Baked Lemon Pasta

1 pound thin spaghetti

1/2 stick (4 tablespoons) butter

2 tablespoons olive oil

2 cloves garlic, minced

Juice of 1 lemon

Zest of 1 lemon

2 cups sour cream

1/2 teaspoon kosher salt, more to taste if desired

Plenty of grated Parmesan cheese

Flat leaf parsley, chopped

Extra lemon juice

Preheat oven to 375 degrees. Cook spaghetti until al dente.

In a skillet, melt butter with olive oil over LOW HEAT.

When butter is melted, add minced garlic.

Squeeze lemon juice into the pan. Turn off heat.

Add sour cream and stir mixture together. Add lemon zest and salt. Taste, then add more salt if necessary.

Pour mixture over drained spaghetti and stir together, then pour spaghetti into an oven safe dish.

Bake, covered, for 15 minutes. Then remove foil and bake for an additional 7 to 10 minutes. (Don't bake too long or the pasta will dry out.)

When you remove it from the oven, squeeze a little more lemon juice over the top.

Top generously with Parmesan cheese, then chopped parsley.

Give it a final squeeze of lemon juice at the end.

Serve with crusty French bread and a simple green salad.

Apple-Glazed Pork Chops (Taste of Home)

2 tablespoons brown sugar
2 teaspoons paprika
1 teaspoon salt
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon ground mustard
1 teaspoon dried thyme
1/2 teaspoon pepper
4 boneless pork loin chops (1 inch thick and 6 ounces each)
2 tablespoons apple jelly

Combine the first eight ingredients; rub over both sides of pork chops. Cook in batches on an indoor grill coated with cooking spray for 5 minutes or until a meat thermometer reads 160Ã¯Â¿Â½.

In a microwave-safe bowl, heat jelly until warmed; brush over pork chops.

Baked Corn Pudding

Ingredients:
1/2 cup sugar
3 tablespoons all-purpose flour
3 eggs
1 cup milk (I used undiluted evaporated milk)
1/4 cup butter, melted
1/2 teaspoon salt
1/2 teaspoon pepper
1 (15.25 ounce) can whole kernel corn,
drained
1 (14.75 ounce) can cream-style corn
Directions:
1. In a bowl, combine the sugar and flour. Whisk in the eggs, milk, butter, salt and pepper. Stir in the corn and cream-style corn. Pour into a greased 1-1/2-qt. baking dish. Bake, uncovered, at 350 degrees F for 45-50 minutes or until a knife inserted near the center comes out clean.

Classic Meat Loaf This recipe brings 3 ground meats together with a sweet-and-sour glaze to form a tender and moist mealtime favourite. 3 thick slices white bread, torn into large pieces 2 garlic cloves, chopped 1 medium carrot, chopped 1 celery stalk, chopped 1/2 cup flat-leaf parsley 12 oz lean ground beef chuck 12 oz ground pork 12 oz ground veal 1 large egg 3/4 cup ketchup 1 tbsp Dijon mustard 1 tbsp worcestershire sauce salt and pepper 2 tbsp light brown sugar Preheat oven to 375. Pulse bread in a food processor until finely ground. You should have about 2 1/2 cups breadcrumbs) Transfer to a medium bowl. Pulse garlic, onion, celery, carrot and parsley in food processor until finely chopped. Add to breadcrumbs. Add meats, egg, 1/4 cup ketchup, mustard, worcestershire sauce, salt and pepper. Using your hands, mix together. Put mixture into a loaf pan. Stir together remaining 1/2 cup ketchup and the brown sugar until smooth; brush onto meat. Set pan on a baking sheet and bake until an instant-read thermometer reads 160 degrees, about 1 hour and 20 minutes.

It must be pumpkin recipe day! I made some pumpkin muffins from a recipe I got out of Parade Magazine a few weeks ago. I adapted it somewhat. Pumpkin Muffins.......makes 12 preheat oven to 400 F. 1.5 cups all purpose flour 0.5 cups whole wheat flour 2 teaspoons baking powder 1 teaspoon cinnamon or to taste 1/4 teaspoon salt 1/2 cup (one stick) butter (I used the real stuff.) 1/2 cup brown sugar 2 large eggs 3/4 cup pumpkin puree....I used kabocha squash puree- 7 ounces.....or maybe it was 8. 2 teaspoons agave nectar 2 Tablespoons milk- I used non-fat) 1 tsp. real vanilla Streusel topping: 1/4 cup butter- I used Smart Balance 1/3 cup more or less brown sugar 1.5 tsp. ground cinnamon 1/4 more or less oatmeal 2 Tablespoons whole wheat flour 1/3 cup chopped pecans more or less Mix together well...using a fork or your fingers until well blended. 1. Whisk the flour, baking powder, cinnamon and salt together well. Set aside. Grease muffin tins well or use lines. (I don't use liners.) Preheat oven to 400 F. 2. Beat the butter until creamy and then beat in the sugar. Add the eggs one at a time, beating well. Add pumpkin puree and stir in....add the agave nectar and blend in and then mix in the milk. The batter will be thick. Add the dry ingredients and stir until blended but do not over mix. 3. Divide the batter into 12 portions. Add some of the batter to the muffin tin, add some struesel topping and then add some more batter. After all the batter is used add more struesel topping on top. Bake until done....toothpick comes out clean. My oven took about 23 minutes. Let cool a few minutes and then remove from tin and place on cooling rack. These freeze well.

