What's For Dinner? #286

Thanks Sharon! That's it, just didn't know who to credit as I cut off the original posters name when I printed it off.

Last night I poofed bean and ham soup along with cornbread and a salad. Tonight it was breakfast for dinner, bacon and eggs with hashbrowns and toast. Easy and fast as I'm picking people up at the airport in a couple of hours.

I need to try that puff pastry as a topping for pot pie... maybe with some turkey if there is any left after the holiday. Sharon, I saved your stir fry recipe a while back and I'm thinking it needs to move to the top of the TT file.

No pics tonight but we need to keep this post on the first page people....it's tradition... : ) Guess I could post more to help with that...

Annie, those Seckel pears are cute. Wish I had a source around here. They would be delicious with a little Stilton baked on puff pastry!

Nice looking beef stew with the dumplings, Ann.

Dixie, I could eat shrimp every day of the week!

After shopping all day I didn't feel like cooking so I put on a pot of soup (tomatoes, carrots, shallots, garlic, Italian sausage, mini shells, chicken broth, white wine, oregano, basil and s/p) and a baguette.

I hear ya David, I found this thread on page 2 tonight.

Annie. breakfast for dinner is always good and your biscuits make me wish I liked them. I've always had a disliked the baking powder taste that biscuits have...just me and my weird tastes....

Ann, I could have beef stew much more often than I do, yours looks really good.

Sharon, where's your pic of the tempura shrimp??? Geez.... :)). Seriously, it's good you didn't post a pic, I love tempura shrimp and haven't made it in ages... so if I don't have to look at it, maybe I can not have that craving that one gets when a favorite yummy is calling....

Like the vodka shrimp is calling too....

Marigene, I like the sound of your soup and I absolutely love the way it looks in that bowl. I love the bowl....the raised design photos so well... NICE!!!!

Tonight's dinner, well I tried a recipe from the new 2008 Southern Living Annual cookbook. Apple-Turnip Mashed Potatoes. Interesting but not something I'll be repeating. It sounded better than it tasted but in all fairness turnips are not a favorite anyway... I seasoned pork cutlets with Penzey's Old World seasoning and they were really good along with homemade applesauce of course.

We were visiting my wife's family in Vermont which ends up being a large group, with most of her brothers and sisters, and their spouses and kids, and this year even several girlfriends of the kids. All told we were about thirty. Meals were split up with one or two people volunteering for each meal. New Year's Eve was my night. I was stumped at first as far as what to make, but the co-volunteer Eric (a foodie BIL) came up with the suggestion of top-your-own tacos. We actually went with tostadas, and made black beans, three different meat toppings, and about a dozen other topping options, with side dishes of Mexican-spiced rice, and homemade cole slaw. Logistically the meal worked well, although some people didn't realize that they were supposed to be able to pick up the tostada after they made it, and instead they buried it beneath a 2-inch deep mound of toppings. Also we forgot to put out the guacamole until after half the people had served themselves. Food wise, some parts of the meal worked better than others. The shredded chicken verde was good but would have been better with more of the tomatillo salsa, however the co-op closed early, and the normal grocery store had no green salsa. The beef/chorizo was good but could have used a bit more of something, Eric and I couldn't decide what it needed. The shrimp was a big hit, the only problem with it was it disappeared so fast, the recipe (as well as I remember it) for the shrimp is below. Chili-Lime Shrimp 2 lbs peeled uncooked shrimp (31-40 count -- cut into thirds) 10 cloves garlic (minced) 1 4oz can diced green chilies 2 limes chili powder canola oil Liberally cover raw shrimp with chili powder and the juice of 1 half of a lime, and let rest for 10 minutes. In small pan, heat oil over medium heat, add garlic and green chilies, until garlic is softened and fragrant. remove from heat. In large pan, heat oil over high heat, until it is smoking hot, add shrimp stirring occasionally to make sure all the shrimp are getting cooked, and none are burning, after about 2-3 minutes the shrimp should all be cooked, add the garlic and green chilies that you set aside, and the rest of the juice of the limes. Stir for about 1 more minute, and place in large bowl to serve. Overall the meal received rave reviews.

