T-Day Dinner is tomorrow everyone should be good and hungry by dinner becasue it is cottage "close down" weekend. Docks in, boats in, brush burned etc....

This year is a smallish gathering for me, just 10 of us. Menu is same old, same old......

Not doing a ham this year, not enough people to make it worthwhile. I'm sure I'll hear about it !

Wow wish I was there to help you with outside work - WE GOT SNOW TODY. Kids were out making snowballs - mitts, ski pants the whole outfit. Thanksgiving is way too early for this.

I'm sick this year, and gave notice to my extended family in August that I would not be able to host Thanksgiving OR Christmas this year, and someone else would have to step up and do it. So guess what? No one has.....

So, it looks like we'll be doing a dinner at our house after all, except that we will not be inviting the rest of the family. Our minimalist menu for the five of us will include a spiral sliced ham from Costco (the leftovers will be frozen), garlic smashed potatoes, curried cabbage & peas, baked squash, and a store-bought pumpkin pie. All in all, I'm feeling better this weekend that I ever expected to, but still not well enough to clear off the dining room table and cook a grand holiday meal.

cooksnsews- sounds pretty good for a minimalist menu! Hope your family appreciates all your efforts.

Sounds like wonderful meals that everyone has planned. Cooksnews, I'm sorry no one else stepped up, but oyu dinner sounds very tasty.

We are actually going to be sort of celebrating along with you northerners. I had a request to deep fry a turkey for our Thanksgiving, and since I've never done that before we are doing a trial run with the fryer tomorrow. Since it is turkey, I am making some of the traditional sides... garlic mashed potatoes, Green Bean casserole, cranberry sauce sweet potatoes and pumpkin pie for dessert.

Not sure what to do about gravy since there wont be any pan drippings......

The gravy and stuffing is a bit of an issue but I know you can figure that out...eh!

I did a trial run today, cooked a Turkey using High Heat.

It was done a lot sooner but I didn't like it as much as the Old standby method, with stuffing.
I went to 170 Deg. on the thermometer.
Baked the Stuffing with chopped Sausage added, separately in Corning Ware,it was good !
Got more rave comments on the stuffing than the turkey.
Dissapointing.

Usually bake it Stuffed, in a Waterless Cooker, 350 Deg. with a lid.
Take the lid off in the last 1/2 hour, turn the heat up, to brown it.
Perfect every time. Always Tender , moist, delicious.

Happy Thanksgiving! Wow, you ladies make me want to go to your house for dinner! We're doing a small Thanksgiving dinner tomorrow... just the three of us plus in-laws. Instead of a turkey we will have a small chicken. Hubby is cooking and all I have to worry about is dessert. I got this one easy! LOL

I just watched the Ellen Page "Carppy Canadian Thanksgiving" video on YouTube, and I can't quite get THAT menu out of my head!

The kids want Elery to smoke a turkey this year so any stuffing will be cooked separately in the oven. I'm sure we'll have turkey, but after that, who knows. Heck, the kids ASKED for the turkey, usually I'm prohibited from ever changing the menu, but they ASKED. We'll see...

Happy Thanksgiving! I'm working today so we are celebrating Monday with our neighbours Clif and Barb.

Cooksnsews, I'm sorry you have been ill and no one is stepping up to the plate. But it sounds like you have a nice dinner planned.

Alexa,that's great that you are going to celebrate both Thanksgivings. I hope you can figure out a way to make gravy. That would be the only reason I wouldn't like a smoked turkey dinner. Maybe you could roast a small chicken as well and make gravy from that.

Dinner will be our traditional Turkey Dinner with Onion and Sage Bread dressing, rutabaga, brussel sprouts, mashed potatoes, cranberries, etc.... The turkey has been presalted since yesterday and tonight I'll unwrap it and let it air dry in the fridge and then tomorrow it will be roasted using the Barbara Kafka's High Heat Method. A perfect roast turkey every time.

Haven't decided on dessert yet but since my Bread and Butter Pudding with caramel sauce is Barb's favourite I'm leaning towards that.

Happy Thanksgiving!

Last week, I threw my back out, so we had to scale things down a bit. I wasn't able to do nearly as much, but DH rolled up his sleeves and, with a little direction, was able to muddle through my wishes. ;-)

Our wonderful guests are also helping out by bringing appetizers, salad, and dessert.

It's too bad because I had planned on making AnnT's white chocolate tart with raspberries. I even bought a new tart pan and everything!

Otherwise, we have prepared:

-Roast turkey
-Dressing (Sausage, apple and sage)
-Buttermilk mashed potatoes
-Gravy
-Whipped sweet potatoes with pecan crumble
-Green beans with bacon, caramelized onion and toasted almonds

Turkey is in the oven now. Potatoes, sweet potatoes, and stuffing were made yesterday. So we just need to make gravy and the beans, and we're all set. We're expecting our guests in about 2 hours.

Holy He!!

Deep frying a turkey is intimidating! 4 gallons of 375 degree peanut oil is enough to strike fear in my heart... but so far all is well. It is done frying and "resting". Tomorrow I will post photos of DHs red-neck scaffold that we used to raise and lower the turkey - it is a hoot!

Alexa, I'm just waiting to see that "red neck scaffold". LOLOLOL I thought my family had the market on "redneck" cornered here on the forum, but it looks like I have competition with the grill handle and the turkey scaffold. (grin)

Cooksnews: You may be on to a new and wonderful tradition for yourself and family. I wish you well and hope next year is a good and healthy one for you and your family. Thanksgiving is my favorite holiday and sometimes it's a traditional turkey dinner (always with peanut soup) sometimes with ham instead of turkey. Always with football, a fire in the fireplace, friends and family when it works out and giving to the food bank and local community to help others as we can.

Cooksnews I think your dinner sounds wonderful and I'm sorry for you that your family didn't take over the preparations when knowing so far ahead that you have been feeling poorly.

My sister on Vancouver Island hosted a family dinner last night so I hope today to receive some photos of my loved ones there enjoying their turkey dinner.

I think we'll going out for lunch today seeing as it's also a holiday all over Spain: Dia de la Hispanidad....day of the Spanish Heritage.

Don't think I'll find roast turkey on any menu here though.

Happy Thanksgiving to all y'all in Canada!! All these menus sound wonderful and it's getting me in the mood for Turkey! We'll be going to my sister's house for TG where all I have to do is drink wine, play games, chat and eat! And I am very thankful for that! Enjoy your holiday!!!

We ate our Thanksgiving feast at lunch time, so my brother could make the 4 hr drive back home before dark. I didn't think I could eat so much so early in the day, but I did! Spent all morning cooking, but the kiddoes cleaned up afterwards. As a committed foodie, I just couldn't face a store-bought pumpkin pie (the rest of the gang had no such problems) so I made myself a tray of sugar free brownies. And there are still a few left....

Thanks to all for your kind thoughts when I'm feeling so punk this year leading up to the holidays. At least we have a fridge full of quality leftovers now, as I don't think I'll feel as good next week as I do today (my doc is changing my meds this week). Oh well, when a foodie is sick, she stops doing housework, laundry, shopping, entertaining, etc. but she DOESN'T stop cooking, even if she can only cook for herself. The mere thought of consuming fast- or pre-processed food makes me feel so much worse than than standing up to throw together soup or an omelette.

I have much to be thankful for this year!
