What's on your dinner plate, today?

Bought a sweet Italian sausage link at Fresh Market. Gonna add some peppers to it. Yummy!

Baked sweet potato and English peas.

That will do it for me!

So what's for your main meal today?

That sounds good, Glenda. I love Italian sausage.

I dunno. I was thinking about eating out...a place in town has a seafood buffet today and it isn't bad, but I have some flautas in the freezer and was thinking about saving my money and just having some flautas and salsa.

Glenda, I just put it in a tinfoil-lined pirex dish (for easy clean up), at 350, for about 1 hour. In the last 15 minutes, I set the bacon-wrapped corn on the shelf over top, turned every few minutes til the bacon was crisp. If you can do it in the oven, you can do it on the Q! Laurel

Not sure, homemade pizza or burgers and dogs... I've been tiling my kitchen back splash today..and have to limit my "washing" and cooking so I don't splash on my handiwork..I'm in the adhesive curing stage...In a few days, I'll be in the grout curing stage. lol So dinners will be simple, until the project is complete!

Glenda- stuffed bell peppers was frequently made when I was growing up. They're comfort food. They're quite easy to make, but I don't bake mine, which is how they are traditionally made. I make my ground turkey mix, cut off the tops of the peppers, stuff them with the meat and simmer them in tomato sauce for about an hour. The meat turns out very juicy and it's the way my Mom has always made them. I just end up with little red tomato dots all over. I ended up making meatloaf though. Lol

Today for "dinner" as we southerner's say....we had all comfort food! Fattening comfort food! My hips are still dancing a gig! Crockpot (simmered all night) mixed pinto beans, mac & cheese and spinach, with country cornbread or warm biscuits...whichever you'd prefer...pull up a chair and dig in! We'll probably have plenty of leftovers for "supper" too! Now who took my slice of onion!

I have been cooking for days, so I think I will give Mike a turn. We have some nice T-bones in the freezer guess he will be cooking them. Put some mashed potatoes with that and a veggie.

We are having bean soup and cornbread. It is so cold and rainy here--I think it will hit the spot.

We went to Newt's after church w/ DD#1 and her family. DH and I shared a pizza and we agreed it was the best we'd ever had. DGD#1 had some good tomato/basil soup.

We had ham for Thanksgiving, I'll use the leftovers today to make scalloped potatoes. I'm gonna go put it in the crock pot in just a bit.

Chicken breasts, baby brussel sprouts, baked potato and some leftover cranberry fluff, maybe a salad. I just made some sugar cookies with cinnamon and the kitchen smells sooo good! Bettye/AZ

DS and I are taking the Princess back today, so I will be gone. I did make a pot of the Northwoods Wild Rice Soup and instead of chicken breasts I threw in the rest of the turkey that was leftover. So DH will have the soup, DS and Maddie and I will most likely stop at Subway or something.

Connie I love wild rice. Will you share your recipe, please!

I'm making an After Thanksgiving Turkey Potpie tonight. I found the recipe on allrecipes.com (although it says after Christmas TPP.) It looks pretty good and I have everything here that the recipe calls for. We'll see........

This same one was posted by Sandy too and a few others here tried it. I did it on the stove top today rather than the crockpot. I also did add an extra can of the chicken broth because it does get thick. It seems just right with 3 cans.

1 lb boneless skinless chicken thighs (5 thighs), cut into 1-inch
    > pieces
    > 1/2 cup uncooked wild rice
    > 1/4 cup fresh or frozen chopped onions
    > 2 cans (10 3/4 oz each) condensed cream of potato soup
    > 1 can (14 oz) roasted garlic-seasoned chicken broth
    > 2 cups frozen sliced carrots
    > 1 cup half-and-half
    > >
    > 1. Place chicken in 3 1/2- to 4-quart slow cooker. In large bowl, mix
    > wild rice, onions, soup, broth and carrots; pour over chicken.
    > 2. Cover; cook on Low heat setting 7 to 8 hours.
    > 3. Stir in half-and-half. Increase heat setting to High. Cover; cook
    > 15 to 30 minutes longer or until hot.

    Health Twist

    > Substitution

    > the thighs. And if your chicken broth doesn't have roasted garlic, just
    > stir
    > 1/4 teaspoon garlic powder into regular chicken broth.