Here is my orange vegan cake, from Allrecipes originally. I discovered it when we were having vegan friends for dinner but now I use it all the time. Ingredients 1 large orange, peeled (or sub 1 cup orange juice) 1 1/2 cups all-purpose flour 1 cup white sugar 1/2 cup vegetable oil (I have used corn oil or also melted butter but then it's not vegan) 1 1/2 tsp baking soda 1/4 tsp salt Directions Preheat oven to 350. Grease an 8x8 inch baking pan. Blend orange in the blender until liquified, measuring 1 cup orange juice (or just use 1 cup orange juice) Whisk orange juice, flour, sugar, vegetable oil, baking soda, and salt together in a bowl. Pour batter into prepared pan. Bake in preheated oven until a toothpick inserted in the center of the cake comes out clean, about 30 minutes. (I usually add a little dash of nutmeg and cinnamon to the batter, and then sprinkle a bit of cinnamon-sugar on the top before baking.)

Shambo, I'm so sorry to hear about your husband. I know he had some health issues and you were cooking low salt and healthy meals for him. I'm sending hugs and strong thoughts and prayers to your and your family. Jack, we are kindred spirits, I swear. When I make twice baked potatoes I'll make a whole sheet pan full of them, mine usually just has cheese, butter and sour cream, occasionally I'll add bacon. I freeze them and then package them usually two per package, Mother loves them and they're easy to heat up. Of course someone is always digging through my freezer to see if I have any, all of the grandkids and the kids love them and they make a fast and easy supper. Jasdip, as you know, I love potatoes in just about any form, so being able to grab a package quickly is a luxury. They are quite durable too, LOL. Neely, I have a pile of butternut squash in storage, if only I had a pile of prawns too! sleevendog, that looks pretty to me! Delicious too. No pictures here, today we had hamburgers! Tomorrow we're making sandwiches and having cake and ice cream for Madison's 9th birthday. No party this year, of course, but we bought her a hoverboard, so she'll be happy, even with just her folks and Elery and I. I baked a strawberry cake too, with sea turtles on top, her choice. I'll try to remember to take pictures, and hopefully she won't break an arm or a leg, riding the thing around the kitchen island or something... Annie

Wow, 4 years. Such a cute age. And a cute cake. We have 5 under 5 with another on the way via 3 nephews. I meant 'passive' haha. Meaning, "you do your thing vegetables. I have no time to babysit." Next day it had a lasagna vibe with the top layer of the pasta. I usually make a harvest lasagna every early Fall...right around the corner. Another pic of the shrimp salad lettuce cups fell from the clouds, A couple weeks ago i sous vide four small sirloins. An easy taco pulling two out of the freezer and thawing with a dry brine, then a cast iron sear. Tossed in kimchi. Next day made a sirloin Banh mi for DH. I had a sirloin salad bowl. Side bean/corn salad About to hit the end of the Summer thread...bummer.

    Bump!!
Whoops! I had to help out. Tonight we had homemade chicken noodle soup with slices of homemade white wheat bread. Yum!! For dessert we ate No-Bake cookies, I added about a teaspoon of cinnamon this time and they are sooo yummy. I can't stop eating them....
I just recently read about using Seckel pears and vodka to make a pear cordial. It was in a M.S. Homemade Christmas magazine, need the recipe Annie? It looks pretty good....although the recipe for the pineapple vanilla bean rum is what is really calling me.....
    Lori

Lori, I love anything made with pears, so I'd LOVE that pear cordial recipe. Especially if there's no one around to be a witness....um....take pictures after I sample it. LOL.

Sharon, I have some prawns in the freezer. They just might be destined for tempura although they would be good in Dixie's Vodka sauce.

Great looking bowl of soup Marigene. Like your soup bowl too.

Nancy, I love turnip/rutabaga, but I don't think I would like it with apple.

We had a Greek dinner. Moussaka ,Roasted potatoes and Greek Salad. I made the Moussaka earlier so it just had to be reheated when I got home from work.

Just catching up om all the great sounding food.

