What Foods Remind You of Fall?

I think of several, apples, pumpkins, squash and things made with black walnuts. I like them all. We cracked some black walnuts today from last year. We have been gathering this years crop a little at a time. I have made several pumpkin and apple pies and have a butternut squash to bake into pies. Sweet potatoes are another favorite. We have not dug ours yet. What foods do you like in the fall.

Pasties are a favorite fall food here, along with anything that has apples. I also think of potatoes, winter squashes and pumpkins. This is my current favorite pasty recipe, although I sub some butter for half of the Crisco. I was taught that carrots NEVER go in a pasty, and they have to have rutabaga, but some people prefer the sweeter carrots. I think it's which ever you like, and I don't use ground beef, always the diced or minced steak. Don't use really lean beef or the pasty is dry. Dad covers his with gravy, I like mine plain. Pasty Recipe (This recipe makes four pasties, multiply accordingly) The Crust 2 cup flour 2/3 cup Crisco 1/2 teaspoon Salt 1/2 cup Cold Water Cut Shortening into Flour and Salt, add Water. Mix and Knead until well blended. (yes, contrary to pie crust, you Knead) Form into 4 balls and chill in the refrigerator for at least one hour. Roll in to 8 inch circle. Use plenty of flour while rolling out. The Filling 3/4 pound of ground chuck or 1/2 inch cubes of steak. 1/2 cup chopped onion 1/2 cup of grated rutabaga (or carrots) 1/2 cup grated (edible) beef suet (optional) (the suet is used with the lean steak, and can be traded off to the fat content of the ground beef) 3 cups of diced potatos 1 and 1/2 teaspoon salt 1/2 teaspoon pepper 2 tablespoon dried Parsley or 1/3 cup fresh Mix the filling together in a large bowl. Roll out the dough, and brush the edges with milk. Put 1 cup of filling onto one side of each crust and fold over. Seal the edge by pressing with a fork. Put on cookie sheet, cut 1 slit (1/2 inch) in each for steam and brush top with milk. Bake in 400F oven on Bottom Shelf for 25 minutes, then move to middle shelf for 20 minutes. Annie

Two of my favorite fall vegetarian soups---peanut soup and corn chowder. Both can be made 1 day ahead. Peanut Soup ----------- 1T peanut oil 1 onion, halved, sliced 3 garlic cloves, minced 3T curry powder 4C chicken stock (I use veggie stock) 1/3C rice (uncooked) 3 carrots, peeled, sliced 1/2C creamy peanut butter 1 1/2t sugar Chopped green onions and/or chopped cilantro Heat oil in heavy saucepan over medium heat. Add onion, garlic and curry powder and sautÃ© until onion is translucent. Add 4C stock and bring to boil. Stir in rice and carrots. Reduce heat and simmer until rice is very tender, stirring occasionally, about 20 minutes. Puree about half of soup in blender with peanut butter. Return puree to saucepan. Stir soup until heated through, thinning with more stock if desired; do not boil. Mix in sugar. Just before serving, garnish with green onions and cilantro. Corn Chowder ------------ 1/2 stick butter 1 small onion, chopped 1/2C diced red bell pepper 1/2C diced green bell pepper 1/2t ground cumin 1/4t cayenne pepper 1/4C all purpose flour 1C canned chicken/veggie broth 1C milk (don't use skim) 1 16- to 17-ounce can whole-kernel corn, drained, liquid reserved Minced fresh cilantro (optional) Melt butter in heavy saucepan over medium heat. Add onion and bell peppers, cumin & cayenne and sautÃ© about 8 mins. Add flour and stir 1 more minute. Gradually mix in broth, milk and reserved corn liquid. Bring mixture to boil, whisk until smooth. Mix in corn and stir until corn is just heated through. Ladle soup into bowls. Garnish with cilantro if desired and serve. (This is also good topped with sour cream and/or shredded cheddar cheese).

Please, please... give me a break. Our plums and berries are burying us alive, and Peaches have not ripened yet. Summer squash, OH MY GOODNESS.... they grow huge overnight... and the freezer is full of jam making purees .... and where oh where has the time gone. I did bake (and one for the freezer) an apple pie last night with the AC doing battle with the oven, and the dehydrator making plum 'leather'. And, I forgot beautiful, beautiful tomatoes given away and made into soup starter. I must take a few breaths now, and let you know that winter comes all to soon here in Southern Oregon and lasts too long!

I think of pecans in the fall.....pecan pie, hot spicy roasted pecans, pecans on my cereal, pecans in salads!

Gingerbread is a fall treat for me.

Plus, apples and pumpkin dishes, too.

Chinese food (which we enjoy more when the weather is nippy), stew.

Homemade soups and anything pumpkin. Today a cousin and I went to lunch and decided to have breakfast. I had pumpkin pancakes. They were yummy.

Baked apples, baked squash. But when the temp is 90 in October, I lose interest.

I've lived through holidays in the deep south when I turned on the AC so I could roast a turkey, bake pies, lol.

Pork with potatoes and sauerkraut and apple sauce, pumpkin soup, acorn squash, sweet potato spinach salad, radicchio salad, caramel apples, stuff like that!

When I was young, we had several apple trees in our back yard. It was part of my chores to pick up the windfall and put them in bushel baskets. Every Saturday we took them to a local gent who pressed them into fresh cider. You never got your own apples you got what others brought in. We would get the cider in glass gallon jars. I could barely wait to get home to taste the freshly made apple cider. It might have tasted better because I completed my chore.

Sue, I could have written your list!! Also, the apple cider that Monica mentioned, root vegetables like parsnips, beets, and so on, chili, homemade soups, dried beans, tiny new potatoes....

We eat a ton of winter squash in the fall. I love to try every size and shape I can find. The old standby for a squash with seed cavity that you can stand upright is to bake it with butter, salt, and pepper in the middle, but I like to experiment with adding other things.. balsamic vinegar, red chili flakes, brown sugar, garlic.. I've also got where I usually cut the top off the squash and pre-cook it in the microwave for 15-18 minutes before moving it to the oven. They don't take all afternoon that way :-) Pumpkin bars and apple deserts are a MUST every fall. And roasted root vegetables... yummmmm.....

Stew.

I used to watch for the Marshal Field's caramel apples every fall. Long gone.

Mulled cider is served in our house from Thanksgiving, if it is cool enough. through the winter whenever the kids are here.

Pumpkin pie, pecan pie, apple cider, chili and cornbread, vegetable soup with cornbread or homemade cheese bread. Cooking smores with the grands in the cool of the evening. Love fall.

Braised brisket in mushroom gravy with mashed potatoes (sometimes made with braised leeks).
Mushroon barley soup (chicken or beef, not picky)
Butternut squash soup

Spiced wafer cookies in the orange box. I always crave them in the fall.
