What's for Dinner, Monday?

I made hamburger buns yesterday and today we had hamburgers. Coleslaw, roasted potatoes and corn along with them. I'll make the buns again, shaping some into hot dog buns.

We're in for a storm tonite, the sky is blackening, so I probably won't be able to respond to the thread.

Leftovers/clean the fridge out night. Hot roast beef sandwiches with mashed taters, and whatever veggies happen to be hiding in the crisper.

We had leftovers from Mother's Day. I was not too hungry so I just had a grilled chicken thigh and a piece of my black raspberry pie. Had leftovers for lunch too. The weather here today was fairly nice, great breeze a little sprinkle once in awhile and some sun was out too. Right now it is 71 outside.

Wow, your dinners all sound so good! I love the chicken in the slow cooker, steak, pasta sauce. Stir-fries are always good, and anything can be used in it. So versatile. Baked salmon and asparagus sounds delicious! I've got asparagus in the frig, that I'll either cook with orzo, or maybe roast it. We love it roasted. The last time we did that I made Angela's roasted asparagus breaded with breadcrumbs and parmesan. Thank you SO much for the best wishes guys. I just read them to him and he's touched. I know things will be good and he'll have a good recovery. This is a top-notch hospital AND it's all done by robot. Not laproscopy but a robot, not a human hand. He think that's very cool. LOL The time wearing the catheter and the recovery time is greatly reduced by choosing this method. And he's home the following morning, vs spending 3 days in the hospital with the traditional surgery.

Rhizo, Happy Anniversary! I made potato salad and 15# of ribs on the smoker. DIL brought beans and rice DS made his pretzel sticks, DD brought fruit salad and cool whip and soy milk to make chocolate pie with the pudding mixed DIL brought. I had the graham crust. I have leftovers! DH had to work this afternoon but worked hard before he went by getting the ribs ready and on the smoker and our big canopy put up so we had shade for the day. Tami

We just finished watching the first episode of this season's Blacklist and thought I'd check back while setting up for Castle. Shirley, here's the recipe. Easy-peasy and delicious! Pam, you could have been here, as usual I made enough to feed at least 1 more person! Oven Ã¢ÂÂfriedÃ¢ÂÂ chicken Preparation time: 15 minutes Baking time: 20 to 25 minutes 1/3 cup dry unseasoned bread crumbs 2 teaspoons sesame seeds 1 1/2 tablespoons grated Parmesan cheese 1/4 cup fat-free mayonnaise (not salad dressing mayonnaise) 1/4 teaspoon salt 1/8 teaspoon garlic powder 2 dashes cayenne pepper 1/4 teaspoon poultry seasoning 4 (4 ounces each) boneless, skinless chicken breast halves Cooking spray Preheat oven to 425ÃÂ°F. Place bread crumbs, sesame seeds, and Parmesan cheese in a large zip-top bag and shake gently to combine. In a small bowl, whisk together mayonnaise, salt, garlic powder, cayenne pepper, and poultry seasoning. Using a pastry brush, coat both sides of each piece of chicken with the mayonnaise mixture. Place chicken, one piece at a time, into the bread crumb mixture in the zip-top bag, seal, and shake to coat chicken well. Transfer chicken to a foil-lined baking sheet coated with cooking spray. Spray chicken evenly with cooking spray. Bake for 20 to 25 minutes or until juices run clear and chicken is no longer pink in the center. Yield: 4 servings

This week includes my annual "special day" (a secret!). Last nite started with parmesan shrimp, breaded shrimp, coconut shrimp, shrimp alfredo, baked tater, salad, cheddar biscuits. Guess where? Brought home enough in the box for two lunches! Tonite will be a pig out buffet. Normally $20, I squeaked it down to $5, and that was free. Dumbo still prepared too much food here. A Chocolate Cake, with creamy Chocolate frosting. BBQ ribs. Some hamburger patties. A big pot of Chili. Salsa and Avacado. No cooking the rest of the week. Anybody hungry?

I made garlic bread and sausage lasagna. There's cookies & cream ice cream for dessert.

Our sky's are darkening. Light rain showers are expected all week. It's 44 F. .

We had bbq country style ribs and tiny baby red potatoes roasted whole in the oven. Man those baby new potatoes were wonderful. I went to the farmers market Saturday, got those potatoes and fresh home grown tomatoes, and my favorite Vidalia onions! I'm so glad that the farmers market is open again.

I thawed some cooked stew beef, added potatoes, carrots, and onions. Made a pretty good meal. I don't enjoy cooking for one, but I've been trying to come up with healthier meals.
