Barbeque Beef Casserole

INGREDIENTS

Â 2 pounds ground beef

Â 1 large onion, diced

Â 1 green bell pepper, seeded and diced

Â 1 (10 ounce) can whole kernel corn, drained

Â 1/2 cup barbeque sauce

Â 1 (14.5 ounce) can diced tomatoes, drained

Â 3 (8.5 ounce) packages corn bread mix

DIRECTIONS

1. Preheat the oven to 400 degrees F (200 degrees C).

2. Crumble the ground beef into a large skillet over medium-high heat. Cook until evenly browned. Add the onion, bell pepper, corn and tomatoes. Cook and stir until vegetables are tender. Drain excess grease, and stir in the barbeque sauce. Spread the beef mixture in an even layer in a 9x13 inch baking dish.

3. Prepare the cornbread batter mixes according to package directions. Spread the batter over the top of the beef mixture.

4. Bake for 20 to 25 minutes in the preheated oven, until the top is golden brown, and a knife inserted into the center of the cornbread layer comes out clean.

Apple-Cinnamon Bread

Dough
3 cups (12 3/4 ounces) King Arthur Unbleached All-Purpose Flour
2/3 cup (2 ounces) apple nuggets or chopped dried apples
3 tablespoons King Arthur Easy-Roll Dough Improver (optional, but very helpful)
1 1/4 teaspoons salt
1 tablespoon instant yeast
3 tablespoons (1 1/2 ounces) butter or margarine
2 tablespoons (5/8 ounce) Baker's Special Dry Milk or nonfat dry milk
1 cup (8 ounces) water

Filling
3/4 cup (4 ounces) Baker's Cinnamon Filling*
3 tablespoons (1 1/2 ounces) water

*Or substitute your favorite cinnamon-sugar filling for the Baker's Cinnamon Filling and water.

In a mini food processor or blender, combine 1/2 cup of the flour and all of the apple nuggets. Process till apples are coarsely chopped. Combine the apple-flour mixture with the remaining dough ingredients, and mix and knead them together -- by hand, mixer or bread machine -- till you've made a soft, smooth dough. Allow the dough to rise, covered, for 1 hour.

Roll the dough into an 8 x 24-inch rectangle. Mix together the filling ingredients, and spread it on the dough, leaving a 1-inch border. Roll the dough up starting with a short edge, pinch the ends closed, and fit it, seam-side down, into a lightly greased 8 1/2 x 4 1/2-inch bread pan. Cover the pan, and allow the loaf to rise for about 1 hour, or till it's crowned a scant 1 inch above the pan's rim.

Bake the bread in a preheated 350Â°F oven for 40 to 45 minutes, tenting it lightly with aluminum foil after 20 minutes so that it doesn't over-brown. Remove it from the oven, and allow it to cool on a wire rack. Yield: 1 loaf.

This is from the King Arthur Flour web site....I have this rising right now on the cabinet. It does make a soft, sticky dough.

I can't wait to taste this. My hubby loves to take peanut butter and honey sandwiches to work...tomorrow's sandwiches will be made with this bread.

This recipe looks good, but I would use canned salmon. Salmon Burgers with Dill Tartar Sauce Fresh salmon, punched up with shallots, capers, and mustard, make up these savory burgers. Dress them with spinach, tomato, and a creamy dill sauce. Serves 4 1-1/2 lbs. salmon fillet, skinned, cut into 1-inch cubes, and chilled 1 small shallot, finely diced (about 2 Tbs.) 1 Tbs. capers, rinsed and chopped 1 tsp. Dijon mustard Kosher salt and freshly ground black pepper 1/2 cup mayonnaise 1/3 cup dill pickle relish 2 Tbs. chopped fresh dill 2 Tbs. fresh lemon juice, more to taste 2 Tbs. olive oil 1 cup lightly packed baby spinach (about 1 oz.) 1 small red onion, cut into thin rings 1 large tomato, cut into 8 thin slices 4 hamburger buns, split and toasted Put half of the salmon in a food processor and pulse until itÃ¯Â¿Â½s coarsely chopped. Transfer to a medium bowl. Chop the remaining salmon in the same manner, and add to the bowl. Fold in the shallot, capers, mustard, and 3/4 tsp. each salt and pepper. I roll fresh Asparagus in this Garlic Butter and put it on my Charcoal Grill in a screen basket. OMG! Learned this from Pappadeux's Restaurant. I just took the bread out of the oven and brushed it with butter.
