What's for dinner Monday?

We just got home from meeting with a high school friend and her husband who were passing through on their way home south of here. What a great time we had remembering back all those years ago. What a hoot! We both had pictures from previous reunions and she had one of our 50th which was this last summer.

There was a chicken place on the way home so we stopped and bought some chicken livers and fried okra. So that's dinner tonight.

Mike is on his way to Papa Murphy's as I type. The guys are having an all meat pizza and I am having their deluxe vegetable pizza. I love it since it also has artichokes on it.

Wow, your dinners all sound so good! I love the chicken in the slow cooker, steak, pasta sauce. Stir-fries are always good, and anything can be used in it. So versatile. Baked salmon and asparagus sounds delicious! I've got asparagus in the frig, that I'll either cook with orzo, or maybe roast it. We love it roasted. The last time we did that I made Angela's roasted asparagus breaded with breadcrumbs and parmesan. Thank you SO much for the best wishes guys. I just read them to him and he's touched. I know things will be good and he'll have a good recovery. This is a top-notch hospital AND it's all done by robot. Not laproscopy but a robot, not a human hand. He think that's very cool. LOL The time wearing the catheter and the recovery time is greatly reduced by choosing this method. And he's home the following morning, vs spending 3 days in the hospital with the traditional surgery.

Ellen chicken salad sounds delicious Shirley, Spanish rice sounds good. I make one version in the slow cooker, with ground beef. Sue, I like my fried egg sandwiches with tomato as well, and bacon when we have it. Kath, I used to like the Southwestern Salad from McD's. Haven't had one of them in a couple of years now. Raven, I love that skillet dish. One-dish meals are so handy. OF, as you said, frozen lasagna is way easier than making one from scratch! Pam you had what is the perfect steak dinner! Jim, veggie soup and lemon pudding! Yum! We're in for the high temps tomorrow as well with high humidity. 30C but feeling much hotter with the humidity.

Jim congratulations on your upcoming cruise! I love it that you had wine with bacon and eggs. Audrey, your dinner looks and sounds fabulous. We had baked potatoes last nite. Shirley, I've yet to make red beans and rice. What's throwing me off from making it, much as I'd like to, is that we only have kidney beans, as far as a red bean, and I know that isn't the kind to use. I made quinoa with toasted almonds and red currants the other day. We like quinoa. Kath, for some reason companies change their recipes. In the event of making things healthier, taste gets compromised. Less fat and salt is less flavour it seems. Prairie Rose, do you make the light fluffy dumplings? That's what my Nan made and that's all I've ever known. I've never attempted it; I should! Raven, that looks divine!! We love roasted vegetables! Erin, I hope you feel better. That's dedication, coming onto a dinner thread when you're not feeling that great. Betsy, that's nice comfort food. Gyr_Falcon, that's a great sounding meal! Glad to see you here.

Gorgeous day here today. I made grilled chicken breast in cacciatore sauce with sliced fresh little tomatoes and served it over fettuccine topped with grated cheeses. It was awesome. I should have made garlic bread to go with it.

We both felt like pizza, so got a refrigerated one from the store, and I always add more sauce, onions, olives, cheese.

I baked it on my cast-iron griddle, and DH thought the pizza was extra-good. I wonder if it is because of the griddle. I normally just put the pizza directly on the oven rack.

I was doing some photos for a column today, so dinner will be the leftovers--BBQ chicken on biscuits and stuffed baked potato.

Good thing I've got dinner done, too. With the emergency utility work, DH is working at the other end of the state and won't be home until well after 8. Nice to have something ready to go, that I can nuke in a couple of minutes.

My husband was not feeling well yesterday and requested my home made chili so that is what is cooking. I have to admit I have been having a hankering for it too.

Ms Myra's for her smoked chicken salad with crackers and a pickle. Plus they were giving out free samples of their brunswick stew.

DH had the last of the chili. I'm going to cook up a hamburger for me.

I need to make a pizza--it sounds pretty darned good. I always think I have to have meat on mine, but I do like the Publix brand white pizza with spinach.

We had chili two nights in a row and I could eat it again. Our chicken livers and okra weren't very good. Both were overcooked. Hope your DH is feeling better, Raven. Georgysmom, is it too cold where you are to play golf?

Lily, the delicious meals you cook must make your family really happy!

Zipper, we just had vegetable soup so it's too early to pull it out of the freezer (darn it), but tomorrow I'm making chicken salad. Glenda, I wish I had smoked chicken, but guess I'll settle for the usual kind with grapes, celery and roasted walnuts.

Azzalea, I bet your poor DH will be cold and starving when he gets home. Bless his heart for the job he does. It can't be easy!!

I had errands to run for the wedding so we planned on picking up a rotisserie chicken.....well I guess that everyone in town had the same idea, 3 stores no chickens. So we ended up at Chili's. I had chicken Monterrey, Andy had fajitas.

We had Taco Salad, the meat being left over from soft Tacos the night before. Going to make some white chicken chili today after golf I think.

We had leftover pork chop and potato casserole...awesome! Think I'll try this recipe with chicken breast...even thinking about it makes my mouth water!
