I've often bacon wrapped my pork tenderloin and grilled it, but I've never marinated the pork first. This looks good and it goes in the oven.

Bacon-wrapped Pork Tenderloin

The pork is flavoured with a Thai-inspired marinade, wrapped in Bacon and baked until crispy.

Bacon-wrapped Pork Tenderloin Ingredients

MARINADE 2 tbs Orange marmalade

1/4 cup Honey 2 tbs Ginger grated

2 tbs Molasses dark 1 lb Pork tenderloin cut on the bias into 6 pieces

2 tbs Thai red chili paste 6 slices Bacon trimmed of excess fat

1/2 cup Soy sauce

Instructions for Bacon-wrapped Pork Tenderloin

1. Whisk marinade ingredients together. Trim all the fat and silver skin off the tenderloin. Pour the marinade in a small shallow bowl just large enough to hold the pork in a single layer. Place pork in marinade and refrigerate for 2 hours.

2. Remove pork from marinade and wrap bacon slices around them, securing with toothpicks. Return to the marinade an refrigerate for 2 more hours.

3. Preheat oven to 400.

4. Remove pork pieces from marinade and place on a rack placed over a baking pan. Discard marinade.

5. Roast for 25 minutes, until center of pork reaches 155? and the bacon is crispy.
