What did you prepare tonight?

I copied Panera's Asian Chicken salad. It's really a nothing salad that has become DH's favorite lately.

It's lettuce, chicken, and crispy noodles. It's supposed to have sesame seeds but this was lacking last time we were there. They use an Oriental dressing and this is where things got tricky.

Side story for the dressing. So, I googled Asian dressing and pick one that sounded good. You would think that after cooking all these years I would realize this recipe makes a vat of dressing! But the kicker was, it was too salty. I had my DD test it and we both agreed. Ugh.
This time I googled sesame oil dressing and came up with a better match.

DH really enjoyed it. I used a Costco chicken, so this was a very simple dinner.

That chicken salad sounds wonderful. I usually have whole chickens in the freezer, stocking up when they are about half price (I aim for .69-.79/lb). I can put one on my graniteware verticle roaster with a little garlic and half a lemon inside (garlic first then the lemon holds it in) and it cooks itself, no attention. So I will be trying your salad, we've enjoyed the few things we've had from Panera.

I feel like a broken record this spring, it's clams again tonight. A friend of ours is in my kitchen right now breading them, giving me a break. This week should be the last set of tides until Fall, it's starting to feel like we've had our share of clams this year.

I went back to my roots. I fixed dried butter beans with the ham bone from Christmas(its been in the freezer) turnip greens fried taters and a big pone of cornbread oh & we had sweet tea to drink,,,

Punk, these talented gals here have taught me so much when it comes to creating tablescapes. The best thing I've learned is to shop Goodwill and places like Marshalls for bargains.That, and almost anything can be the start of a fun table centerpiece! I hardly ever buy a full set of dishes, though. Salad or dinner plates are easier to use . . . and store! DD: I wish you lived closer, too! I wish you all did, as it would be such fun to get together for shopping excursions and for some meals, too! Betty: More pinecone plates? Oooooh . . . that sounds tempting, but I think I'm at my limit with those. Thanks so much, though. Your kind offer means a lot! And yes, please do keep an eye out for more pieces of that other set. I'd love to get some of those dishes. As for my furkids, yes they do seem to like to pose for pics. They're both sweeties and I love them. Despite the bad rap dobies get, they are the sweetest, cuddly dogs. Ronin would like nothing better than to sit on our laps and sleep in our beds. We don't go that far, though! We dobie owners call them "Velcro dogs" because they always want to stay close enough to be touching you. Lynn

Maggie, I don't use a recipe so looked around on the Internet and this one was the closest to how I make it. I deveined the raw shrimp and cut them in half lengthwise so they wouldn't stick up too high. I sauteed them in the butter after the veal was done but didn't add the green onions or Worcestershire sauce. The only other change I made was using fresh asparagus, which I steamed in the microwave and then plunged into ice water the day before, then refrigerated in a covered container overnight. I only cook the veal about 2 or 3 minutes per side over medium-high heat, then remove the pan for it to cool down a bit before adding the seafood. VEAL OSCAR 1 1/2 lbs. veal cutlets, cut into serving-size pieces 1/3 c. all-purpose flour 1/8 tsp. salt 1/8 tsp. pepper 1/8 tsp. garlic powder 1/3 c. butter, melted 1 c. fresh lump crab meat 1/2 c. chopped green onions 2 tsp. Worcestershire sauce 2 (10 oz.) pkgs. frozen asparagus spears, cooked (optional) Bearnaise Sauce Chopped fresh parsley Flatten cutlets to 1/4 inch thickness, if necessary. Combine flour and seasonings; dredge cutlets in flour mixture. Cook veal in melted butter in a large skillet until browned on both sides. Remove meat, and keep warm, reserving drippings in skillet. Add crab meat, green onions, and Worcestershire sauce to drippings in skillet; cook over medium heat, stirring occasionally, until mixture is thoroughly heated. Arrange asparagus over each piece of veal, if desired. Spoon crab meat mixture evenly over asparagus; top with Bearnaise Sauce. Sprinkle with parsley. Yield: 6 to 8 servings

