Never had a Taco Omelet before

The other day I was at my favorite little breakfast restaurant and they had a special going on a taco omelet. The waitress said you'll love it, I guarantee it. Hey, when this sincere lady guarantees something you gotta take her word for it! And she was right. I did like it.

Normally I'm not much on mixing things for the sake of mixing them. Taco pizza? No. Not really into them. But this was very good. Didn't think about it until I started eating it that I'm supposed to avoid heavily spiced foods for a while but it was very mild. You could doctor it up if you want. That's the kind of options I like. Put the condiments on after, don't force everyone to have to deal with your favorite bottled sauces.

Anyway, I also liked the way they served it. Just the meat and cheese went into the eggs. On the side were tomatoes, olives, onions and lettuce. Salsa and sour cream on the side along with toast and a big plate of hash browns. Put it together how you want.

Excellent breakfast. I hope they have that special often. She said it was the second time they offered it and it sold out the first time.

The only problem I see is they should have served it with refried beens and a pile of hot flour tortillas

To the OP, the pans you linked from Amazon only just help with the shape of the folded omelet. They aren't really "making" the omelet other than helping with the folding part. What about the step after cracking the eggs, which is beating the eggs, and pouring them into the pan? What combination egg-cracker, omelette-pan would be able to beat the eggs? Would there be a teeny egg beater in the machine somewhere? I saw a retrospective of Julia Child where on one of her old black-and-white shows she cranked out omelet after omelet, on a little electric-coil burner, with a cheap aluminum frying pan, in just minutes. Your time saving efforts with some machine or special pan won't be very time saving. I will link a video to Jacques Pepin making an omelet in 2 minutes (though it kills me that he is using a metal fork in a teflon pan). Teresa, here is my recipe for the bean dip that I use when making taco salad, tostados, burritos, or tortas: Texas Bean Dip Ingredients 1-1/3 cup dried pinto (or red) beans (about 2 cups cooked) 1/2 large onion, coarsely chopped 2 tbsp cumin 1 bunch of cilantro, large stems removed, about 2/3 cup chopped 1 can Ro-Tel tomatoes (10 oz.) or similar tomatoes, diced with green chilies, drained, liquid reserved 3-4 Serrano chilies, coarsely chopped 6 tbsp chopped fresh oregano (or 2 tbsp dried oregano) 1 tbsp soup base - vegetable or beef, or 1 tsp salt, to taste Place dried beans in large pot and cover with water to about 3-4 times original depth. Bring to a boil and boil for two minutes, cover, and remove from heat and allow to soak for one hour. Discard the soaking water and rinse and sort the beans. Cover with fresh water, with about two inches above the soaked beans, and bring to a boil. Cover and simmer for one hour, or until done, and discard the cooking water. Place all of the ingredients except the beans in a food processor and process until smooth. Add the beans, and check for flavor - you may not want to add all of them. If needed, add a bit of liquid from the canned tomatoes to aid in processing. I remove some of the seeds from the chilies and save them, in case it comes out too bland. You can remove more seeds, if you like it mild. Serve warm or cold with tortilla chips, or use to make burritos, tostados, etc. This is a staple condiment in my kitchen, and so I try to keep some on hand in the fridge or freezer. My son wants to know why you didn't post this until AFTER he and his lady returned from a gruelling camping trip interstate. They rode their motorcycle from Brisbane to the bottom of Victoria (a lo-o-o-o-ng way - they took 4 days to get there!) taking with them only the most basic of basic essentials (2 people, a tent, sleeping bags, clothes, towels, cooking equipment etc - all on a motorbike!), and when they arrived they found that campsites were so close together, there was no room for campfires! (The things people will do to see their favourite sporting event live!Ah well, you're only young once.)They had a cigarette-packet-candle stove they could boil things on, so this omelette in a bag idea would have been very, very useful! Never mind, they've stored the idea in their memory banks for the next camping trip!

I separate homemade tortillas (and other things I make and freeze - pancakes, French toast, waffles, sliced quick breads...) with rounds, squares, or rectangles of plastic. Works much better than waxed paper or parchment, and BTW, freezer paper worked better than those two when I used it to separate things, and the plastic sheets are reusable. I cut rounds out of the plastic tops from containers (lg. container of yogurt, oatmeal, lids on #10 cans of freeze-dried foods, etc.). And I've purchased thin plastic kitchen cutting sheets/boards (comes several sheets to a package at Wal-Mart in the kitchen-wares department, in a number of fun colors) and cut those into sizes I need using my guillotine paper cutter. Some I round the corners so they don't poke through the foil or plastic wrap used as wrapping material, or cut to fit plastic storage containers with rounded corners. Anyway, I have a 2-" flat container I have all different sizes and shapes in to meet my needs for separating things in the freezer. You can also separate the small corn tortillas into fold-top sandwich bags - 2 tortillas per bag - then pack them back into the original bag and toss them in the freezer. If you only need one tortilla, they snap apart easily when there are only two frozen together. If you want to separate large flour tortillas, there are still 1-gallon storage bags available that use a twist-tie, you can use for separating them. usually the morning after we have taco's I take the onions, tomatoes, black olives and taco meat that is left over and heat it in a skillet. Then I beat several eggs and add cheddar cheese to them and pour over the veggies. Serve it with salsa, sour cream, refried beans and warm flour tortillas. It tastes wonderful!!

I know how yummy that is! I always save leftover taco fillings and toppings for omelets; we love them. It's a rare treat for weekend brunch. For the omelets, I'll add a dollop of Rotel (tomatoes and jalopenos), the seasoned burger mix, and cheese. On the side, we'll have fresh tomatoes, sour cream, and chopped green onions.

I'm going to have to make a taco omelet! But I'll have it with black beans, pico de gallo, sour cream, cheddar, green onions and a big dollop of guacamole.

Eggs are to an omelet as bread is to a sandwich. It's what you add that makes the dish.

patti43, they just called it "taco meat". Presumably ground beef with a mild taco seasoning. It wasn't oversauced but had a good flavor. I'm guessing it was a "Mexican" mix on the cheese too. I opted out on the olives and would on the refried beans. Tortillas would be OK, but I do like my toast. I could also go for a Spanish rice with it too.

I wound up putting most of the salsa on the hash browns! They really went well together.
