What's for dinner Monday?

I'm just making fish sandwiches for dinner. Been a busy day--VA and getting ready for the new frig tomorrow. We'll have some cranberry sauce with them. Weird combination, isn't it?

Hey, I love cranberry sauce and mayo sandwiches :o)

Brava, again! Chicken salad with almond slivers, golden raisins, honey mayo.

I made a pot roast today with potatoes, onions, and carrots. I also baked an angel food cake. I had coleslaw but did not eat any. Busy day again around the house again. I am ready for bed soon.

Pam, I love quiche and have leftover ham in the freezer. I should make one with ham, and onions, peppers and mushrooms. Hubby won't eat any hot cooked eggs, so it's me and my quiche. The last time I made hamburger rolls I posted a pic :) Cheri I love pot roast. I tend to make mashed potatoes on the side, instead of in the slow cooker. We like them that way better. Alice your dinner sounds great! We eat a fair bit of rice, just love it. Ellendi would you share your quinoa recipe on the Share your Recipe Thread???? We enjoy quinoa. That's the pits you had so much trouble finding the sriracha. Old Fixer, IS there such a thing as too much garlic? LOL Party, I was going to bake some sweet potatoes yesterday, but they are really small, so I mashed them along with white potatoes. We like them mixed. Matti, I've heard that In n Out burgers are good. Enjoy! Rhizo, we just had some homemade apple sauce that I took out of the freezer with a warm oatmeal-carrot muffin! We just finished watching the first episode of this season's Blacklist and thought I'd check back while setting up for Castle. Shirley, here's the recipe. Easy-peasy and delicious! Pam, you could have been here, as usual I made enough to feed at least 1 more person! Oven Ã¢ÂÂfriedÃ¢ÂÂ chicken Preparation time: 15 minutes Baking time: 20 to 25 minutes 1/3 cup dry unseasoned bread crumbs 2 teaspoons sesame seeds 1 1/2 tablespoons grated Parmesan cheese 1/4 cup fat-free mayonnaise (not salad dressing mayonnaise) 1/4 teaspoon salt 1/8 teaspoon garlic powder 2 dashes cayenne pepper 1/4 teaspoon poultry seasoning 4 (4 ounces each) boneless, skinless chicken breast halves Cooking spray Preheat oven to 425ÃÂ°F. Place bread crumbs, sesame seeds, and Parmesan cheese in a large zip-top bag and shake gently to combine. In a small bowl, whisk together mayonnaise, salt, garlic powder, cayenne pepper, and poultry seasoning. Using a pastry brush, coat both sides of each piece of chicken with the mayonnaise mixture. Place chicken, one piece at a time, into the bread crumb mixture in the zip-top bag, seal, and shake to coat chicken well. Transfer chicken to a foil-lined baking sheet coated with cooking spray. Spray chicken evenly with cooking spray. Bake for 20 to 25 minutes or until juices run clear and chicken is no longer pink in the center. Yield: 4 servings

The weather here today was similar to yours, jasdip. We decided to go to the famous local seasonal 'dive' which opened for the season yesterday... a family business since 1938, I think. It's just a little shack with minimal cooking facilities (bbq sandwiches, hamburgs, hotdogs, fries) where you stand outdoors in line to order. They also have an ice cream side, but it's not open yet. You can do take-out or eat outdoors on picnic tables. It's near a busy intersection so always noisy, but the food is good and super cheap, so it's always busy. Totally tacky and totally fun. You'll see everything from tattooed grandmas on motorcycles to vice presidents in suits all standing in that line together, and today the lines were the longest I've ever seen! I chose a pork sandwich w/ bbq sauce, dill pickles, hot relish on the side (they make their own and it's really good) and fries. Totally happy here. :O)

We had leftovers from Mother's Day. I was not too hungry so I just had a grilled chicken thigh and a piece of my black raspberry pie. Had leftovers for lunch too. The weather here today was fairly nice, great breeze a little sprinkle once in awhile and some sun was out too. Right now it is 71 outside. Sue in Central Indiana

Oh, boohoo, Glenda. You had all three of my favorite things for dinner. I'm crazy for wild rice! Next time I'm hungry for chicken, I'm making Jasdip's chicken wild rice soup. I'm kind of turkeyed out right now--or I was until you mentioned wild rice ;-)

Sue, it's been a while since we had a nice pot roast. I make mine just like you with the vegetables.

I made both reuben mini meatloaves and salisbury steak today. Baked a potato and had leftover peas. I didn't make up my mind which meat to have till the last minute.... reuben won out.

I had bridge here today and now I'm tired. There's some chili in the fridge...DH can have that and I will have a sandwich with what's left of the turkey. I haven't cooked since Thanksgiving and just might have to tomorrow unless of course we go out for dinner.

Tomato soup & sandwiches. DH is having pastrami; I'm having ham. He leaves for a week-long business trip tomorrow. I'm still working on the Christmas decorating. Just wanted something simple tonight.

I have turkey enchiladas in the oven right now. They sure smell good too.

My fridge is being delivered on Thursday so I have been working on getting things used up before hand. I went through the freezer this morning so that is ready to be put in the big freezer in the garage.

Our new dishwasher is coming early in the morning so I need to empty out everything from under the kitchen sink. This is the part I hate about getting new appliances but the pain will disapear as soon as I get to use the new things.

Blackened thick pork chops cooked on the griddler and fresh steamed Brussels sprouts, with a small salad.

Shirley, it's always nice to have a choice. Is your rueben meatloaf made with corned beef or regualar beef? You had a busy day in the kitchen but now you're set for a while.

Georgysmom, you're the busiest gal! But I bet you sleep really well at night :-)

Kittiesmom, hope you enjoyed your dinner. Hope your DH has a good and safe trip. I'd love a pastrami sandwich!!

Nita, we're getting ours tomorrow sometime between 3-7. I'm donating our old one to Habitat for Humanity so I just emptied the freezer. They'll pick it up Friday. The frig stuff should stay cold enough until I can fill the new one. Your enchilada's sound yummy!

Raven, are you feeling better? You must feel like cooking, so that's a good sign. Sure hope so!

We had hot turkey sandwiches with the rest of the mashed potatoes and gravy, Dressing on the side. Now I just have some leftover ham to deal with.
