Supper Time Is Over!

I fell asleep after I had my supper and thought sure someone would have posted about it already. Mine wasn't much, bologna sandwich on a hot dog bun with yellow mustard, sweet cherries, a carrot and celery stick and a can of lemon lime drink. What was your gourmet meal?

Mine was an Asian Noodle pack by Knorr I also cooked a 1/2 pint frozen Teriyaki noodle from the Dollar tree and threw it on top. Saved half the noodles for tomorrow

Oh, DD wanted to meet us at a favorite local place. It's one of those neighborhood bars that has really good food. We started with their pretzel bites with the cheese/beer sauce. Then she had: veggie burger and salad with lime caesar dressing. DH had some sort of burger (I forget which one he ordered), I had their "American"--which has cheddar, french fried onions and their 'special sauce'--both came with their homemade potato chips. We all only ate half our dinners (the burgers are rather large), and will enjoy the rerun tomorrow night.

Years ago in college my brother tried to make beer bread by following our mother's recipe. However the recipe had a couple of specific ingredients and steps that he felt "couldn't possible make a difference". One was that you should use a can of warm beer, but he only ever bought bottle beer so he used one of those. It also said the ingredients should be mixed in a glass bowl with a wooden spoon, but his college apartment kitchen only had a metal mixing bowl and a sturdy plastic spoon. Well, some part of those specifications was clearly necessary or he did something else wrong, because the bread rose not-at-all. It was thick and dense and a little chewy, about the consistency of brownies. You might think beer-flavored "brownies" might be a hit with male college students, but no, not so much.

We normally have a quesadilla on Saturday night and popcorn later, but instead we attended our annual high school Alumni Banquet (just over 200 in attendance). It always includes what I call "old people food" and was catered by a local food market. There were 2 attendees from the 1936 80-year class. Our former principle attended- 97-years old, and science teacher - 88 (both live easy walking distance from the school). Menu: Chicken Fried Steak, Meat Loaf, Smoked Pork Mashed Potatoes, Hash Brown Casserole, Rice Pilaf Green Beans, Corn Fruit Salad, 7-Layer Salad Rolls & Butter ~~~~~~~~~~~~~~~~~~~~~ We wait for Colorado peaches in the summer, which are sold in a hotel parking lot once a week during peach season. Otherwise I use frozen and freeze-dried peaches, and an occasional can of spiced sliced peaches.

Salmon patties, made with canned salmon, a little minced onion and green pepper, and dusted with corn meal before browning in ghee....we like them a bit crunchy on the edges. Made a quinoa salad this morning with all kinds of fresh, raw veggies including a bit of seeded jalapeno for some nice heat. It's been marinating in a light vinaigrette all day. I'm going to slice a juicy tomato from the garden just before we eat and serve everything with a bowl of tzatziki with fresh dill on the side.

Seagrass, here is the 7 can soup recipe: 1 can each of Mexican corn pinto beans black beans Rotel kidney beans diced tomatoes (I use petite) chili (they say without beans though I can't see what difference that would make. I use a local chili called Skyline but any canned chili will do) Mix it all together and simmer about 20 minutes. The chilis in the Rotel give it a little zip. At least it's a zip for me who eats most everything plain. :) I really liked having it over rice. You don't have to do that but it was really good that way.

I was thinking of posting it, then I forgot!

I made a slow-cooked pork roast with boiled potatoes, and corn.
I was going to make scalloped potatoes, but it's going to be a sudden drop in temperature on Thursday, so I might make them then.

The leftover pork will be turned into pulled-pork sandwiches.
