Chili too hot....help

I put chili in the slo-cooker this morning using False Alarm Chili seasoning. I just tasted it and it is too hot (spicy). Any suggestions on what I can do to de-heat it so we can have it for supper tonight? This seasoning was supposed to be mild chili.

add a small amt of sugar, like a tsp. If that isn't enough add a tad more until chili is cooled down.

Did A search and lots said to put it in the frig and let the spices comes together and serve the next day.

I've done the chocolate as well.used cocoa powder

In addition to aging the chili a day or two, try adding in an ounce of unsweetened chocolate. Maybe two ounces will be needed depending on the volume of chili. You won't taste the chocolate but it does seem to take the edge off a really spicy concoction.

I would plant it out. Its hardy here in Z8. While you have it out of the pot look at the rhizomes for bugs or rot. You may be overwatering. In From Sept-Nov the globbas and zingibers will start to go dormant again.

fiedlermeister, Those peppers look utterly scrumptious! Lucky you, you get to eat them whenever you want! lisae_grower, we regularly preserve both shredded cabbage and pepper halves. Not in the same jars though! What we have found is that we can mix a cup of storebought vinegar with 3 cups water. That is our pickling brine. Each quart jar initially gets a tsp of salt and 2 cups brine. Then we add shredded cabbage until the jar is full. Done this way there are no air bubbles in the cabbage, and maximum picklage is achieved. Before we put on a lid, we stretch a double layer of vegetable bag (like the kind on a roll in the produce isle) over the mouth of the jar, then a mason lid, then the mason ring. The plastic prevents any vinegar from ever touching the metal lid. Then just trim off excess with scissors and put the bottle in a frig. This product will last around 2 years in a cold state like this. We also like to put a couple tsp's of caraway seed in with the cabbage. Goes excellent on any ruben style sandwich. Red cabbage is easy to grow and makes an oh-so-pretty pickled cabbage, and we much prefer the taste of it to saurkraut. Peppers can be done almost identically. Half a jar of brine, tsp of salt, then add pepper halves until top of jar is reached. Double layer plastic, lid, then into the frig it goes. I must say that we have 4 refrigerators total. I keep the cabbage and peppers in the same frig as my winter stored scion wood. No ethylene gasses from ripening fruit etc to deteriorate my scionwood. Oh, Dill Pickles can be done in the exact same manner as the cabbage and peppers. I use cucumber halves and pickling spice. They are wonderful and also last around 2 years like this. I love "no canning" type recipes!

Ya... some confusion going on it seems. Chilie is a pepper. Chili is a dish. So in a literal sense you can have chilie powder made out of dried ground peppers. Now... to make the dish most in the U.S. consider chili you have to add a spice mixture know as "chili powder". As I recall Lars has a fondness for Mexico and lives in the South Western corner of the U.S. I'm not surprised that he would think of powdered peppers before a spice mixture. One of the things really interesting about his cooking is that he is doing different things with his food. Much as I'd love to sample Lar's cooking someday I'm going with Arley on the cumin. Cumin is the heart and soul of the dish we call Chili. My pot of chili often contains several kinds of hot peppers but it also takes a load of cumin. People walking into my home will exclaim in delight when I cook chili because of the fragrant cumin. I found whizzing my whole cumin seed in the blender with some tomatoes chops the cumin up pretty good. Not as good as hand chopping. My first lesson with cumin seed was to chop it up on a cutting board with a knife. Still strikes me as the best flavor. Our friends on the CF from India have recommended toasting the cumin... very good but I'm not 100% sold. The seed does require considerable cooking to release the oils that account for the intense flavor. The very best cumin I can purchase at the moment is bulk ground cumin from GFS which is a restaurant supply company. Tops even Penzey's whole seed. Still ground does not get the full spectrum of flavor so I add mostly ground GFS cumin and top note my flavor with some freshly chopped seed. Somehow ground cumin even when fresh and strong still does not have the high aromatic essence of whole seed. Chili powder often contains garlic that I've removed from my chili. Garlic is great and garlic is good but it is also sweet and not the character I want. Maybe sometimes it is alright.... I used to add sliced fresh garlic to my chili. Goodness that warms your entire body when the mood is there for it. Cilantro, in particular fresh cilantro provides an intense aromatic flavor and scent that many associate with north of the boarder "mexican" cooking. LOL!... sorry don't mean to go on so much. Chili is one of my favorite dishes. Fresh garden tomatoes are priceless if you want chili with star power. Different peppers add heat with different characters as Lars noted. Peppers at different stages of ripeness also display remarkably different characteristics. Green habeneras are not ripe but they are milder and have more tang then mature red habs. Then the amount of time a pepper cooks will change the flavor and heat profile of a pepper. My chili is tested and approved by Luna! Suppose I should admit I don't use chili powder in my chili. Not powdered peppers or any branded spice mix. Cumin and cilantro with hot peppers being part of the vegtable mix. I top coat much of my food with salt and black pepper and always do so with chili. : ) lyra

Small fireplace for bedroom - not too hot - HELP!

