What's for dinner Monday?

Tonight I'm making Harry tuna casserole. Dinner in a dish. I'll have a Kellogg's Special K shake. Still not feeling all that great, darn it.

I hope you all had a relaxing three-day weekend. What are you having for dinner tonight?

probably some of the left over giant brisket I made yesterday with rice and gravy. It sure was good.

Sorry to hear you're still not feeling so good, Patti. Maybe tomorrow will be a better day.

DH made some chicken salad from the left over teriyaki chicken I made the other night. That's it for us. Still watching the golf tournament.

Pam, I love quiche and have leftover ham in the freezer. I should make one with ham, and onions, peppers and mushrooms. Hubby won't eat any hot cooked eggs, so it's me and my quiche. The last time I made hamburger rolls I posted a pic :) Cheri I love pot roast. I tend to make mashed potatoes on the side, instead of in the slow cooker. We like them that way better. Alice your dinner sounds great! We eat a fair bit of rice, just love it. Ellendi would you share your quinoa recipe on the Share your Recipe Thread???? We enjoy quinoa. That's the pits you had so much trouble finding the sriracha. Old Fixer, IS there such a thing as too much garlic? LOL Party, I was going to bake some sweet potatoes yesterday, but they are really small, so I mashed them along with white potatoes. We like them mixed. Matti, I've heard that In n Out burgers are good. Enjoy! Rhizo, we just had some homemade apple sauce that I took out of the freezer with a warm oatmeal-carrot muffin! Wow, your dinners all sound so good! I love the chicken in the slow cooker, steak, pasta sauce. Stir-fries are always good, and anything can be used in it. So versatile. Baked salmon and asparagus sounds delicious! I've got asparagus in the frig, that I'll either cook with orzo, or maybe roast it. We love it roasted. The last time we did that I made Angela's roasted asparagus breaded with breadcrumbs and parmesan. Thank you SO much for the best wishes guys. I just read them to him and he's touched. I know things will be good and he'll have a good recovery. This is a top-notch hospital AND it's all done by robot. Not laproscopy but a robot, not a human hand. He think that's very cool. LOL The time wearing the catheter and the recovery time is greatly reduced by choosing this method. And he's home the following morning, vs spending 3 days in the hospital with the traditional surgery.

We just finished watching the first episode of this season's Blacklist and thought I'd check back while setting up for Castle. Shirley, here's the recipe. Easy-peasy and delicious! Pam, you could have been here, as usual I made enough to feed at least 1 more person! Oven Ã¢ÂÂfriedÃ¢ÂÂ chicken Preparation time: 15 minutes Baking time: 20 to 25 minutes 1/3 cup dry unseasoned bread crumbs 2 teaspoons sesame seeds 1 1/2 tablespoons grated Parmesan cheese 1/4 cup fat-free mayonnaise (not salad dressing mayonnaise) 1/4 teaspoon salt 1/8 teaspoon garlic powder 2 dashes cayenne pepper 1/4 teaspoon poultry seasoning 4 (4 ounces each) boneless, skinless chicken breast halves Cooking spray Preheat oven to 425ÃÂ°F. Place bread crumbs, sesame seeds, and Parmesan cheese in a large zip-top bag and shake gently to combine. In a small bowl, whisk together mayonnaise, salt, garlic powder, cayenne pepper, and poultry seasoning. Using a pastry brush, coat both sides of each piece of chicken with the mayonnaise mixture. Place chicken, one piece at a time, into the bread crumb mixture in the zip-top bag, seal, and shake to coat chicken well. Transfer chicken to a foil-lined baking sheet coated with cooking spray. Spray chicken evenly with cooking spray. Bake for 20 to 25 minutes or until juices run clear and chicken is no longer pink in the center. Yield: 4 servings

The weather here today was similar to yours, jasdip. We decided to go to the famous local seasonal 'dive' which opened for the season yesterday... a family business since 1938, I think. It's just a little shack with minimal cooking facilities (bbq sandwiches, hamburgs, hotdogs, fries) where you stand outdoors in line to order. They also have an ice cream side, but it's not open yet. You can do take-out or eat outdoors on picnic tables. It's near a busy intersection so always noisy, but the food is good and super cheap, so it's always busy. Totally tacky and totally fun. You'll see everything from tattooed grandmas on motorcycles to vice presidents in suits all standing in that line together, and today the lines were the longest I've ever seen! I chose a pork sandwich w/ bbq sauce, dill pickles, hot relish on the side (they make their own and it's really good) and fries. Totally happy here. :O)

Today was a cool, overcast day, so scalloped potatoes, pork tenderloin in the oven and a spinach salad with sliced onion, grapes and feta was the menu. We finished the basket of peaches, they are so good. I just love them on corn flakes or with ice cream. So it might be just plain ice cream for dessert with my tea

My friend Bess had those days. When she'd had chemo on Monday, Thursday was always her bad day. (((patti))

BBQ restaurants in my area were packed so IHOP called my name.

Raven, I bet that brisket is great. After going a week without your cooking, I'm surprised your DH didn't eat it all last night!!

Georgysmom, they told me it'd get worse before it got better. Now I believe them. :-) Sweet of your DH to make the chicken salad.

Angus Ribeye steaks, potaotes in foil with onions and green peppers cooked on the grill. Creamed corn (McKenzies brand, frozen which is delish) and for dessert a peach crumble.

I had a hot pork sandwich w/mashed potatoes and gravy, and some steamed corn. Some people call the sandwich a Manhattan.

I cooked up a storm last night for family......cook so seldom, really, so I enjoy it. Now I have left-over potato salad, chicken salsa bake, meatballs in saurkraut, etc. etc. And all I'm really planning on is a BLT!

I think some hamburger steaks in gravy over rice...

Too early just yet...

Just finishing english muffiins on the stove top. I might make some sandwich bread next.

The tuna casserole sounds good... haven't made one of those in years! Feel better soon Patti.

We had a Romaine salad with fried chicken strips on top (the chicken was from a family reunion yesterday and it was so good!). We'll be having BLT's sometime this week because I have a bunch of homegrown tomatoes.

Change of plans..
Hubby went and had the propane refilled..so hamburgers and fries..

He's also frying up some crab wontons for himself. I make them..but don't eat them.. LoL

A little yard work after an early morning shower that we really needed followed by yummy ham and potato soup.

we'd bought 2 packages of ground beef for tacos for dgd's bday party...we only used one, so had to cook the other tonight. made a huge meatloaf...so now my freezer has 3 nice chunks of meatloaf for the next month, or so. had enough leftover from tonight's dinner for sandwiches tomorrow...

Last day of the pool, so we swam for a long time and kids just wanted to get pizza delivered. Fine with me, lots to do before school starts tomorrow.