Dixie your pasta looks yummy, I love shrimp with pasta. Marigene that soup is gorgeous , looks so yummy!
Nancy I'm not a turnip lover either but that pork is grabbing me!
Lori we love homemade chicken soup but I haven;t made it in forever...maybe this weekend.
Ann I'll pass on the Moussaka but that salad sure looks good!

Was up at the cottage for the weekend pulled, what I thought was, an eye of the round out of the freezer but it was beef tenderloin...maybe 3 pounds and just three of us! Roasted it and served it up with garlic mashed potatoes, gravy made from my brown sauce, Yorkshire puddings, Bubbe's Popcorn Cauliflower and steamed broccoli. David's post reminded me that I had the recipe but had never tried it. We thought it was very tasty. Thanks for the reminder David.

Last night was hot roast beef sandwiches made from the leftover tenderloin along with oven fries. Clive and Meredith got cold roast beef sandwiches for lunch! Very plebeian fate for a gorgeous cut of meat.

Tonight is homemade mac and cheese with peameal bacon and something else....

I know most were focusing on Thanksgiving....

I decided to post our Thanksgiving dinner here....the turkey worked it's magic and I've already had a nap.

    So here we go....the turkey.

Here's a shot of the Apple Praline Sweet Potatoes that I make every year...at least for the last few.

We also enjoy fresh cranberry relish and (now don't gag)... 7up salad...it's the topping I like the best, a cooked pineapple curd with heavy cream. I don't dare make it ahead of time. I know me and there wouldn't be any topping left for the salad.....I double the topping part of the recipe as it is.. :))

A plate full of food... turkey leg, dressing, mashed potatoes and gravy, broccoli with an orange sauce and the sweet potatoes...

After cleaning the kitchen and a nap, we had dessert.
Pumpkin Pie Bars with vanilla bean whipped cream.

    Happy Thanksgiving!

This year, I've been too worn out to do Thanksgiving for family or to spend it at someone else's.

I needed the rest but still wanted a decent Thanksgiving meal. So... all these food I cook and it's just for... me!

Hope you've had a great Thanksgiving and have a great weekend!

Oh Nancy that bird, and everything else, looks so good! Ntt, I'm impressed that you went to all that trouble for yourself looks delish!

I was so envious thinking of all those wonderful turkey dinners. I was tempted to make a turkey breast in your honour but I had a certain procedure yesterday and, as a result of the sedation, slept most of the day away.

Tonight I am trying an experiment. I have never made traditional fish and chips at home, never believed they could be as good as our local fish and chip joint. Well the restaurant changed hands and the quality has really suffered. I'm going to use Gardenlad's Tempura batter with Halibut.

Nancy, great looking turkey dinner. And Ntt, like Sharon, I'm impressed that you made a turkey dinner just for one.

We were invited to our neighbours home for a turkey dinner with all the trimmings. Barb is from MN so her husband always makes an American Thanksgiving dinner. The only thing I had to do was make dessert. Clif requested the Bread and Butter Pudding with the caramel sauce.

Sharon, I'll look forward to hearing how your Halibut fish and chips turn out. Like you I also believe that it is next to impossible to make the fish as good as a "good" fish and chip restaurant. That tempura batter is so good though I'll bet you come close.

    Ann

Thanks all but I really didn't do them all, LOL... I cheated 1/2 of the meal!

The turkey was pre-cooked, all I had to do was thawed it and heated it up =)

I made the cranberry relish a few days ago for a Thanksgiving potluck at work. So, the left over was plenty for dinner last night.

The dessert, a big piece of carrot cake, was a gift from a generous neighbor. LOL... I hope she'll never move away! she loves to cook too!

The dressing was StoveTop with a little twist, so that was about 5 minutes or less to prepare.

The gravy was from the juice of the turkey mix with other ingredients, less than 5 minutes too.

The salad was a premixed package, just rinsed and served.

So actually, what took a little time were the sweet potato casserole and the potato salad.

But I'm like many of you, I love to cook and I enjoy good food. The nice thing about knowing how to cook is that you never need to wait for someone else to cook that dish for you nor need to go and buy it. Even if it's just for me, if I want it or crave for it, I cook it. There's a huge satisfaction when I sit down at the table, eat the food I make and it tastes soooo goood!