I hope your dinner party went well. May I tell you about my experience last night? Originally, the plan was for the dinner group to split and dine at two houses. A week ago, the husband of the other hostess passed away unexpectedly. I suggested postponing the meal but the others wanted to proceed, due to schedules and what not, so I said fine, everyone (except the widow) should come to my house. It would be 11 people now, and everyone was sticking with their original food assignment and I would do all the meat. So as not to make the only single person feel like odd man out, I was putting 7 people, including my husband, in the DR and I would stay in the kitchen with the single and one couple. At noon, I receive an email that one couple made a mistake and they weren't able to attend. Oooookay. Now I have the awkward amount of 9 guests (my DR table seats 8) and less of the potato dish, but someone else is also bringing that dish so I'm not going to worry about it since we usually have too much food. I decide to keep 5 people in the DR so I clear the DR table, remove a leaf so they don't look so lost in there, reset the table, and keep the small table set for 4. At 5:45, I get a phone call from another couple that they thought it was next week and they aren't even in town. Ummm, okay. But she was the other potato dish. The guests are arriving at 6:30 and both potato people canceled. Luckily, I had a bag of potatoes and Gruyere cheese so I threw together a scalloped potato dish. Ai-yi-yi. I put the leaf back in the table and reset it for 7. After that it went smoothly. I knew we should reschedule but no, they all wanted to proceed. Even though it turns out 4 of them didn't even have the right date set aside.

I wonder about the geographical differences in dinner parties. I grew up on a farm in central Texas, and the only formal dinner parties we had were for family gatherings, at Thanksgiving and Christmas, when my mother would use all of her crystal, china, and sterling silverware - all of which I think she received as wedding gifts. She also had a collection of linen tablecloths, but she stopped using those after a few years, as they were more difficult to clean, or perhaps were more easily stained. As a child, I loved formality, especially since it allowed me to use different forks and spoons for different courses. I have Irish linen tablecloths with matching napkins now that I bought for cheap on eBay and have not yet used, but I hope to use them some day. I do have tables for them in Los Angeles, but not in Cathedral City, as I do not have a formal dining room there, and the only large dining table I have in CC is an outdoor table. Definitely dining in CC is much more informal than it could be in L.A., but I have found that many people, including friends, find formal dining to be uncomfortable, although that is not the intention at all. I am most comfortable with formal dining, and that is what I prefer, but I find that most people today are not. I guess I just like the ritual aspect of it. As a child, I liked the structure and rules of it.

I just had some leftover pasta and then some Greek salad. So kind of a clean out the frig meal.

Laura, I love butter beans with a ham bone. Or navy beans, or even pinto beans. When I was a kid, we had them spooned over a slice of buttered bread.

I have been gone all day with the girls. Supper was chicken Alfredo with cheesy garlic bread. It has been a very hot day. We have more sweet potato plants to plant.

Delivery pizza. Not all that great. Applesauce, which I love.
Orchid, I love lima beans cooked down to a thick stew, drenched in butter and green onions. I have to be careful with beans though because of gout.

Salads again tonight. This time, hubs stopped at Claim Jumper and picked up two of their California Citrus Salads.

Ellendi, I don't know where you live, but around here, you can buy bottles of the Panera salad dressings in certain grocery stores -- Safeway, Randall's, Tom Thumb, and Vons.

I think that Ellendi likes to make her own dressings...I know that I do. The flavor is worth it for the five or ten minutes it takes to whip up a favorite dressing.

We're leaving town today for a few days so I didn't want to do much cooking last night. Or eating. I always eat light before and during a long drive. Anyway, we had kabobs with chicken, zucchini, mushrooms, onions, with some brown rice.

Lindsey, I am in a NYC suburb. So far, i have not seen the Panera dressing but then I haven't been looking! Thanks for the tip.
Rhizo is right though, the homemade dressings are worth it. Especially if the rest of the dinner is only lettuce. But, my DH is so easy and I'm sure he would enjoy the Panera,s. Have a nice trip, Rhizo!

We had pancakes and sausage pattys.Jim is the pancake maker and we had the BEST Mango Syrup to go with it.While my son was here for the wedding,he made his homemade Mango Syrup for me. I love anything with mangos in it. I used the bottle that he made,so he just sent me another bottle this week. He says he will send me the recipe.

I made the red chili with lots of veggies, red bell pepper, jalapenos, onion, fresh garlic, celery......

For desert....ready made granola bars with Greek yogurt...
