stirring after each addition. Add the Parmesan and Â½ teaspoon pepper and stir until the sauce thickens slightly. Divide the pasta among bowls. Top with additional Parmesan and the remaining pepper.

Spanish paella with shrimp and scallops Preparation time: 35 minutes 1 tablespoon olive oil 2 cloves garlic, minced 2 cups chopped onions 1 cup short-grain white rice 1 cup low-sodium chicken broth 1/2 cup dry white wine 1/2 cup water 1 1/2 tablespoons fresh-squeezed lemon juice 1/2 teaspoon paprika 1/2 teaspoon saffron 1/4 cup boiling water 4 small plum tomatoes, chopped 1/4 cup chopped fresh parsley 1 jar (4 ounces) roasted red peppers, drained and chopped 1/2 cup frozen peas, defrosted 10 large scallops 20 large shrimp, shelled and cleaned Heat olive oil in a large skillet or sautÃÂ© pan. this is the recipe I have used for many many years for our New Years Hoppin John Hoppin' John 4 (or more- I prefer more) slices of bacon 1 large onion, chopped 1 large green bell pepper, chopped 1 stalk celery, chopped 2 Tbsp. chopped fresh garlic 2 cans chicken broth 1 lb. smoked sausage, chopped in 1' chucks 1 pound dry black-eyed peas (soaked overnight and drained) 2 Bay leaves 1 tsp. dried thyme 1 14 oz can of tomatoes, undrained Rice, cooked Green onions, chopped for garnish. Brown the bacon in a Dutch oven. Remove the bacon and eat it. Saute the chopped onion, bell pepper and celery in bacon grease until onions are clear. Add garlic and cook for another minute or so. Be careful not too burn the garlic. Add broth, sausage, peas and seasonings. Cover and let simmer on low heat for about 2 hours- check to make sure it's not stickin'. Check to make sure the peas are done before proceeding. Add tomatoes and cooked rice (about 3 cups, give or take, depending on how thick you like it) and cook uncovered on low heat, stirring often. Sprinkle chopped green onions on top just prior to serving. Cornbread and coleslaw make fine accompaniments to this and ham may be substituted for sausage. You can use rotel as part of the tomato for more kick, and I always add some Tony's seasoning to the batch.

Massimo's Canadian Sandwich (3 Chefs cookbook) Caramelized Onions 2 tbsp butter 1 tbsp olive oil 2 cups sliced onions salt and pepper Sandwich 4 ciabatta buns 1/4 cup tomato sauce 8 slices Gruyere cheese 1/4 cup caramelized onions 8 slices bacon, cooked crisp 24 oz cooked roast beef salt and pepper 1 tsp thyme leaves Heat the butter and oil in a skillet over medium heat. When the butter has melted, add the onions. Season with salt and pepper and simmer gently, stirring occasionally until the onions are caramelized and start to brown. Cut the buns in half and spread some tomato sauce on each half. On the bottoms layer a slice of Gruyere, then caramelized onions, two strips of bacon and 1/4 of the beef. Season with salt, pepper and thyme. Finish with one more slice of cheese and the top of bun. Grill in a panini press until the cheese is melted.

mini crockpot dip

1 8 oz. block cream cheese
1 can rotel, drained (rotel is diced tomatoes with green chilies)
1 lb. spicy breakfast sausage

Brown the sausage in a skillet and drain on a paper towel. Add cream cheese, rotel and sausage to small crockpot Cook on low
