Today was ZOE'S for a greek quesadilla filled with spinach, feta, scallions and served with their greek slaw

Tonite will be peaches on cereal

Make beef stroganoff with Big chunks of pot roast. I'll dip the meat in egg & brown it off first. Then make the gravy. :0) YUM!

Stuffed bell pepper with the hamburger baked beans recipe. It is not looking good. Will let you know. Also, having fresh field peas and tomatoes.

Alex and I went to the second (and thankfully last) day of his orientation at UK. We stopped by a cute little cafe in Versailles (that's pronounced VER-SALES here in KY-lol) on the way home. We were both starving as we didn't eat lunch today. I had a hot ham and cheese sandwich with tortilla soup. Alex had the catfish basket and we shared a chocolate mousse pie. Took a grilled cheese sandwich and fries home for Lauren (that's what she wanted). I really like this little cafe, just don't care for their music, stuff like Frank Sinatra.

When I called Lauren to ask what she wanted, the first thing she said was Tomato Basil soup, which is funny because that's what I ordered. I thought one of the soups of the day was that, but the waitress meant one of the quiches of the day was tomato basil, not soup and I didn't hear right.

BLT's for us tonight.

I'm trying baked fish like I saw Sandra Lee make, season the fish, brush with olive oil, pat on bread crumbs and bake in a 425* oven. I'm going to grate some lemon zest in the bread crumbs. Then squeeze the lemon on my baked fish. Hubs doesn't like his with lemon jc. I thawed out a couple twice baked potatoes I made a week or so ago and froze, and will probably slice a tomato for our vegetable. Dottie

Hubby wanted breakfast sausage with pancakes. OK! We like breakfast for dinner sometimes.

I'm going to marinate my pork roast all nite and pop it in the slow cooker for tomorrow's dinner.

Little Chicken

A KTer posted this recipe awhile back and I saved it, but didn't jot down the name of the poster. (Sorry.) I've made it several times and am having it again tonight.

I have sweet potatoes baking and will have some green peas also.

I gave the recipe to a friend who passed it on to a friend as "Sue's Chicken Nuggets." I guess that's how recipe names get changed.

Shrimp & sausage jambalaya, peas. Bought a huge cantaloupe for $2. It was sooo sweet. Might go back for another. Also got some peaches, they were so-so. Picked a cuke off the plants, yum, with just salt and pepper.

I just finished making potato salad. We're having fresh iced tea and ham barbecues, too. Or is it barbeques? I know...not too original but I was hungry for this kind of food.

The other half wants me to cook a roast tomorrow. Ugh. Gotta have that red meat, mashed potatoes and gravy.

Sandysays, really? Didn't know there was another one in the U.S., thought it was just a Kentucky thing.

We had Oven Baked Ham steak, Country Crock real mashed potatoes you just nuke to warm, peas and I made corn muffins from scratch instead of a box. They were ok,nice and soft, but didn't seem to me they had the "corn" taste. I am wondering if we are too used to the boxed mix. lol The recipe got great reviews on Allrecipes.com.

Kath, there is also a VERSALES in Indiana not too far across the border from you. If Lauren likes tomato basil soup you might try the V-8 brand from the grocery. It comes in a box and is thick and delicious. I also use it for sauce when I make porcupines. Good stuff!!

Everybody's dinner sounds so good! How did your peppers turn out, Ron? They sounded really good to me since I put green peppers in my baked beans anyway.

Nodakgal, I haven't mashed potatoes since I discovered those Country Crocks. I sure couldn't tell they weren't homemade.

I'll have to pull this post up on days I just don't know what the heck to make. We like breakfast for dinner, too. But I'll just let Harry scroll down and pick a meal :-)

I was so busy lusting after everyone's dinner I forgot to tell you I ended up stuffing the zucchini after all. Well, score another one for me--got another rave review from Harry.

P.S. Just to qualify that, I have to tell you Harry will eat just about anything--correction, Harry WILL eat anything. I'm a lucky cook!

Had a delicious dinner at Golden Corral tonight couldn't begin to cook as good at home!!

Your Harry and my sweetie should meet. I call mine "Mikey" cause he'll eat anything I make as well.
His only two absolutes hates are mushrooms and eggs. Anything else is fair game.
He's been quite the guinea-pig lately as I've been trying new recipes on him. His mouth has been dancing with some, and says that I've really been cooking some great ones.
Yes we are lucky. Thing is, he was quite the picky kid. Ate a lot of pb sandwiches, if he didn't like what was being served.

I got DS one of those Ready Set Go red counter cookers tht does everything he makes some delicious meals on it I know this is off topic but I thought I'd mention it.

There's even a North Versailles here, too.
