Talk About Thanksgiving Menus..

Years ago I went to a banquet,the lady next to me made the best dressing(stuffing) I ever ate.I asked how she made it.Ive made it that way ever since love it,so much flavor.You melt margerine in fry pan,add chopped onion,parsley,salt pepper.saute,add your bread torn in pieces, till light brown stir occasionally,stuff turkey,bake mm it is great.

I love using fresh sweet potaoes doesnt compare to canned,add butter,molasses,brown sugar .Im getting hungry.Ill probably only have 2 bites mashed potaoes 2 of sweetpotatoes.Imhavinturkey,stuffing,mpotatoes,gtravy,sweet potaoes,green bean casserole,,cranberry sauce,cake..

Thanksgiving is different this year. I have 3 Vegans and 2 others who don't do Carbs. Then there are the Grands that want eat anything I cook. LOL!

I'm not going to do a whole Turkey, just the breast. No dressing because no one will eat it. I'll do cheesy broccoli rice instead. Everyone like baked sweet potatoes not with sugar and spiced up. Geez! Thank goodness everyone likes green beans.

No one eats desserts, so I will have a fruit salad.

Everyone prefers the jellied cranberry sauce. Go figure.

Thanksgiving just isn't that interesting anymore. LOL! I use to spend hours in the kitchen.

I haven't had a chance to really make out my menu, but we will have

turkey
ham
mashed potatoes
turkey gravy
candied sweet potatoes (home grown)
dressing
green beans
other vegetables not sure what yet
cranberry sauce
coleslaw
pumpkin pie and whipped cream
black raspberry pie
yeast rolls

The girls will also bring things to add to it so we will have a lot of food as usual.

Hi forum friends, since it's still before midnight... Happy Thanksgiving! I am exhausted but it was a good day. We just had a small group, just my 3 children and my daughter-in-law and grandbaby, and of course DH and my mom. My stepchildren came over to visit later, but not to eat since they were stuffed full already. Zeus, Fat Cat Nemo and Lily all enjoyed their turkey too. I did all the cooking like I always do (because I enjoy it) but I hate the cleanup afterwards. I cooked a 20 lb. turkey, homemade stuffing, mashed potatoes, green bean casserole, butternut squash casserole and other assorted dishes. Finished it off later with homemade apple and pumpkin pies. My son and oldest daughter had to work today so our meal was in the evening and I'm still stuffed. It felt very festive here but more like Christmas because of the snow we got a couple of days ago. Everything is covered in white. South of here all they got was rain but we got lots of snow. Somewhere in my day I managed to escape for an hour to go see my Dad in the nursing home. I really missed his smiling face at the dinner table tonight....my Dad always raves about my cooking. I brought him some pumpkin pie and he made me happy by eating it all up with a smile. I was so happy to come here tonight and see some of you checking in. I miss 'visiting' with you all. Rita, Ginny and Nancy...it was great to hear about your day. And dear Jean...I'm sorry you were feeling a little blue today. I wish I could send Zeus over there to snuggle up with you like he does me when I am feeling down. I am making a boneless turkey roll, spiral ham, potatoes. I made a cranberry sauce today and an orange-cranberry relish. tomorrow I'll make the mustard sauce. The rest of the family will be bringing veggies, salads and dessert. We will have around 30 here. Last Christmas I made the turkey roll in a cooking bag and it was so good. I can cook it in my garage in my portable oven - which frees up room in the kitchen and this year, reduces the heat! But...my local store doesn't carry those Reynold's bags anymore - WAHH...I am so disappointed. I live an hour away from a large city - so I am stuck. I LOVED using those bags for cooking the roast. Darn. I hope I come up with something to keep it from drying out. Happy turkey to all of you. PS. We are farmers and I wish our Thanksgiving was the first weekend in November not October. The guys are never done at this time of year - they have just started. it would be nice to really celebrate the harvest with a big feast - when the work is actually done.

