What's on your plate, for Wednesday?

A nice, sunny day for the most part today, then it turned cloudy. I raked 4 bags of leaves.

I bought some pork tenderloin and we had that with a sauce of raspberry jam (seedless) balsamic vinegar and dijon. Leftover mashed white and sweet potatoes and corn.

How was your day?

It was at least 10 degrees colder today and fairly overcast. Was supposed to get some sunshine but that didn't happen.

I had a hot ham and cheese sandwich and a bowl of cranberry beans. Quick and easy after another running around day.

Survivor tonight. Another night that during a two hour period, there are 4 shows I like to watch.

Fed Ex just brought my new Mobal phone for our trip to Germany, so I'm going to put it together and test it out. Can't be used in the U.S. but I can call it to see if it works. I'm also making an omelete right now. I got up late today, after staying up half the night. Doing laundry, dishes. After I eat breakfast I'll work out and then run to the bank. Also have to call a scrub company about a refund they never sent me, call the company I bought my treadmill from and find out where the part I ordered and paid for is. It was supposed to be here a month ago. I'll probably have to leave yet another message and hope they call me back someday. I've been trying to fix the stupid thing for a year now. Both kids are on Spring break and over their father's now. So, I have two days off and the house to myself...well, me and Luther anyway.

We're visiting family in Ponte Vedra for a few days. They're Robert's favorite sister and BIL, and I love them so much. We've been having a terrific time, but these people have no concept of healthy eating, lol. I went on strike last night and sent Robert out to pick up everything we needed for a big, crowded, crunchy salad. We grilled some fresh sbrimp that I glazed with a mango lime sauce and just laid the skewers on the salads. Yay! They loved it. We'll be leaving soon for beach time, visiting the graves of Robert's parents, driving around to look at sights, eating, and more eating.

After up early and having two crowns installed at my dentists, this afternoon we went to a nursery I like (I have a steep hillside to replant still in our garden renovations), then to Costco to keep an appointment for tires on the truck. Took a cooler and I shopped Costco - They didn't finish with the truck until 6:30 and we were still an hour from home. I had an Asian Chicken salad sandwich and bottle of water, DH a ham and swiss - Panera to go, we ate in the truck driving back ;)

Recipe from The Brown Hotel in Louisville, KY. The Legendary Hot Brown Recipe Ingredients: 4 oz. Butter Flour to make a Roux (about 6 tablespoons) 3 - 3 1/2 cups Milk 1 Beaten Egg 6 tablespoons Grated Parmesan Cheese 1 oz. Whipped Cream (optional) Salt and Pepper to Taste Slices of Roast Turkey 8-12 Slices of Toast (may be trimmed) Extra Parmesan for Topping 8-12 Strips of Fried Bacon Melt butter and add enough flour to make a reasonably thick roux (enough to absorb all of the butter). Add milk and Parmesan cheese. Add egg to thicken sauce, but do not allow sauce to boil. Remove from heat. Fold in whipped cream. Add salt and pepper to taste. For each Hot Brown, place two slices of toast on a metal (or flameproof) dish. Cover the toast with a liberal amount of turkey. Pour a generous amount of sauce over the turkey and toast. Sprinkle with additional Parmesan cheese. Place entire dish under a broiler until the sauce is speckled brown and bubbly. Remove from broiler, cross two pieces of bacon on top, and serve immediately.

Rainy day all day, much chillier outside. So, we are having spaghetti and garlic bread. The only thing I have in the house!

Another new Dr. appointment. Don't like him at all. Perfect day for that Chili. Ha, those "hot" beans you add are not very impressive. I still add at least 1/8 bottle of Chili Powder to a 4 qt. pot. Then sprinkle in hot sauce at the table. Variety nite. 1) Chili with diced sweet onion & shredded cheddar cheese. 2) Chile Mac. Adding noodles doubles the servings available. 3) a friend recommended topping it with those "Potato Sticks" you buy in a bag/can. Why not potatoes? People order Chili Fries. That was different and edible. Follow that with a thick slab of Chocolate Cake and extra thick frosting. And a bowl of Raspberries. The time to feel tired, is after eating.

In the mid 60's here!

Dinner was panko fried chicken, garlic roasted potatoes ,green beans and a quinoa and kale salad.

Side story: was out for lunch at the Cheesecake Factory and had the kale salad. Found a copy cat recipe and made it tonight. It wasn't exact but was very good.
