What's for dinner 10/28?

I got a huge chicken breast out this morning and think I'm going to throw salsa and cheese on top and stick it in the oven. Baked potatoes, too. I'm still not finished cleaning house--have the kitchen and Florida room floors to mop and my sister will be here tomorrow afternoon! My neighbor came over. Bless her heart, she's about 85 and lonely but she'll talk your arm off.

It's a balmy 40 degrees here, but sunny. WE are having left-over ribs from last night, and a squash from the garden. That will fill us up.

Spicy Chicken Patties 1 cup bread crumbs... 1 pound chicken (skinless boneless breasts) processed 1/4 cup chopped chives (I used dry) 3 Tablespoons Mayonnaise 1 teaspoon cajun seasoning (next time I'll use a bit more) 1/4 teaspoon salt 2 large eggs Make into patties, cook in oil it said 7 mins on each side or until done Sauce 2 Tablespoons Mayonnaise 2 teaspoons horseradish 1 teaspoon minced garlic 1/8 teaspoon salt (I doubled. Went all out last night... I've never done Chinese, except for an occasional stir fry, and I had a new cookbook :-) I made: Orange Chicken Shrimp in Lobster Sauce Kung Po Pork Served with Rice and some sort of oriental rice noodles, along with (purchased) eggrolls and fortune cookies. Emi and her boyfriend joined Gary and I for dinner and I received soooo many compliments. It took about 2 1/2 hours (of solid kitchen work by ME) to prepare the meal and another hour to clean up the huge amount of dishes and pans I used, so I won't be doing this often, despite the compliments. Mostly the recipes were simple, it was just co-ordinating timing and so on that was tough. The food was good, although a bit salty. The Orange Chicken was a bit of a disappointment (only to me) because I didn't like it nearly as well as I do restaurant Orange Chicken. I might have to look for a different recipe and try again. Anyway, a fun cooking and eating evening!

Roast beef and turkey sandwiches, potato chips and cottage cheese. Had a big noon day meal, fried chicken, mashed potatoes, cream gravy, corn, green beans, homemade rolls, sliced peaches and cinnamon rolls. Iced tea to drink. We had seven to eat at noon and there are four of us this evening. Sue

It's 8 degrees here and breezy and we are on the verge of another storm. You all know how I feel about that so I won't say anything else! ;) Teresa I hope you and your DD don't get sick! Lots of colds and stomach flu around here. I have a roast in the crock, DH has to go to work at 5:30ish so I will have to run supper out to him. I am thinking to make it easier it will be hot beef sandwiches. Yummmmmm. Hope his is still warm when I get it out there! LOL

Sloppy joes that I shouldn't be eating. I put the can of tomato paste in, then realized that I had accidentally bought tomato paste with roasted garlic in it!Grrrr! So I took my Benedryl. Making home made french fries to go with it. That's going to be it.

I've been doing a little more cooking lately, since it is kinda Fallish. Tonight I made the Liptons Onion Soup Meatloaf. My, that is so good. Also cooked some frozen snap peas and baby, no, make that infant, carrots. I've never seen such tiny carrots, and they sere so good!

I have one of those Mini Apple Dumplings waiting on me too, when I get off of here.

Tuna casserole. Cool all day and windy. I wanted the oven on.

Thursday is Emi's day to cook dinner. She made chili dogs. This was something new for her and they came out pretty good!
