Need a good Mac/Cheese w/Broccoli recipe

Went online for Rachel Ray's but reviews said it could be bland and sauce doesn't thicken. Anyone tried hers? Have another mac/cheese/broccoli recipe you like? I want to bake it for the family TG dinner.

I know you wanted a baked dish, but why not try this?

Macaroni and Cheese Salad (Marilyn Sue)

1 (7 1/4 oz.) pkg. macaroni and cheese
10 oz. pkg. frozen peas
1 half cup pickle relish
3/4 c. mayonnaise or Miracle Whip
1/2 c. sliced celery
1/2 c. chopped onion
1/2 tsp. salt
6 hard-cooked eggs, chopped (less may be used)
Prepare mix according to directions on package. Add frozen peas. Stir and add rest of ingredients. Chopped green pepper may be added, if desired. Chill before serving.

I have made this and it is delicious. No reason why you could'nt add some chopped eaw broccoli to it. Might be a welcome change from all the hot food.

In fact I am taking a cold dish to TD dinner at my DGS's. It is a salad made with frozen peas, and other good stuff.

Good idea sue. I'll copy that recipe and keep it in mind. In fact I have two boxes of Kraft Mac/Cheese in the cupboard.

Its our dinner tonight, matter of fact! I think subbing evaporated milk for fresh is a big improvement for any M&C recipe. Cooks Illustrated Stovetop Macaroni and Cheese Ingredients 12 oz Canned evaporated milk 2 lg Eggs 1/4 ts Hot red pepper sauce 2 ts Salt 1/4 ts Ground black pepper 1 ts Dry mustard, dissolved in: 1 ts Water 1/2 lb Elbow macaroni 4 TB or 1/4 cup Unsalted butter 12 oz Sharp Wisconsin cheddar*, (or any cheese - Monterey Jack, etc., or a mix) Preparation Mix eggs, 1 cup of the evaporated milk, pepper sauce, 1/2 teaspoon of the salt, pepper and mustard mixture in small bowl. Set aside. Heat 2 quarts water to boil in large heavy-bottomed saucepan or Dutch oven. Add 1-1/2 teaspoons of the salt and macaroni; cook until almost tender, but still a little firm to the bite. Drain and return to pan over low heat. Add butter; toss to melt. Pour egg mixture over buttered noodles along with three-quarters of the cheese; stir until thoroughly combined and cheese starts to melt. Gradually add remaining milk and cheese, stirring constantly until mixture is hot and creamy, about 5 minutes. Serve immediately.

This is one of my favorites: Patti LaBelle's Over the Rainbow Mac-n-cheese Ingredients: 1 tablespoon vegetable oil 1 pound elbow macaroni 1/2 cup butter PLUS 1 tablespoon 1/2 cup shredded Muenster cheese 1/2 cup shredded mild Cheddar cheese 1/2 cup shredded sharp cheddar cheese 1/2 cup shredded Monterey Jack cheese 2 cups half & half 1 cup Velveeta, cut into small cubes 2 large eggs, lightly beaten 1/4 teaspoon PenseyÂs 4S salt 1/8 teaspoon black pepper, freshly ground Topping: 3 tablespoons butter 1 cup panko bread crumbs Directions: 1. Preheat oven to 350. 2. Lightly butter a deep 2 1/2 quart casserole. 3. Cook pasta, add the oil then the elbow macaroni and cook until macaroni is just tender (about 7 minutes). Drain well and return to the pot. 4. In a small saucepan, melt the first measure of butter (1/2 cup butter PLUS 1 tablespoon. Stir into the macaroni. 5. this is called a 'grown-up' mac-n-cheese Any veg or pepper or combo could be used... I used this version with what i had on hand veggie-wise... INGREDIENTS Roasted Vegetable Mac & Cheese 1 lb. penne, rigatoni, or spiral pasta 1 red onion, diced 1 red pepper, diced 1 small eggplant, diced 1 zucchini, diced 4 cups shredded cheese (any combination) 1/4 cup butter 4 cups milk 3 Tbsp. flour Bread crumbs Olive oil Fresh thyme Salt & freshly ground black pepper, to taste Hot sauce, to taste INSTRUCTIONS Toss vegetables in olive oil, thyme, salt, and pepper. Roast, on a sheet pan, at 400 degrees, until lightly brown, about 35 to 40 minutes. While veggies are roasting, cook pasta until al dente, drain and set aside. Melt butter in a large pan, add flour and stir until smooth, but not brown. Slowly whisk in milk and bring to just under a boil. Reserve about 1/2 cup of cheese for topping, and add the remainder to the milk mixture. Stir until cheese is melted. Stir in roasted vegetables, then the pasta, mix well but gently. Success!!! I don't remember my mother making mac & cheese,, and I can't imagine my father liking it. It's something I learned to like in college, but not my roommate's boxed stuff. For me, it's more of a snack food than a meal. Like it's mealtime but not enough appetite for something big. I have been on a mission to replace the frozen vegan noes I liked, but figured I first had to make M&C I liked before trying to make it with vegan cheese. I've been experimenting off and on for a long time, and just made a really good batch. I always start with a review of Amylou's recipe to remind myself of what M&C should be, so I don't wander off into "pasta". Today's M&C Success 1 lb box Barilla high protein (wheat + legume) little elbow macaroni (very firm) 1 lb Tillamook extra sharp orange cheddar, grated (I think I like Joseph Farms better for this, but it's harder to find. Fancy proper cheddar is wasted in M&C, and is too oily as well). 4 slices Kraft Deli Deluxe American cheese 1 12 oz. can Meyenberg evaporated goat milk Extra light olive oil (=none of the solids, good for cooking) Wondra flour Onion salt white pepper Grate cheese. Boil macaroni to just cooked through (I used a four quart pot). Drain well and allow to dry some while making cheese sauce. Add enough oil to generously cover bottom, heat at the low end of medium (I used #4.5 on my highest power induction ring for the whole, to the end) and add enough flour to give body to the oil without clumping. When it bubbles, add the milk. Add seasoning to taste. (I couldn't find the onion powder and the cheese wasn't as salty as I expected, and I didn't salt the pasta, so needed the salt anyway.) When the milk mixture starts to bubble, add the American cheese torn into inch or smaller pieces (I was going to use sodium citrate but that was missing too. Minions. Sigh.) When that's melted add 2/3 of the cheddar a handful at a time, stirring until it's melted. Adjust seasoning if needed. Add back the macaroni and stir really well, getting the cheese sauce off the bottom. Stir in the remaining cheddar a handful at a time. until mostly melted. Et voilà! I finally have made M&C the way I like it. :) But I'm going to have to adjust it for using the sodium citrate if I'm going to make a vegan version...