What else - leftovers from yesterday but we're not complaining! Turkey, mashed potatoes, gravy, stuffing, etc. It has been a very busy week for me. It was nice for the two of us to kick back today and really do nothing but eat!:)

Nancy, you had a beautiful bird!! And the side dishes looked yummy too!
Ntt, you did a lovely job for your special meal... I'm in awe!

So here is our nontraditional Thanksgiving dinner for three this year... first of all the table was set for an extra day since our youngest was laid low with a stomach virus on Thursday.

Here he is all recovered and ready to eat this afternoon!

I'm not sure why everything looks so orange here, but these are the platters ready to carry to the table. We had crab and cream cheese stuffed chicken breasts that I purchased from a local deli (they were delicious), parmesan sweet potato wedges, green beans with bacon, garlic rolls and a cranberry/apple/grape salad.

And for dessert one of my family's favorites: Lemon Meringue Pie

At the end of the day, even the pets were napping... the cat takes over the Jack Russell's bed occasionally!

    Grace

Grace, your table looks lovely. Glad Clark was feeling better and up to eating that delicious dinner. Love your chalk board and menu.

Sharon, did you make Fish and chips using the Tempura batter?

I wanted to make bread when I got home from work last night and didn't want to spend much time making dinner. So dinner was quick. I put a simple tomato sauce, with garlic and basil and black olives on to to simmer, grilled a couple of Italian sausage and we had penne while the bread was rising. Bread came out of the oven just before I went to bed.

    Ann

ntt, nothing wrong with a little cheating, I'm even more impressed !

Grace your poictures aren't loading for me. I'm at the cottage with the dreaded low speed...... : ( I'll have to check it out when I get home but I'm sure it was lovely.

Ann , yes I did make the fish and chips and the fish was really, really good, amazingly good. I think my grandfather would have approved!

I sliced the halibut in half so it wasn't so thick, rather thin like you get at the fish and chip shop. I also made sure the fish was very dry. The Tempura batter was excellent. Light, yet very crisp, and not at all "bready" so the halibut was "free" from the batter...I know you know what I mean.

Anyhow I'd do it again in a heartbeat.

OOOH I'm excited Sharon. You are the only one here I know that has the same high standards for real Halibut and Chips. So if the tempura battered fish was good enough for you that is good enough for me. And the fact that your grandfather would approve is even more impressive. Will definitely be on the menu here next week. Thanks for going first.

These meals look fantastic! I simmered the turkey carcass w/ vegetables yesterday which yielded a beautiful, rich stock. I put together Turkey Soup this morning (sans noodles, which I'll cook separately & add before serving)and the scent is wafting through the house along with the aroma of fresh baked (No Knead) bread.

I'll add a salad and that will be an early dinner for DH, DD, SIL & myself before we head out to a UNH hockey game tonight.

Grilled a "Pre-salted" prime rib, just big enough for two tonight for dinner. Served with roasted potatoes, rutabaga and fresh green beans. Took just 55 minutes from the time I got home from work until dinner was on the table. And that included letting the roast rest for about 10 minutes after it came off the grill.

mmmmmmmmmmmmmm....Ann..you do know how much I love RIB EYE!!!!!
I've seen those roasted potatoes on a few of your plates..how do you make them look so crispy?

We had the usual Friday Night homemade pizza tonight..Kellan, #2 wanted to take a picture (LOL, but I didn't)..He's begining to help me more and more with pizza night. Kamren helped a bit too tonight.
We are now "stuffing" the crusts with split cheese sticks.

Terri, roasted potatoes are really easy to make. I use russett potatoes, and in this case they were small russetts so I left them whole. Large baking/russets can be cut in half or quartered. Par boil for about 5 to 7 minutes depending on size. While the potatoes are boiling turn the oven on to 400°F , add a little oil to a heavy pan (I use a cast iron frying pan) and place the pan in the oven to heat. Drain and put the potatoes back in the pot over low heat and give the pan a shake. This will rough up the potatoes surface. Now toss the potatoes with the hot oil and roast in the oven turning occasionally so they brown evenly. This method produces perfect roasted potatoes. Crispy on the outside and dry and fluffy on the inside. Great just salted or tossed with fresh grated parmesan.