STARBUCK'S FROZEN FRAPPUCCINO The Frappuccino is blended with strong coffee, sugar, a dairy base, and ice. Make double-strength coffee by measuring 2 tablespoons of ground coffee per cup (serving) in your coffee maker. The coffee will be even more authentic if you use Starbucks beans and grind them yourself just before brewing. Coffee 3/4 cup double-strength coffee, cold 1 cup low-fat milk 3 tablespoons granulated sugar 2 cups ice 1. Make double-strength coffee by brewing with twice the coffee required by your coffee maker. That should be 2 tablespoons of ground coffee per each cup of coffee. Chill before using. 2. To make the drink, combine all ingredients in a blender and blend on high speed until ice is crushed and drink is smooth. Pour into two 16-ounce glasses, and serve with a straw. Makes 2 large drinks. Because of the name (Company Potatoes) I may have posted that recipe, Jasdip. I've made those so many times I don't even use a recipe anymore. It is basically a twice-baked potato. You can sprinkle bacon on top, or do just about anything you want to with them. Glenda, it's the recipe gnomes again. It's been a problem lately with measurements, it seems. I'm making this tomorrow. Never made it before so can't guarantee the outcome. PORTABELLO MUSHROOM LASAGNA 1 lb. ground beef 4 or 5 Italian sausage links (mild or hot) 1 med. onion Garlic salt to taste Pepper to taste 6 large Portabello mushrooms 1 large container ricotta cheese 1 egg Lots of grated Mozarella cheese 1 jar spaghetti sauce (or make your own) Preheat oven to 350. Remove sausage from casings. Brown sausage and ground beef with onions, adding garlic salt and pepper to taste. Scrape out the black gills and remove stem from mushrooms. Beat egg into ricotta cheese. Spread a small amount of spaghetti sauce in a large baking dish or shallow roasting pan to prevent sticking. Generously pack each mushroom cap with ricotta mixture and place in the baking dish ricotta side up. Top each cap with a handful of Mozarella. Then top cheese with a generous amount of the meat onion mixture. Then add more cheese. Pour spaghetti sauce over each cap and around the bottom of the pan. Top with remaining cheese. Bake for 30-35 minutes. Cool about 10 minutes.

An oldie but goodie I know I've posted before. Made it many times and it is great!

Black Beans and Chicken (crock pot recipe)
1 can Black Beans
1 can Corn
1 jar Salsa
1/2 Brick LF or FF Cream Cheese (cut in chunks)
4 Frozen Chicken Breasts, thaw (or use fresh)

Cook all together except for cream cheese on high for 5-6 hours. In
the last 1/2 hour, throw the cream cheese on top & let it melt.

Pasta & vegetable salad

I made this last night it was very good.
4 cups cooked spaghetti or any pasta
2 cups broccoli flowerettes cooked
1/2 cup chopped onion
1/2 cup thinly sliced red & green pepper
1/2 cup diced tomato
1/2 cup Italian Dressing
1/4 cup sugar
black or green olives

1. combine pasta with veggies
2. in a seperate bowl, mix Italian dressing
with sugar. Pour over the spaghitti & veggies an mix well.
3. Pour into a 2 1/2 Qt dish and garnish with sliced olives. This will keep in the refrigerator several days.

Football food!!!

SWISS AND BACON DIP

8 slices center cut bacon, chopped
8 ounces cream cheese, softened
1/2 cup mayonnaise
2 rounded teaspoons prepared Dijon style mustard
2 rounded teaspoons horseradish (optional)
1 1/2 cups Swiss Cheese, shredded
3 scallions, chopped
1/2 cup smoked almonds, coarsely chopped
Baby carrots and a selection of breads or crackers for dipping

Preheat oven to 400 degrees F. Brown bacon in nonstick skillet over medium high heat. Drain crisp bacon bits on paper towels.

In a mixing bowl, combine cream cheese, mayonnaise, mustard, horseradish (if using), Swiss cheese, and scallions with cooked bacon. Transfer to a shallow small casserole or baking dish and bake until golden and bubbly at edges, 15 to 18 minutes. Top with chopped smoked almonds. Place dip on a platter and surround warm casserole with breads and carrots for dipping.

Corn Casserole
1 - 14 1/4 oz whole kernel corn, drained
1 - 14 3/4 oz cream corn
1 - 8 0z pkg muffin mix
1 cup sour cream
1/2 cup melted butter
1 1/2 cups cheddar cheese, shredded

1. preheat oven to 350* F
2. in a large bowl, stir together the first 5 ingredients
3. pour into a greased casserole dish and bake for 45 min.
4. remove from over and top with the cheese
5. return to the oven for 5 - 10 min or until the cheese is melted
6. let stand at least 5 min and serve warm

Glenda, my hubby loves this. Our grocery had the Libby veggies on sale this week so I stocked up to make this and veggie soup.. Yum, yum!!!!!!
