Well, Pam, I'm coming to your house for dinner tonight! lol
I had a frozen pasta, cheese and broccoli dinner to which I added multicolored grape tomatoes before microwaving. It was really yummy, especially the tomatoes. I added coarsely ground salt and pepper.

I'll be thinking of you all tomorrow. Our T-day is going to be on Friday this year, because of various travel schedules, not to mention the several people who wanted to have dinner at their in-laws AND wanted to have dinner at DD's. I'm actually pleased ~~ for once, I won't be rushing home from work to start the prep for all the veggie dishes. Five vegs this year: cream-cheese/chili corn, harvard beets, gingered carrots & pears, snap peas (a change from the spinach squares), and a broccoli/cauliflower dish that has a nutmeg/cheddar sauce. Tried this last year and it was a success. 1 big bag of baby carrots, thoroughly rinsed, and the fat ones cut in half lengthwise. Dump in big pot of lightly salted boiling water, let boil for 10 minutes. While the carrots are cooking, open and drain a can of sliced pears -- this year, I'll have to slice halves, no pre-sliced in stock at the store. Put about ½ cup of pear jelly [or pear jam or apple jelly] in a small bowl and nuke just until warm and mostly melted. Stir ½ teaspoon ground ginger OR 1 teaspoon finely grated fresh ginger into the melted jelly. Taste jelly and add more ginger if needed (you should be able to clearly taste the ginger). Depending on how many carrots, you may need to double the gingered jelly. Drain the carrots and dump into a large bowl. Pour the gingered jelly over and stir until all carrots are coated. Fold in the pear slices. For the dinner, it does very well on a warming tray, not going mushy. Have a good day, and may all your Thanksgiving dishes be wonderful.

Here's a taco salad from January 21 - and so it is one day past your date of Jan 20. I photographed the salad separately from the table, but they are both from Jan 21. We had an unusually warm January and would be happier if we had more rain. I eat most of my lunches at this table in the pergola and watch the hummingbirds. We have Allen's hummingbirds that stay here all year and try to drive off all other hummers, but I did get to see an Anna's one day at lunch. Annas are more common than Allen's, but the Allen's are just what we happen to have here. I've started collecting trays to carry food from the kitchen to the pergola, and I now have three trays - none of which match, and so I am planning to go back to Pier One and get a fourth tray, to match one that I already have. I used to use chopping boards for carrying food outside, but the trays are much more practical. Last month I bought some new outdoor placemats when we were in Palm Springs, and I have been enjoying those. I also bought matching coasters, and will photograph those when I have some interesting food to take a picture of. Normally I leave my camera at work when I go home for lunch. Strange to hear that it is cold in Texas - I had always thought of April as a summer month and often too hot for eating outside, but then I was in Austin or Houston, which are pretty far south from Dallas. I think that Ellendi likes to make her own dressings...I know that I do. The flavor is worth it for the five or ten minutes it takes to whip up a favorite dressing. We're leaving town today for a few days so I didn't want to do much cooking last night. Or eating. I always eat light before and during a long drive. Anyway, we had kabobs with chicken, zucchini, mushrooms, onions, with some brown rice.

Kath, there is also a VERSALES in Indiana not too far across the border from you. If Lauren likes tomato basil soup you might try the V-8 brand from the grocery. It comes in a box and is thick and delicious. I also use it for sauce when I make porcupines. Good stuff!! Everybody's dinner sounds so good! How did your peppers turn out, Ron? They sounded really good to me since I put green peppers in my baked beans anyway. Nodakgal, I haven't mashed potatoes since I discovered those Country Crocks. I sure couldn't tell they weren't homemade. I'll have to pull this post up on days I just don't know what the heck to make. We like breakfast for dinner, too. But I'll just let Harry scroll down and pick a meal :-)

I went out for lunch today with a group called the lunch bunch and we went to med grill and awesome food it was, we all so enjoyed the meals we had plus the chatting that went on.

I had the steak sandwich, delicious and done just like I like it plus mushrooms all over and onions and then two slices garlic bread with aioli on it, yummy and fries, ice tea to drink.

Others had thai shrimp, salads, halibut fish, pork chop, etc. and they all looked great meals and everyone enjoyed them despite too much food there was.

So for supper full from lunch out, so just had bowl of porridge.

We had chicken salad with toasted almonds and mandrin oranges. Rolled it up in flour tortillas with some Romaine.

Say, where has Mary of the shells gone? She'd fix great sounding meals for her husband, but wouldn't eat anything but "shells ", it seemed.

Haven't seen her post in a long time.

We had Emi and Josh over for Ruben sandwiches and salad. Then Gary and I had a piece of Apple Crisp with Cinnamon ice cream right before we went to bed :-)

It's been a busy week for us & I worked late Tues, Wed & Thurs. DH cooked dinner last night - crab ravioli with butternut squash sauce. I need to find time this weekend to put something in the crock pot or do a pressure cooker meal that we can warm up. Next week is month end in the world of billing/accounting, so it's always a super busy time for me. It's also my company's year end, so we'll be really under pressure.

Dry rub, grilled pork chops and baked potato. No veggies! Oops. Let's just say the cupboard is getting mighty slim since it's the end of the month is approching. I only shop once a month and it's time! I used all of the veggies the night before in the soup I made. Which will be dinner again tonight. Then the grocery store, tomorrow morning.