Well for breakfast I had a plate of Turkey Day leftovers....

For dinner I'll use some of the turkey I picked off the carcass when I made stock with it to make Enchiladas for tonight.

Pork chops with bakers, and a salad.

I have spaghetti sauce simmering on the stove and I'm making a tossed salad to go with it. Was in the mood to bake today so I have two loaves of garlic bread almost ready to stick in the oven. Think I'll take one over to the neighbor. Just took a carrot cake out of the oven and will frost it with cream cheese frosting.

Nasty weather down here in Florida today. We keep getting tornado warnings and the wind is relentless. Glad I got my outdoor chores done early today.

I haven't made one, but had one and it's delicious!

    Uses turkey!

Meatloaf (meat wads), mashed potatos, green beans and a salad.
Today is the last day for hunting here, so DH is out with his buddy, freezing is a@@ off in the woods! He walked out without his gun today, but remembered and came back for it. One day he forgot his bullets! Yep, he's really into this hunting thing. The boys scare away the deer with their snoring! I asked him if he had tested his rifle. His resonse, "Then I'd have to clean it if I shot it"!
Well, no venison meatloaf for us.

We're having breaded tenderloin sandwiches and leftover blueberry salad. BT's are a midwest sandwich--like Hot Brown's are best known in Kentucky.

Needed a break from turkey stuff. Bean soup sounds wonderful!!

I had some small pieces of round steak that had to be cooked today. I seasoned and broiled them all; now I'll have a main course for several dinners!

I added a microwaved-baked pototo, a fresh bell pepper, and pickled okra. Yummy dinner.

Tonight I'm broiling an eggplant for my lighter supper. I won't eat it all at once, LOL, but I do love broiled eggplant.

Hubby went over to the hunting camp so I'm on my own. For lunch I reheated the greenbean casserole from T-Giving and finished up the cranberry salad. It's about supper time and I have no idea what I will do, maybe heat some soup.....

Spinache, broccoli and 3 cheese stuffed pizza with a side marinara sauce and wilted salad for dinner. Then a large cannoli, a snifter of brandy and coffee for dessert. Best part..........everything except the brandy is homemade by a dear friend and neighbor.

Recipe from The Brown Hotel in Louisville, KY.

    The Legendary Hot Brown Recipe

    Ingredients:
    4 oz. Butter
Flour to make a Roux (about 6 tablespoons)
    3 - 3 1/2 cups Milk
    1 Beaten Egg
    6 tablespoons Grated Parmesan Cheese
    1 oz. Whipped Cream (optional)
    Salt and Pepper to Taste
    Slices of Roast Turkey
8-12 Slices of Toast (may be trimmed)
    Extra Parmesan for Topping
    8-12 Strips of Fried Bacon

Melt butter and add enough flour to make a reasonably thick roux (enough to absorb all of the butter). Add milk and Parmesan cheese. Add egg to thicken sauce, but do not allow sauce to boil. Remove from heat. Fold in whipped cream. Add salt and pepper to taste.

For each Hot Brown, place two slices of toast on a metal (or flameproof) dish. Cover the toast with a liberal amount of turkey. Pour a generous amount of sauce over the turkey and toast. Sprinkle with additional Parmesan cheese. Place entire dish under a broiler until the sauce is speckled brown and bubbly. Remove from broiler, cross two pieces of bacon on top, and serve immediately.

Restaurant near me me serves Hot Brown every Tuesday. Yummy stuff. They put theirs on split homemade biscuits. You can taste the yummy parmesan cheese, and they criss cross the bacon over tomato slice.

Can't have that in my diet but once in a blue moon.

Got a prime rib in the oven and twice baked potatos. Raw veggies to nibble on with it.

Hope we have leftovers so I can slice the meat thin for french dips this week.

Leftover tater tot hotdish here. Was kind of surprised this morning to wake up and see the ground all white. I didn't know it was supposed to snow, but then, I haven't watched the weather for a while now either.

Falling apart pot roast here. That's the way we love it. Potatoes, brussel sprouts and corn.
Glenda, pls see Cooking Forum, your question was answered re Green Chile Squares. Short answer - no need to drain. I want to make them too, and I was wondering the same thing.
