I am planning to assemble it in casserole fashion on WED., then bake on THURS AM (before the turkey). I don't have two ovens, and I won't have an hour + to cook it after the turkey comes out.
Can this dish be served room temperature? Also, by cream, I assume heavy cream and not "whipping" or "light" cream?
Cook sweet potatoes in boiling water 30 minutes, drain. Cool until easy to handle. Peel and place in bow. While potatoes cool beat egg whites until they stand in firm peaks in a medium size bowl. Break up potatoes with a fork, then beat in the egg yolks, butter, cream, sugar, orange rind, cinnamon and nutmeg. Continue to beat until fluffy and light. Fold in beaten egg whites and spoon into a greased 8 cup baking dish. Bake at 325 degrees for 1 hour and 10 minutes. Garnish with orange slices.
Nita - thanks for your reply - so then I will bake this in the morning prior to turkey and pop it back in the oven for 15-20 minutes (on warm) while the turkey is "resting" before carving.
Thanks. I'll let you know how it goes over. Martha said on her show today..never make anything on T-giving that you haven't made before...Sounds delicious tho.
Very good but I'll be eating it for a long time since there was so much other food. I froze one batch..Hope that works out. We had way too many carbs...the yam puff, garlic mashed potatoes, whipped potatoes, filling, spinach bread plus pies. We did have turkey and three veggies too. But it's a good recipe and easy to make. Thank you for it.
