What's for dinner 11/15?

Tonight it's stuffed mushrooms filled with ricotta cheese, Italian sausage and mozzarella with spaghetti sauce on top. I POOF'd them so it's an easy night. Garlic toast and a vegetable of some kind???

Sarris's downtown: Monday is sausage and kraut and that's what I had plus half a cornbread muffin

Good Friday morning! It's cool here (50 F.), but it was 39 when I got out of bed, and it was so cold in this house because our heater is on the fritz. The repairman is coming out at noon to fix things, I hope! Suzanne, I'm staying at the house until the divorce is final, 2 weeks from today, then I'll be moving up to Dallas the next morning. We're peacefully co-existing now, and that makes things so much easier. Dee, how worrisome for you that you're gaining weight. Hope you learn worthwhile info from your doc! I've got the questionnaire halfway filled out, but the days are overly full of farewell lunches and this and that for the move. I promise to get to it eventually. I am opting out of the ornament exchange this year because my life is too hectic to remember to do it, or if I were to do it, I'd probably misplace everything when it's time to mail. Lunch at Olive Garden today - the soup and salad. YUM! We did the refinancing yesterday, and it went well. H is being a good guy about having to do this. There were 15 for dinner at my house today. Everyone brings something so it is pretty easy for me. I started my spaghetti sauce on Sat. morning about noon. I cook it in the oven in a big canning kettle. There is chicken, pork chops, hamburg, mild and hot Italian sausage in it. I cooked until 9 at night and then shut it off and left it alone. This morning I took out all the bones and stirred it really good. Put it back in the oven at about 250 to keep it hot. Dinner was around 2. I cooked 3 pounds of Angel Hair pasta. Jerri brought a huge salad with lots of great things in it. Judy and Jackie brought garlic bread. Millie brought wine coolers. Yelena brought Russian cake, she is from the Ukraine. Everything was wonderful, the ladies ate in the dining room and the guys ate out on the patio at our huge table. So much fun and everyone complimented on how good the spaghetti was. I hated to see everyone go home.

I used the carcass of a Costco rotisserie chicken to make chicken and rice soup yesterday so today I added some left over sauerkraut and ham and it was very good. I also made some potato salad but was too full of soup to eat any.....Roy said it was good. He loves potato salad so I will have to try some tomorrow to see what it needs. I added some organically grown purple radishes and some sugar snap peas to it and some grated organic carrot. I love getting the CSA box!

A cookie sheet under the dish?? Ohnooooooo that would be too smart wouldn't it? ;) I have made them with cream of chicken soup and milk or the coffee creamer in both the oven or slow cooker. Scalloped Potatoes 3 tablespoons flour 3/4 cup non dairy coffee creamer (powder) 1 tsp salt 1/8 tsp garlic 1/8tsp pepper mix together add 1 1/2 cups boiling water. Pour over sliced potatoes. Dot with butter. Bake 350 degrees til done. Uncover the last 15-20 minutes.

Beef and noodles, mashed potatoes, green beans, corn, biscuits, yellow cake and apple sauce. Five of us tonight and I sent a to go bag with Amber for Mike.

I had some Gravlax on flat bread and a stuffed mushroom plus a cosmopolitan before going out to dinner. Dinner was rabbit fricassee followed by pheasant with gnocchi, butternut squash and a biscuit. Dessert was profiteroles with coffee ice cream and hot fudge sauce and must not forget the wine. Everything was delicious and hopefully it doesn't rain tomorrow because I have to at least do a double walk if not a triple one.

We had scalloped potatoes with cheese and a sliced up ring bologna in them (love them this way), along with a side which was half and half sweet potato and squash baked with a little margarine and brown sugar then smashed like mashed potatoes. This was something new I made up as I went along and was a real hit.
