It's a soup night....

Yesterday was windy and 90 degrees...Today it was 61...and we got some rain....came down pretty heavy but not for a very long time...

And it smelled sooooo good. so fresh.

So I'm making a pot of creamy Hamburger soup. yummm

I eat soup, Summer, Winter, Spring or Fall. Love it.

Is that the Weight Watchers Hamburger Soup? My Mom use to make it all the time.

I wanted to make Chicken Gumbo this weekend for company, but he left early because of Gustov. He was worrying about his family.

It's pretty much beer cheese soup with broccoli. I put2 T butter in my Lec Dutch oven and add 1T chopped onion and 1 T chopped celery and about 1 T chopped carrot...about could be more not less. When veggies are soft add 1T flour...stir and cook a minute or so...add 2 cups or 1 can chicken broth ( 2 cups of home made is better!) and simmer for about 10 minutes....during this time add about 1 1/2 cups chopped cooked (or frozen) broccoli...cook until the broccoli is done, Add a can of beer and bring to a simmer... Add 8 oz of the sharpest chedder you can find...grated....and 1/4 cup grated parmesan....heat until cheese melts and serve. Do not boil! or the cheese will turn into clods! Linda C

Here's what I have in my file: COLD CORAL SOUP 3 large cucumbers 1 small onion, sliced 1 cup tomato juice 1 Tbs. tomato paste (don't omit, Linda LOL) 1 cup chicken broth 1 quart sour cream 1/4 cup dry fino sherry 12 small fresh basil leaves for garnish Peel the cucumbers and slice in half lengthwise. Spoon out and discard the seeds. Cut into chunks and place the cucumbers in a blender or food processor. Add the onion, tomato juice, and tomato paste, and process until pureed. Pour the mixture into a large bowl, add the broth, then whisk in the sour cream and sherry, beating until well incorporated. Cover and refrigerate for 3 to 4 hours. Lade into chilled soup bowl and float 2 or 3 basil leaves in each. Can't remember where that recipe came from nor where it could be....but it's good and beautiful!

There's a first step I follow with split peas and dried beans to speed cooking and reduce intestinal flatulence. Put the legumes into a pot of water with at least 3X the volume of water as the volume of dry beans/peas. Bring to boil. Turn off heat, cover, let sit one hour. Pour off water, then use the almost fully cooked legumes to prepare whatever recipe you're making. Soup can be done in as little as one more hour. You can saute onions and other veggies in another pot while the peas sit. Or, take out the peas when done, use the soup pot to saute the veggies, then add back the peas and whatever liquid and other things you use.

The onion soup I referenced above suggested using a combination of yellow and red onions, I get it is more visually appealing. The same could probably be done in the Martha Stewart recipe. ETA: I was just thinking about the caramelization of the onions and then looked at the recipe on the website and it confirmed for me what my problem with that soup would be. That muddy brown color to me in a cream soup is not appealing. A sprinkling of parsley would help some, but I am a visual eater and that color would be off-putting to me, no matter how good it tastes. Just something to think about if any in your group are similar.

I love soups of every kind. Had borscht for the first time when DS and I went out to Dickinson ND for DD#1's wedding. It was so good. There is a German settlement there and borscht is a staple on cafe menus. DS had some other kind of soup, but I don't remember what it was called. It had lots of think dumpling-noodles. He loved it, it was good but I preferred my borscht. Should have bought a quart of it to take home, but it was so hot and the drive home was over 8 hours.

I made a tomato salad for the family picnic on Monday...used the leftover to make Gazpacho for supper last night. All I did was add some garlic and green pepper, then into the food processor.

I got the recipe from someone on here...

I'm not sure how I do it, follows the recipe anymore...lol

Creamy Hamburger Soup

two cans cream of mushroom soup
three can of water.
1 lb of ground beef, browned
four med potatoes cut into small chunks
and boiled until almost done.(not mushy)
1 can corn

This is the basic...

You can add or take away to make it your own.

I added shredded cheddar cheese.
and also I added an extra can of soup and another can of water. (We need leftover for lunch the next day..."S")

some of my favorite are...