I'll have what Ann had. That looks absolutely AMAZING and cooked judt to my liking.I dont know what we are having for dinner,as I need to go finish up last shift of the day at the animal shelter.Lots of people signed up to volunteer and then havent shown up.

Ann, I'll have some of that Prime Rib dinner. I am turkey'd out.

Tonight we had egg rolls and shrimp fried rice.

    Nancy

You guys are killing me. I had leftover goulash that's been in the freezer for at least a month. Tomorrow I will cook unless the wind lays down and I get to go fishing. If I get to go fishing all bets are off. Cheese crackers and slim jims will do.

We at out yesterday, but tonight was a fresh green salad served with leftovers again here in Louisiana! I think that tonight we polished off the last of it all and I'll be cooking again tomorrow night.
I'm glad to see the end of it except for the pies.... wish I could have a slice every night!

Ann that Prime Rib looks wonderful. We will be having that on the menu sometime here soon with our holidays. Nancy, when we are turkey'd out I tend to lean towards Asian food also. Something in the taste buds that is so opposite of turkey!

We are still eating turkey but I fixed it tonight as Turkey Pot Pie. I served a spinach salad along side.

My turn to rescue the WFD from page 2 although I've been absent from this thread for a while, being busy getting Christmas shopping and parcels off to Canada. Whew glad that's done!
As always, everything above looks delicious and there were some very lovely turkey dinners!

We discovered another new restaurant (the one with green walls) just a stone's throw from our house so decided to try it out one rainy afternoon (didn't have to walk far) and were delighted with the meal. Had plenty of little extras: pate on two spoons, butter with fruit extract, tiny slices of delectable whole wheat bread. No room here to describe all though. Wolf started with carrot cream soup and I had a crab salad. We both had entrecot steak after with a delicate white mousse and caramel strings dessert. I think they could have left out those strings, it was quite funny trying to eat the dessert without getting those stuck on our faces LOL! The cook was accustomed to work with cuisine nouveau in a previous kitchen.

In between days I made a salmon salad with greens, a pasta dish of Marilyn's that we love....with bacon and peas and yesterday a chicken supreme with fresh mushrooms and cream.

But a special meal was out with my Pilates class where we were six women to a restaurant where a few days before we preordered
Duck A L'Orange. Wolf and I have been there before, where the view from the tables overlooks the sea. Pity I missed taking a pic of the roast potatoes in a bowl on the table. We almost fought over them they were so good! They were made German style, rich and golden. The duck came with brussels sprouts, a baked stuffed apple and spaetzle. The cook was a German lady. Dessert was apple struedel with raspberries, vanilla ice cream and whipped cream. Talk about rich! But it was an enjoyable meal, with plenty of conversation and red wine in the large jug on the table. That was our early Christmas celebration dinner.

Photos include one of our trainers who is shown arriving at the table and with our sherry aperitif. Afterwards we went to the house of one of our classmates who has a great view over the sea with palm trees.

Sharon, as always, your pictures are beautiful. What a lovely place you live in.

Grace, your son is very handsome, but I really cracked up over the dog, all sprawled out on the cushion, LOL. Exactly how I feel after a Thanksgiving meal!

I am also turkeyed out, so I made injera bread, with the help of the Frugal Gourmet and the cookbook RobinKate sent me a couple of years ago. I cooked some lentils to go with the bread, some collard greens, some roasted sweet potatoes and cauliflower and some leftover turkey, of course, simmered with some chicken broth and a good amount of garam masala.

    {{!gwi}}

I made an apple gallette with a sweet pastry dough and some apples that needed to be used. The glaze was a jar of homemade current preserves sent to me by Readinglady:

    {{!gwi}}

    {{!gwi}}

And just because I had a "long weekend" from work, Elery and I made 25 pounds of sweet italian sausage on Saturday and put it into the freezer:

I forgot to take a picture after we cooked some, doesn't that figure?

