The fresh tomatoes give the otherwise white creamy sauce a slight rosy colour and texture too. Leftovers are great for lunches.

Farfalle in Creamy Alfredo Sauce with Tomato and Pancetta

(out of our local paper)

Farfalle (bow tie) pasta

45 ml (3 tablespoons) olive oil

1 small onion, diced

1 garlic clove, minced

2 tomatoes, diced

60 ml (1/4 cup), plus a 15 ml (1 tablespoon) unsalted butter

Half of a 125-gram package pancetta slices, diced

250 ml (1 cup) whipping cream

2 ml (1/2 teaspoon) salt

Freshly cracked pepper

250 ml (1 cup) freshly grated Parmesan cheese

45 ml (3 tablespoons) parsley, finely chopped

1. In a large pot, boil water for the pasta. Add salt and cook.

2. In a frying pan, heat the olive oil. Add the onion and cook until soft. Add the garlic and mix.

3. Add the tomatoes and butter and stir and cook for about five minutes. Add the pancetta. Pour in the cream, salt and pepper and the cheese. Stir until the sauce is blended on medium low heat.

4. Just before serving, add the parsley and mix. Stir in the sauce into the drained pasta and serve.
