What's for dinner 9/28 (Tuesday)

I'm making Ritzy Chicken Casserole.DDIL has been ordering it for a month now but it just wasn't on the menu for one reason or another.She will be surprised.Will probably have Rice of some kind and green beans to go along with it.

What are you having?

Leftover meatloaf for hubby, and I'm having a breaded pork chop. His request, and my favourite.

With it I'm making Patti's Crashed Potatoes (flattened potatoes and roasted), broccoli and I have 2 baby apple pies for dessert.

Oh that's not fair to make you wait. Here it is!! Spaghetti alla Puttanesca 1/4 cup olive oil 4 large garlic cloves, finely chopped 28-oz can whole tomatoes 1/2 cup kalamata, pitted and halved 3 anchovy fillets, chopped (I squeeze in some paste) 1 1/2 tbsp capers, rinsed and drained 1 tsp oregano 1/2 tsp crushed red pepper flaes 3/4 lb spaghetti 2 tbsp chopped parsley for garnish Heat oil in large skillet over medium heat. Add garlic and saute until fragrent, 1 minute. Add tomatoes, olives, anchovies, capers, oregano and red pepper flakes. Simmer over medium-low heat until thickened, breaking up tomatoes with wooden spoon, 15 minutes. Meanwhile cook pasta, drain and add to sauce. Combine until coated. Serve topped with parsley. I had some feta cheese that needed to be used up and I put chunks in it at the table. It was an excellent addition!

This is the Corn Casserole that I make. I cut the recipe in half for the 2 of us and there are still leftovers, the full recipe makes a 9x13 size. Corn Casserole (Jude, a member of KT, who hasn't posted in a while) 1/4 cup sugar 3 tbsp flour 2 tsp baking powder 2 tsp salt 6 eggs 2 cups cream or half and half 1/2 cup butter, melted (use butter, not margarine) 6 cups frozen corn, thawed (it must be thawed) Combine dry ingredients. Beat eggs with a fork in a large bowl. Stir in cream and melted butter. Gradually add dry ingredients, stirring until smooth. Stir in corn. Pour into lightly greased 9x13" baking dish and bake at 350 oven 45 minutes or so until deep golden brown and the mixture is set. Let stand 5 minutes before serving.

Glenda, getting 28 people together for lunch isn't the easiest thing in the world. Know you have things under control, though. Enjoy it!!! Sue, oh yum! Homemade applesauce is so delicious. Much "creamier" than store-bought. Shirley, seems like the whole midwest is hot, hot, hot. Saw on the news that some states closed schools without air conditioning and others were handing out water and popscicles. Fargo, ND has been hotter than Ocala for 3 or 4 days now. Weird weather. If I ate one of my daughter's favorite meals from her childhood, I'd be eating fish sticks and pickled beets. LOL! Jamie, thanks for the information. I don't take any prescriptions except an antibiotic and I filled a prescription for a pain med but haven't had to use it. It is good to "see" you here again. Hope you are doing well and have some happiness in your life. You've been through so much. Georgysmom, I'm glad you had a good birthday, but that sure was a long golf game. Salad sounds good and fast, too. Phyllis, what a good idea. I have roast pork and rice in the freezer. Maybe I'll make that for Harry one night. (Just wrote it on my menu list so I'll remember.) Jasdip, that would sound good if I liked citrus in my meat but I'm just not a fan. Actually, Boost is very good (the rich chocolate, anyway). Ensure tastes like condensed milk (at least the vanilla does). Raven, I wondered how you got out of cooking :0 I like LJS's most of the time. Every once in a while if they get too busy, it isn't good at all.

Patti - I'm drinking mostly green juices and some fruit juices. My juice today had kale, cucumber, spinach, parsley, apple, lemon and ginger. It actually tasted really nice, lightly sweet and energizing. I have one for lunch with beets, orange juice, apple juice and kale. I'm doing it for both health and weight loss reasons. I recently watched the documentary "Fat, Sick and Nearly Dead" and it was very inspiring. I won't lie - I felt awful yesterday but that's normal. They call it detoxing because your body stops focusing on digestion and works on healing/cleaning so it's rough for a couple of days. But, I'm happy to report that I woke up this morning full of energy and I feel better than I've felt in years so hopefully only good things are ahead. :) I will keep you updated on the results I see!

Some day I am going to try that....its the Ritz crackers and chicken and what else? I forgot but I remember it sounds good.

Busy day here and I think we will call out for burgers.

We are having leftover pasta .....My husband would eat pasta every day of the week and for every month.......so when I make pasta, I always make enough for leftovers.....He loves it enough he doesn't care if it is leftover.

Pancakes and eggs. The blueberry pancake batter was leftover from the weekend, so figured I'd better use it asap. Hated to throw it all away. Tasted good, but I have a feeling I'll be hungry again later tonight.

We're having sausage gravy over biscuits and I made Joan FL's pumpkin bars so Harry gets a treat tonight!

Jasdip, if you mean this Patti for the crashed potatoes I don't remember them. Sigh! Is it a different Patti or am I having another senior moment?

I think pasta is like a lot of other things--better warmed over the next day. I like it a lot--Harry, not as much.

Wish I had some more of that red salmon from the NE, but we only get it fresh for about a week out of the year. I bought a lot and froze it, but we like it so much it's gone.

Made vegetable beef soup. It's a huge pot with alot to freeze.

Went all out last night... I've never done Chinese, except for an occasional stir fry, and I had a new cookbook :-)

I made:

Orange Chicken
Shrimp in Lobster Sauce
Kung Po Pork

Served with Rice and some sort of oriental rice noodles, along with (purchased) eggrolls and fortune cookies.

Emi and her boyfriend joined Gary and I for dinner and I received soooo many compliments. It took about 2 1/2 hours (of solid kitchen work by ME) to prepare the meal and another hour to clean up the huge amount of dishes and pans I used, so I won't be doing this often, despite the compliments. Mostly the recipes were simple, it was just co-ordinating timing and so on that was tough. The food was good, although a bit salty. The Orange Chicken was a bit of a disappointment (only to me) because I didn't like it nearly as well as I do restaurant Orange Chicken. I might have to look for a different recipe and try again.

Anyway, a fun cooking and eating evening!

Jasdip, there's a reason! The last few weeks, I'm working a 4 am to 1 pm shift (eastern)... so that's shortly after I get up in the morning. I usually don't come online later in the afternoon and it's early to bed around here :-)