    Annie

Shelley and Annie, RE my cute "baby".... he has three equally handsome and dashing older brothers who are all my sweethearts and all about 12" taller than me now! I love being a mom and am sad that I'm being phased out of a job!!

Ann, I'll be giving that roast potato technique a try soon. I made the danish last week and it was perfect! Often baked goods are only good right away and suffer the next day, but the danish was as good day three!

Nancy, your Asian meal looks like the ticket to curing turkey burnout.

Sharon, MY they know how to cook in the Canary Islands!! Your dinners out match your homemade meals for beauty!!

Annie, I remember the Frugal Gourmet from wayback.... what happened to him? I skipped dessert tonight and your apple galette has me craving something now! Do you grind your own pork for the sausages?

Dinner out again tonight at an Italian restaurant in Baton Rouge where Joe had lasagna and I had two appetizers: Fried Green Tomatoes topped with a Shrimp Cream Sauce and Meatball Nachos (which really aren't nachos but a meatball on a piece of toasted bread covered with Italian sauce and melted mozzarella).

Grace, I also liked the Frugal Gourmet, I saw him on public television for years.

There were some allegations of sexual misconduct against him and although no charges were ever filed his career on PBS promptly ended.

RobinKate sent me two of his older books, "Our Immigrant Ancestors", and the one with recipes from Rome, Greece and Italy. I still use them often.

    Annie

For dinner tonight - something with shrimp but I don't know what yet. Tomorrow night will be Ribeye Steaks on the grill.

Annie, great looking sausage. I loved the Frugal Gourmet also and I still use his recipe for homemade Ranch Dressing. I remember the allegations against him. I believe he died a few years ago. PBS taught me a lot about cooking. I watched Natalie Dupree a lot too.

Annie that apple pastry is giving me a serious craving. Maybe I'll have to bake a pie soon! And I'd love a taste of those Italian sausages.
You and Elery sure make a great team! Those look totally professional.

I've never been able to find any Italian sausage locally so I can only imagine their flavour. There are so many Spanish pork products made into every kind of sausage here that I imagine they've never felt the need to import from elsewhere.

I made Chicken Supreme on Sunday. Just love this recipe but make it rarely as it is so very full of calories with that cream over mashed potatoes! I have the recipe from a friend who owned a restaurant in Palma de Mallorca and at the insistence of her patrons, she wrote a book of her recipes. It consists of a chicken breast poached in stock, cognac, celery, onion and herbs and placed over a bed of mashed potato topped with the supreme sauce which contains fresh mushrooms, butter, lemon, cream and seasonings.

Yesterday I made spaghetti bolognese and today we were out for pork in mushroom sauce.

We feel were freezing here with a temperature of (only) 20C which is 68F. Living in a warm climate has turned us into absolute wimps at the slightest drop in temperature. It's been windy with overcast sky. Should get warmer later in the week. :-)

    SharonCb

Annie, your apple galette and all that sausage has got me drooling. Guess I'd better go find a bib....

Sharon, the chicken over mashed potatoes has got to be worth every single calorie.
While you are freezing at 68F, think about us here...we have just had a winter storm watch issued and may get as much as 24" of snow by Friday morning. We just had a storm on Sunday and Monday that left us with 12" of snow.

Tonight we just had burgers and fries.

I also made a Banana Cake Roll today, I had banana's that were just at the perfect stage, nice and ripe.

I also started a pot of beef ribs today for beef vegetable soup tomorrow. It's going to be snowing and I want to get started on Christmas cookies tomorrow too.

Guess I better start contributing to this post again-- hate to see it continuing to drop off to second page !

Can't completely catch up with all the great meals but those "breakfast for dinner" pictures sure look good.
Marigene your soup is mouth watering , have you posted the recipe for the Swedish Nut cake?
Ann- your Greek salads -- can just taste the crunch !
Sharon-- as usual I really enjoy you beautiful blue skies ( & the food too)
Annie-- I'll take a big piece of that apple pastry. your homemade sausage reminded me I've got 5 # of slivered venison in the back refrig waiting to be made into jerky for the boys Christmas gift!
Grace-- quite a hunk you've got there
OMG , Nancy that cake looks scrumptious -- recipe please, please !