I would consider a tiny gas stove. Go to woodstove.com and then click on soapstone gas stove. You will then see a selection of gas stoves in different sizes. I think the one called "cottage mini" might be the right size for your bedroom. I cannot vouch for this item personally. I just happen to know about it because it was one of the things we considered when we were planning a backup heating source for our bedroom for when the power goes out. We decided instead to get a gas insert for our living room fireplace. Next time we have a power outage in the winter, we'll sleep in the living room in front of the fire. There may be other small gas stoves manufactured by other companies, which you should look into. You could probably get one in cast iron. I understand that the advantage of soapstone is that it retains heat and releases it for longer than cast iron, but it takes longer to heat up in the first place. But I do not know of any head-to-head comparisons between the two. There may also be really small fireplaces on the market; Google "small gas fireplace" and see what turns up. But a stove will be much cheaper to buy and easier and cheaper to install. The new styles are pretty attractive. Just make sure they have direct vent technology. Otherwise it would not be safe for your bedroom (or anywhere else in my opinion) and probably a building code violation. Happy hunting.

When that's happened to me I usually wind up having to essentially dilute it down. Add some more tomato sauce and meat. You'll have a bigger batch but will spread out the seasoning.

Add some canned xhopped tomatoes, perhaps diced. The tomato is mild and has sugar and will counteract the heat.

Unsweetened cocoa will help, but the best cure is to increase the volume of everything except the spice.

Use a ratio of 2:1 ie 2 tablespoons of apple cider vinegar and 1 tablespoon of honey - it will cut the spicy taste considerably. I have also added a cubed potato and then removed the potato when the chili was palatable again.

KT to the rescue...again. Thanks. I did some of the above suggestions. I added some tomato juice, about 1/4 cup of sugar, some cut up hot dogs and some frozen corn. The chili wasn't too bad, and I think sitting in the fridge will tone it down some too. For some reason, putting chocolate in chili just doesn't appeal to me. I keep trying to find a chili seasoning that we like and not too spicy. I'll cross False Alarm Chili seasoning off my list. P.S. The corn bread was REAL good!

My DH makes the chili in my house and he always adds some powdered hersey's cocoa to make the tomato base richer and less acidic.

He also puts a little instant coffee in our hot chocolate - just a tad.

Now that I think of it he's always putting some secret ingredient into his cooking. And he's a much better cook than I am.

But he can't bake.

Here's another recommendation for unsweetened cocoa - it doesn't taste "chocolatey", but does give a nice depth of flavor.

I've never been able to get up the nerve to put chocolate or cocoa into chili. Yes, I know it's not going to taste like a Snickers bar when used sparingly but never quite found it to be an appealing seasoning. Also, my experience is when I leave things like chili and sloppys sit the seasonings seem to build rather than diminish so I know if I overdid it from the start, it won't be better for me the next day. After tossing a few batches over the years, I've learned to try to hold back on seasonings, even on coleslaw and potato salad. You can always add more.

I've heard of using potatoes to tone things down if overly salty and I'd imagine they'd absorb spices too. I thought about mentioning it but have never tried it so I don't know how well it works. I'm not so sure potatoes would be bad in chili anyway so I'd probably try it first. Taters, meat, potatoes? Nothing wrong with that. Makings of many a "casserole" or as we say in the nort'land "hotdish".

I had perfected a chili recipe decades ago after years of trial and error and tweaking. It was fabulous. And I was making it so often I had it memorized... never wrote it down. Need I say more? Yep, I got all chilied out, didn't make it for a long time and if I did write it down, I never found where I put the recipe. :( So when I do make it now it's back to experiment.

In my old age, I've found that I use less seasoning than years back. I like things a bit more mild. I've always used beer in chili and have quit with packets of seasoning. Just too much salt in there for me these days. I like to get a lot of the seasoning from things like different sausage. I'll use a "hot" pork sausage, some pepperoni even use jarred/canned spaghetti sauce and things like that rather than the packets or "kits", and of course lots of onion, some garlic, Worcestershire, and things like that spice it up without being overpowering.

And though unsolicited, I'm a thick chili person. Don't like it soupy and watery. That's soup, not chili. I like it so I can scoop it up with crackers and have very little juice in the bottom of the bowl. Yeah, I'm a carnivore, give me meat!

I always put cocoa in chili and my home made BBQ sauce. It does not taste chocolaty. Some folks on the cake decorating forums also add chili powder to chocolate brownies/cake to add to the flavors. That is where I first heard of it. They really do compliment one another very well.
By the way, yesterday must have been a chili day...I made a huge batch also LOL!!

Cut up potato does work as well. It will calm oversalting AND over spicing.

A dollop of sour cream served with it helps to take the edge off of too-spicy dishes! Or yogurt, but probably wouldn't want yogurt in chili. :)