Looked at Rachel Ray's and the picture just didn't look good.

This one sounds delicious! I have never had mac and cheese with broccoli.

Macaroni and Cheese with Broccoli
This macaroni and cheese is enhanced, both nutritionally and flavor-wise, with fresh or frozen broccoli. The Gruyere cheese is great, but eel free to replace it with Swiss cheese or use more Cheddar cheese.

Prep Time: 20 minutes
Cook Time: 30 minutes
Total Time: 50 minutes

Ingredients:
8 ounces elbow macaroni
1 cup broccoli florets fresh or frozen
4 tablespoons butter
2 tablespoons flour
2 cups milk, low fat is fine
1 cup shredded sharp Cheddar cheese, divided
1/2 cup shredded Gruyere cheese
1/4 cup grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
1/4 cup whole-wheat bread crumbs
Instructions:

In a medium saucepan, cook macaroni according to package directions, until slightly firm. Drain well.

Cook the broccoli following package directions, on the stovetop or in the microwave.

Preheat oven to 375 F. Grease a 2-quart baking dish.

In a medium saucepan, melt butter. Add flour, stirring for about 1 minute, until smooth and bubbly. Gradually whisk in milk, stirring constantly until thickened, about 3 minutes, remove from heat.
Reserve 1/2 cup cheddar cheese and stir remaining cheddar, Gruyere, Parmesan, salt, and cayenne into sauce until cheeses melt. Add macaroni and broccoli to sauce. Pour into prepared baking dish.
Bake 15 minutes. Sprinkle top with reserved cheddar and bread crumbs. Bake 10 to 15 minutes longer, until lightly browned and bubbly.

Serves 4 to 6

Putting together your casserole recipe right now, glenda. I'll wait and bake it tomorrow morning before heading out to brother's. The Gruyere smells great. I was worried 1/2 cup wouldn't be enough but I think the flavor will be strong enough, esp. along with the cheddar and parmesan.

Tasted it and the Cayenne pepper sure is coming thru! I've never cooked with Cayenne as I'm not a big fan of hot,spicey foods, and I knew Cayenne was a hot pepper. I think my brother's clan will be ok with it as they like foods with some zip. We'll see what they say tomorrow. Maybe next time I'll use a little less than 1/4tsp. for myself.

I didn't put the bread crumbs on top yet, going to wait and bake it 15min. first tomorrow and then top. You think that will be ok or maybe not necessary to wait.

1/4 tsp doesn't sound like too much. Maybe by the time it's cooked it won't be as strong.

I'd definitely wait to put the bread crumbs on top.

Why don't you mix the bread crumbs with the cheese before adding?

Nope, the 1/4 tsp. wasn't too much, everyone liked the casserole! and yes, I mixed cheese with the bread crumbs when I put it into the oven for the final baking. Thanks! will be making this recipe again.