Bit of the "cookin" that's been picture worthy in last few weeks
6 in chicken pot pies for the freezer

Yesterday's "giving into an urge to bake & nosh
Orange cranberry biscotti with mini choc chips after first bake & cooling:

Tonight's Comfort food-- fat & carbs & calories galore = creamed dried beef on plain boiled potatoes-- hey there was a bit of redemption in the fresh Brussels sprouts & red grapes

And Camp's Thanksgiving "turkey" waiting for Doc to throw in the oven-- he knows after all these years I better get at least one food picture when he returns the camera. This year he even brought the empty canning jars home!!

I've been busy and hosting company since starting this thread so I'm late reporting back. I see breakfast was hit for many of us and all of the TG dinners look great! Grace, nice to see/meet you and I'm glad your DS was feeling better by dinner time. Sharon, glad to hear your fish and chips turned out good...one of my favorite meals. Ann, I'm doing prime rib for DN next weekend, can't wait...yorkshire puddings are one of his favorites from the forum from many years ago. Sharon, as always great pics! The lady friend in one of the pics reminds me of Bubbe(Renee)what a resemblence if I ever saw one. Nancy, pass me a burger please, one of my favorite meals. Diane, lol, glad Doc took the pics...I'm sure he and the guys had a great time at camp. Annie, I really need to take on making sausage one of these days....just need to borrow some of your energy and time management.

After a long weekend with too much heavy food and lots of company.... I had a ceasar salad Monday night and finished off the last of the fresh fruit from breakfast/brunches over the weekend. Last night I tried another potatoe pancake recipe from the net...sour cream and apple sauce were the condiments along with some bacon. This one may be it with a little tweaking...been trying to duplicate the ones I get during Octoberfest.

    No pics this time....

Thanks Ann for the method description.
I'll have to try it with my new favorite potato(German Butterball), this last supply is just about the right size not to be cut up at all.
We've of course been eating..it's just been fast and furious to get it eaten and back to homework and nightly reading.
Lastnight was Turkey Enchiladas with a side of spanish rice and refried beans.
Tonight...might be breakfast...I'm not sure..although I have alot of veggies..so a big ol pan of roasted veggies sounds good to me! LOL
I do need to pull some big ol country style pork ribs out for this week.

OOH Nancy, great looking burger. And I wish I liked bananas. That cake looks delicious. Great picture.

Diane, Now I have a craving for a chicken pie. I love that Doc, takes pictures of his food too. Moe has never used my camera.

David, sounds like you have been busy. I knew that woman in Sharon's picture made me think of someone but I couldn't think of who it was. You nailed it.

Sharon, looks like you found a great new restaurant. Everything is so beautifully plated.

We had our neighbours over for a casual dinner last night. Dinner was Caesar Salad, Parmesan Crusted Halibut, parisienne potatoes and steamed asparagus. Dessert was Marbled Chocolate cheesecake tart.

I didn't take dinner pictures, but I took pictures of my table so I could high light the beautiful coasters that Maria sent me as part of my swap package. The Candle is also from a previous swap package. One that Shaun sent me.

Grace finally I get to open your pics! Your table is lovely and that boy of yours is quite the hunk! By the way you can never work yourself out of the Mom job....LOL

Sharon your friend does look remarkably like Rennee! Also I really need that Chicken Supreme recipe it looks soooooooooobad!

Annie you cookin' fool! The sausage looks wonderful. You are lucky to have a guy that wants to cook with you. The only time I can get Clive into the kitchen is when I'm wearing the "right" apron! LOL

This forum is evil......Nancy has me craving a good homemade burger and Diane has me craving Chicken Pot Pie ! How come no one is making me crave a tossed salad!

Ann your table looks lovely and the coasters are perfect!

I loved last nights dinner. Sauerkraut, pierogy and a delicious Slovakian sausage called Kranske. Sauted up some onions and served with a dollop...OK way more than a dollop of sour cream! Delish!