Quick and Easy potato soup

30oz bag frozen hash browns
( the little square kind)
6 cups water
diced onions
Bring to boil, reduce heat
add 2 cans of cream of celery soup.
Stir in 4 oz velvetta cheese, cubed
Stir until melted
Add one cup of sour cream
Salt and pepper

Another Quick and Easy
Chicken Tortilla Soup

2 cans chicken
2 cans mild Rotel tomatoes and peppers
2 cans beans(white,pinto or black or mixed)
2 cans Cream of Mushroom soup
2 cans chicken broth or water with chicken bouillon
2 cans green chilies
Heat together

Serve with Crumbled tortilla chips and shredded cheddar
cheese

CHEESY HAN AND CORN CHOWDER

1 T butter
1/2 cup chopped onion
1/2 cup green onion chopped
2 T flour heaping
2 cups chicken broth
2 cups cubed potatoes semi cooked
1/2 t sage leaves crushed
2 cups milk
8oz American cheese
3/4 cup cubed ham
10 oz pkg frozen corn

again I use water and chicken bouillon
and I use a can of corn drained.

BAKED POTATOE SOUP

12 slices bacon
2/3 cup margarine
2/3 cup flour
7 cups milk
4 large baked potatoes,peeled and cubed
4 green onion,chopped
1 1/4 cups shredded Cheddar cheese
1 cup sour cream
salt and pepper

Cook bacon, crumble and set aside
melt margarie over medium (in stock pot).Wisk in flour until smooth Gradually stir in milk, whisking constantly until thickened. Stir in potatoes and onions. Bring to a stirring. reduce heat and simmer 10 mins. Mix in bacon, cheese, sour cream salt and pepper
continue cooking , stirring frequently until cheese is melted

OLIVE GARDEN ZUPA TOSCANNA

1 1/2 cups spicey sausaage links
2 medium potatoes, cut in half lengthwise then cut in 1/4 inch slices.

3/4 cup onions,diced

6 slices of bacon

1 1 t. minced garlic

2 cups kale leaves.cut in half then sliced

2 T. chicken base

1 quart water

1/3 cup heavy whiping cream

cook sausage links cut in half lengthwise then cut into 1@ inch slices.
Place onnions and bacon in a large sauchpan and cook over med. heat until onion are almost clear. remove bacon and crumble. Add garlic to the onions and cook and additional 1 minute. Add chicken base, water and potatoes. simmer 15 mins. Add bacon, sausage, kale and cream. simmer 4 mins. and serve.

Dirthfingernails, betcha its a safe bet to say your DS had Knephla soup? I love it!!!! I rarely make it cause DH hates it! LOL

We are having Haley's Taco Soup tonight Patti. It was barely 50 yesterday and so darn cold. This morning was 40 so good soup weather.

We have so many tomatoes I had to make soup the other day...Here it is close to 90 and we're eating tomatoe soup, but it sure tasted good....

Gosh there must be a thousand ways of making it DIrtyfingernails! The dumplings are usually just a STIFF dough of flour and water and sometimes eggs. Mix and roll into a "tube or roll".
I cook chicken wings in water, with carrots,onions and celery, you don't need much meat in Knephla soup, remove and debone, then add chicken base. Bring to a boil and snip peices off the roll of dough into the boiling broth. Cook til done I dunno 15 minutes? Let cool down and pour in whipping cream or half and half,reheat slowly.

Here I have bought frozen Knephla dough at the store, in the freezer section and its somewhat quicker....but look online there are a gazillion recipes.

Pattico....A thousand thanks for all to soup recipes. I love soup. My DD gave me the following recipe.

POTATO SOUP
Saute 1 small diced onion
Add: abt 1 lb shredded frozen potatoes
Add 4 cups chicken broth (bouillon mixed with water can be used)
Simmer for abt 10 minutes.
Mix one 2.5 oz envelope of country grave mix, with 1/2 cup water. Add to soup.

I have added to this recipe: A small can or abt 1 cup of whole kernel corn and some imitation crab along with some frozen peas.
