Oven-roasted kale 'chips' -- delicious!

I was looking for something quick to do with kale tonight, and found some recipes for Kale Chips online. After reading glowing reviews I decided to try it--but to tell you the truth I wasn't expecting much. Boy, was I surprised!

The recipe called for cutting kale (just the leafy part, not the ribs) into bite-size pieces and tossing them with olive oil and either sea salt or seasoned salt. Instead, I spread the pieces on a baking sheet and sprayed them with olive oil cooking spray. Then I sprinkled half the sheet with sea salt and the other half with Tony Chachere's Creole Seasoning.

I put them in a 350º oven for 12 minutes. They come out browned and crisp.

Next time I'll be a little more cautious with the sprinkling, as they're a tiny bit over salted/seasoned for my taste. But they're delicious anyway!

Have you tried something similar?