A new deli style grocery store has opened near by , the place is huge! I have never seen so many sausages, meats, breads, cheeses etc in one place and the quality is superb. The only down side is that this place is way to close to me! LOL

Baked crepes, herbs de provence, stuffed with sauteed shrimp, mushrooms and goat cheese, garnished with chopped tomato...

Sorry no photo but so quick and easy to make. Using a basic crepe recipe, make crepes, sprinkling on some herbs de provence (or seasoning of your preference) while in the pan and set aside.

    Preheat oven to 325

Sautee mushrooms, shrimp and a little garlic with olive oil. Add a bit of white wine if you like! Stuff and roll crepes with the sauteed mixture and add some goat cheese before you roll. (I prefer Boucheron) and place on a cookie sheet. Bake for 20 to 30 mins until the crepes are little crispy and cheese is melted.

Garnish with cold, chopped tomato or any other cold veggie you prefer.

I had this in Paris for lunch one day -- went back and had it three more times! Love this!

Crepes and Shrimps, sounds good to me.

I'll skip the Sauerkraut Sharon, but I would love some of your pierogies.

We went to Victoria today to do a little Christmas shopping. Had a late lunch at a favourite Chinese restaurant before heading home. I didn't have anything planned for dinner and Moe said that he would be happy with another Caesar Salad so that is what he got. Not often he gets a salad two days in a row.

Oh Nancy your banana cake roll looks just wonderful. I love banana cake. My aunt used to make a really good one with a caramel icing.

Hi Diane (Craftyn)....nice to see you here again. And you sure have been busy in the kitchen. I'd also love some of that chicken pot pie!

David....the lady in my photo is a former tennis champ from Barcelona and is now one of our Pilates trainers. Yes she is petite with a cute hairstyle like our Renee (Bubbe). She's also very vivacious and clever.

Ann your pink, brown and olive green make a lovely warm colour combo for a dining room.
I would also take Caesar salad two days in a row.

Yesterday was busy so I opened a package of frozen white fish in Italian sauce...35 minutes in the toaster oven and it was ready. On the second shelf of the oven I did roasted potatoes and yellow yams. Steamed carrots and spinach finished the meal.
We're sitting inside in the dining room at the moment as it's still a little chilly outdoors here.

Sharon (Chase) I have put the recipe for the Chicken Supreme over on the Recipe Forum. (You're right....it is so baaaaaad!)

LOL! Sharon, your monitor colour must be way off. Not a hint of pink, brown or olive green in my dining room.

It's early here, and I have no idea what I'm going to make for dinner. But I still have a craving for Diane's Chicken Pie or Sharon's pierogoies. Decisions, Decisions.

Almost didn't have dinner - our just-out-of-warranty, incredibly-expensive-to-get-serviced oven died (again) just as I finished making the pizzas.

    Go to Plan B:

Bake them on the grill :-)

Good looking pizzas. Was it a Viking oven? Mine was a lemon, so I ended up often finishing a meal on the grill when the oven conked out. If you have a pizza stone you can place that right on the grill to bake pizza too.

Last night was Pollo alla Marengo. With a side of pasta.

    Ann,
Um, how did you know it's a Viking? Just a lucky guess, right?
Your pollo looks fabulous! I must try that one of these days.

When you said...."... just-out-of-warranty, incredibly-expensive-to-get-serviced oven died (again)".... I immediately thought "Viking". I had a Viking Range and the oven went on it often. I had to replace the two burners and the ignition switches twice and of course it was just after the short warranty ran out. I think that stove cost me over $800.00 in repairs over two years and it was going to cost more because the oven bottom needed to be replaced next because it was buckling. (sp?) It was four years old when we sold our house and we just left it behind. Someone else's problem now. I'd never buy another Viking.

Great solution! I'll just sell the house!

Another night of not really cooking for me! Joe and I met for lunch and had a big midday meal, so neither of us was very hungry for supper.

I had time to make a pan of Ann's green chili squares to send with Joe to his weekly guys poker night (they loved them) and I stayed home by the fire had nibbled on cheddar and crackers with some sliced Honeycrisp apple. Splurged with a glass of peach brandy that is getting smoother and smoother..... this is one of my last original bottles from the batch of 1995!
