I went shopping all day today, found next to nothing tho. Looking for trousers to wear with a sweater that I bought for the weekend at my boss's wedding.

Andy picked up wings (hot and garlic parm), I am making some turnip fries.

Sue, sometimes I crave a bologna and potato chip sandwich. I really like garlic bologna. That's what I use to make "ham" salad. Yum!

Ugh, Lynn--pants shopping. It can drive a person crazy! I don't know who they're making slacks for--but it sure ain't me!!! Turnip fries? I'm loving those already. Do you bake or fry them? Please share.

Tonight is the neighborhood Oktoberfest, which is held at the top of our property.

We have 6 home brewers in the neighborhood, and someone is also providing some German wine. There will also be home brewed root beer. There will be smoked pulled pork, brats on the grill, and lots of other stuff via potluck contributions.

Our contribution is a potato apple hash with onions and bacon.

Restaurant gave me lunch free, today,

Nabeel's for my usual balogna on rye with provolone cheese, mustard, mayo, lettuce and tomato with their seasoned home pita chips.

THAT'S WHAT I was supposed to get.

But didn't get it. Wasn't heated, no cheese, no tomato.

You don't have to ask for the cheese and it to be heated cause that's the way it always comes. NOT today, and waiter asked me how it was and I politely, told him.

The manager, who knows me, and knows that's only what I order, and have ordered over numerous years, came and said no charge. Offered to pay, cause I said I DID eat it, but that's the way they run their business.

I DID leave a tip.

Finished up some leftovers. DH is out playing tonite and he likes to eat light when he does.

Patti, you asked about my nacho casserole last nite.
I just cut up some tortillas into pieces and baked them.
I browned some hamburger, garlic and onions and mixed in some tomatoes and salsa. Stirred in some sour cream and sliced black olives.

Put some toasted tortilla chips in the bottom of a casserole, some hamburger mixture, some shredded cheese then another layer of same.
I stuck some tortilla chips out so they'd stay crispy and not get soggy like the layered ones would.

Baked, and it was really good!

Mary c, what a fun Saturday evening with your neighbors. Everything sounds delicious, especially that potato/apple dish. Hope you will share.

Glenda, that was really nice of the restaurant to not charge you, but it's a big disappointment when you don't get what you were hungry for. And the best thing about the internet is that we can "talk" all we want to! :-) We all like to listen to you, ya' know!

Jasdip, I will surely have to try that. It sounds like baked nachos--and I'm a big nacho fan!

Chicken Cheese Enchiladas

took advantage of the $5 footlongs at subway again since October is quickly dwindling and the offer will end then.

Was out shopping hurried home to watch the OU Sooners game and it turns out they are still not playing yet due to weather delay, bad lightening in the area.

but the subs sure were good.

started out a local diner for breakfast, with ds2 and family...they were picking up a bed for dgs...getting ready for baby #2 a girl due in dec..

lunch was out at soccer game...

we did finally ate at home for dnner, but it was canned soup and rolls...crazy day!

DH didn't have the white chili last night so that's what I served. It was soooo good. He loved it. It was great to have dinner made ahead of time because after golf today I went shopping and didn't get home until after 5:00.

I don't have a recipe for the hash - just a method. Vary the amounts as you wish.

2 or 3 medium potates (I use Yukon Golds)
2 slices thick cut bacon
1 small onion, diced
2 apples, cut it 1/2" dice

Partially cook potatoes in the microwave. They should still be firm. Cool and cut into 1/2" dice.

Cook bacon until crisp. Drain and crumble.

Using either vegetable oil or the bacon fat (or both), saute the onion and apple for 5 minutes over medium heat. Add the diced potatoes, and cook for another 5 to 10 minutes, stirring often, until potatoes are browned and tender. Add the bacon.

Eat.