We do a fairly traditional Thanksgiving here. This year we are just hosting my parents as well as MIL, who is flying in from West Coast. We are looking forward to having her as she usually spends the holidays with dh's siblings. For the last couple of years, dh has smoked our turkey but he is going to London on Sunday and won't be back in time to do the prep work, so we will just roast in oven as we used to (my preference actually as I don't like the smoky flavor but don't have heart to tell him!). We will also have make ahead mashed potato casserole, homemade gravy, sweet potato casserole with pecans, chestnut stuffing, cranberry sauce from a can (I'd rather have homemade but I don't eat it and kids/dh/my parents like canned so I won't bother unless MIL doesn't like it), roasted vegetables. Possibly rolls for kids, adults won't eat with all other food.. For dessert, pumpkin chiffon pie, traditional pumpkin pie, my mother's chocolate pie b/c my kids love it. We may have apple pie too, but save it for another night when we have leftovers.

Another whose husband just told me yesterday he thinks a scaled down day/meal will be nicer for everyone LOL. I hosted Thanksgiving for many years and we usually had at least 15 and often closer to 25 for the meal. I didn't make elaborate recipes but I did make BIG batches: five pounds of Pioneer Woman mashed potatoes, couple dozen deviled eggs, 12-15 pounds of turkey breast and so on. People would bring lots of desserts, appetizers etc. I'd get out the good linens, dishes and silverware and try to make it as festive as possible. Those were good celebrations but oh my the work, and effort, and clean up....ooof. I was always exhausted by the time we finished cleaning up and went to bed that evening. As time has marched on, kids grew up and moved out, sadly some elderly relatives are deceased and now the turkey day gathering is both smaller and composed of lighter appetites than back in our heyday. There are only around 10 of us now so we may gather at my dad's house as it is central for everyone who still lives locally. He's 86 and gets pretty overwhelmed with gatherings even when he doesn't have to DO anything per se so that's another good reason to scale down in quantity and variety. A simple Thanksgiving menu of turkey breast, stuffing, mashed potatoes and gravy is fine. A vegetable or two, a dessert or two and we are good to go. Looking forward to it actually, it is all about the gathering and the love as many of you have wisely pointed out. Less fussing and more family time is a good recipe!

We are staying home this year so just the 2 of us most likely. I will probably get one of the Eddy's Cajun smoked turkeys or the breast. We love those plus so much easier to do just heat it up and serve.
sweetpotato casserole with the praline topping
rice dressing/dirty rice
potato salad (my husband has to have it)
some green vegetable maybe asparagus.

I would much rather have a home cooked fried turkey but my husband said the cooker is still buried somewhere in the garage and has been since the move. Good excuse for him not to cook it LOL

I make the same menu my mother and grandmother and made:

Fresh Roasted Tom turkey
Bread and sausage stuffing
Giblet gravy
homemade cranberry sauce
candied yams
mashed white potatoes
fresh peas
dinner rolls
green stuffed olives

Cracker, cheese and cold cut tray, turkey breast, gravy, cranberry sauce, mashed and sweet potatoes, green beans, breads, for dessert bakery cookies and pumpkin pie. But it's still evolving. Not sure if we'll have two, three or four for thanksgiving. Our daughters may spend the day at their boyfriends' homes.

There will be 5 of us with my daughter, DSIL and GS. We're down-sizing the menu this year. Too much goes down the disposal! So far it's:

Turkey
Giblet gravy
Stuffing (made in a pan)
Mashed potatoes
Noodles (maybe, if I feel like making them)
Glazed carrots
Green beans
Cinnamon apples
Hot rolls (Sister Shubert or Publix)
Pumpkin pie (Mrs. Callander's)

The menu is basic and simple and never changes. It's how we like it. Any changes are in the way of appetizers or dessert.

Roast turkey that must be stuffed.

Cranberry sauce

Stuffing is similar to Bulldinkie's. Even people who don't eat dressing like mine. Stuffing doesn't need a lot of stuff in it to make it good when it is properly prepared with good bread. Good steak doesn't need sauce. good stuffing doesn't have to be filled with other "stuff".

