DH loves scalloped potatoes -- so much so that he buys the "boxed" kind (BLECH!) because I don't make them from scratch. I want to...but I just don't have a quick and easy recipe. Can you help me out by sharing yours?
I always had cheese in mine. Bake then before microwaving, I always made my sauce on top of stove. This one is similar to one I used to make, and I always added leftover baked ham to my potatoes! That's the way MIL did it!
2 tablespoons cornstarch 2 cups milk 2 tablespoons butter 1 teaspoon salt 1/8 teaspoon pepper 6 medium potatoes peeled and thinly sliced 1 cup shredded sharp cheddar cheese
Directions Mix cornstarch with small amount of cold milk then add to remaining milk. Cook in the microwave in a quart size measuring cup stirring a couple of times until it thickens. Add butter, salt, pepper and cheese. Place sliced potatoes in a two quart casserole then mix with cheese sauce. Bake uncovered at 350 for 1 hour
We LOVE the great value (house brand) at WalMart! We said we might quit making them from scratch. Here's how I make home-made ones. DH peels potatoes and I slice onions and the potatoes he peeled (I use a mandolin). In a dutch oven, I put a layer of potatoes, then onion, pieces of ham, sprinkle a couple of tablespoons of flour, dot with butter. Repeat as much as you want (or the pan will hold). Then I pour in milk, put a cake pan on the shelf under the dutch oven, and bake. If you like crusty brown top, don't use a lid on dutch oven, otherwise, do. We love it. Oh, yeah, salt and pepper on each layer, too. JoanMN
I copied that recipe, cause it was so similar to the one I used to make. Here's notation that was added at the bottom
Nana's Tip: For scalloped potatoes without cheese, substitute cheese and corn starch mixture with a can of cream of mushroom soup, 3/4 cup of milk, 1/2 bell pepper chopped, 1/2 onion chopped and salt and pepper. As an option, place small amount of grated cheese on top for the last 15 minutes.
****Or just add the onion with the sauce, if you want.
Always peel and slice the potatoes as the last step. If the peeled potatoes sit too long they will turn black.
Google for easy scalloped potatoes. There are a lot of recipes online. I use the frozen chunky hash brown type recipes or get the boxed mix. I haven't tried Walmart's brand, but I will now. DH can't have many potatoes, that's why I get the boxed. Love to have company so I can make lots of taters!

8 cups thinly sliced potatoes 1 cup thinly sliced onion 2 cans (10 oz each) cream of mushroom soup 1 cup milk ½ tsp salt Layer potato and onion in a 3.5 L casserole dish.
Mix soup, milk, salt and pepper. Pour over top. Insert spoon here and there to allow some sauce to penetrate.
Bake, covered, in 375 º oven for about 1 hour, 15 minutes or until tender. Remove cover during last 10 minutes.
Another easy way to make scaloped potatoes is; 2-4 med potatoes, cooked. 1 package Country gravy mix (white gravy) some salt (there is pepper in the mix) and some dehydrated onion. Cook up the gravy mix using milk. I always use a bit more than the icup thats called for. In a casserole dish, put in sliced cooked potaotes, prepared gravy mix, D, onions & salt. This just needs to baked just untill heated through.
When I think "quick and easy" It doesn't include using the oven.
I like the make them in a non-stick fry pan on top of the stove and they are ready in about 15 to 20 min.
I prefer to shread the potatoes with what is called jullian cut. (the little strips, but not fine.) I put some oil in the bottom of the pan and add some chopped onion, heat it while shreading the washed potatoes, I like to leave skins on. Put them in the pan and after turning them once add enough milk or half and half to come about half way up the potatoes. sprinkle with pepper but no salt if you plan to add ham. Cover and cook on medium, Turn them often and watch to make sure they don't boil over. Only cook until the potatoes are cooked. You may add more milk if needed, but usually it doesn't need thickening.
Now that is quick, and it can be made with sliced potatoes too.
Casey....this is so great! Just add boneless pork chops to the top of your dish.....and you'll have a family favorite of mine....Pork Chop Casserole!

Well mine doesn't get much easier but it sure is not low in fat. But let me tell you, they are wonderful!!!
Slice potatoes salt and pepper cover with HEAVY WHIPPING CREAM straight from the carton. Bake in Microwave for 10 minutes and then 1-1.5 hours in 350 degree oven.
This is the easiest ever and tastes yummo. 4 potatoes, sliced thinly. 1 cup cream. 1 packet french onion soup. Cheese. Mix soup and cream. Mix into potatoes . Place into baking dish and cover with grated cheese. Cook for 1 hour.
These ALL look good! I'm going to start with one of them tomorrow. By the time I try each of them, he won't want scalloped potatoes again for awhile. LOL! :-)