Mashed potatoes made with real butter and canned milk.

Baby Peas ( sometimes I serve a second veggie like carrots)

Home made gravy.

Canned yams with brown sugar,butter and marshmallows. (it's what they want, not me)

There will be 5 of us at our house. DH and I love to host Thanksgiving even if it's just for a small gathering. We're having:

Roast turkey with stuffing (in and out of the bird)
Mashed potatoes
Roasted vegetables ~ carrots, brussel sprouts, acorn squash
Fresh green bean casserole
Sweet potatoes with cranberries (in the slow cooker)
Cipollini agradolce
Homemade applesauce
Homemade cranberry-orange sauce
Turkey gravy (in the roasting pan with drippings)
Biscuits (Mrs. Shubert's because they are deeeelicious)
Wine, apple juice, tea, coffee, milk
Pumpkin pie
Apple pie
Chocolate chip mandelbrot
Poached pears

My cousin, Linda, is making the pies and mandelbrot and we're cooking and making the rest.

I love Thanksgiving!

At my house, we vie for the stuffing. I claim it is the best part of the turkey. The stuffing is the first part that gets comsumed. My wife makes an extra batch besides what's in the bird to satisfy demand.

I'm cooking for 40 this year. Most years it's 30-ish, but this year is my parents' 60th anniversary (they were married on Thanksgiving Day) so the whole family will be here. We're having:

2 large turkeys
Bread stuffing - some in the birds, extra baked separately
Mashed Potatoes
Turkey Gravy
Sweet Potatoes - some roasted with garlic and rosemary, some candied
Sauteed canned mushrooms - a family must have!
Steamed whole green beans
Corn for the kiddos
Cranberry sauce - canned jellied and homemade whole with orange
Assorted homemade dinner rolls

Desserts:
Pumpkin pie - 4
Pecan pie - 2
Custard pie - 2
Apple galette - 4
Carrot cake with cream cheese frosting decorated to look like their wedding cake

Dinner is being served at 1:00, and I have out of town family staying with me so I anticipate some will hang around until 10:00 or so. I will bake a ham to slice for sandwiches in the evening along with leftovers from dinner. I'm tired already!

I've never liked stuffing/dressing. As a kid, I hated my Mom's-don't like the texture of wet bread (don't like bread pudding either) and I hate sage-it seems to taste "dusty". I had a decent recipe using onion and sweet sausage but I haven't made it in years. I've tried StoveTop and am not pleased with it either. So I prefer to habve a no-dressing Thanksgiving. So there!

About those mashed potatoes for Thanksgiving- we have a friend that we don't see often but he comes for Thanksgiving dinner every year. He can't stand ANY lumps in mashed potatoes so he beats the heck out of the potatoes himself. He'll spend ten minutes whipping them. A few lumps never bothered me at all.

We will have 9 (plus 1 year old and 3 year old grandsons) for Thanksgiving, as usual. All are family except DSs girlfriend. (This is her 5th Thanksgiving with us. My son's a slow poke!)

We have traditional dishes that my sister and I make. Turkey and gravy, sage dressing, twice baked potatoes, candied sweet potatoes, a salad which will probably be a citrus and greens salad, homemade cranberry-orange relish type sauce, pumpking bread and hard rolls, a fresh veggie and dessert. We vary the veggies, salad and dessert but have favorites we often repeat, and everything is homemade from scratch.

I'm eating out...but I definitely agree with Wildchild about stuffing...or dressing...and steak. I love cornbread dressing. I hate soggy stuffing.

there is only 5 of us for Thanksgiving. Everything I make is from "Our Recipes"

My son cooks a Deep Fried turkey
I make sweet potato casserole
a cranberry salad
fruit salad (from So. Plate)
mashed potatoes & some veggie
homemade rolls
pumpkin pie
and then whatever else comes to mind.
Usually the same every year with some extras
