What's for dinner Monday?

Beautiful day again with temps in the mid-80's. Went shopping after my first rad. CVS, Beall's Outlet and the grocery. Stocked up on Boost at CVS, found a few things, including an umbrella for the car, at Beall's but their stuff mainly looked like junk. Maybe I just hit a bad week.

Dinner tonight is spinach quiche and sliced fresh peaches for Harry and a Kellogg's Special K protein drink for me.

I wish we could all have this pretty weather. What are you having for dinner tonight?

Well, it was pretty here today, but way too hot for me. I had a fun day with my 3 girls and little Alyssa. I was gone most all day. My supper was cold fried chicken, little yellow cherry tomatoes, and chocolate milk. I hope you are doing better Patti.

It was a cool and rainy day here which we need.
I am not cooking again. I bought a whole basket full of fresh tomatoes at the farm store so I am having blt sandwiches yummy.

Ellen chicken salad sounds delicious Shirley, Spanish rice sounds good. I make one version in the slow cooker, with ground beef. Sue, I like my fried egg sandwiches with tomato as well, and bacon when we have it. Kath, I used to like the Southwestern Salad from McD's. Haven't had one of them in a couple of years now. Raven, I love that skillet dish. One-dish meals are so handy. OF, as you said, frozen lasagna is way easier than making one from scratch! Pam you had what is the perfect steak dinner! Jim, veggie soup and lemon pudding! Yum! We're in for the high temps tomorrow as well with high humidity. 30C but feeling much hotter with the humidity.

Prairie Rose, do you barbecue all winter long, or was it because the weather was nicer today? Morz I love a well-done roast, and the slow cooker makes it easy. I also love cranberries in my salad. Have you tried them with roasted brussels sprouts? That's a favourite with us. Monica I made sweet potato fries last week and we loved them. The last time I tried baking them, they oozed out over my oven. I didn't realize they cooked so much faster than white potatoes. Rhizo, I love reading your dinner threads. You are so darn healthy! BLF, isn't it nice when a recipe from a fellow member turns into a keeper? Shirley, I wasn't sure if today classified as a "holiday" today (Family Day) so I made sure I roasted my vegetables before 5 pm to at least get the mid-rate hydro rate. I hate the smart meters. Moni, I add cheddar cheese to my broccoli soup. Probably negates any positive benefits of the broccoli, but it sure tastes good.

Jim congratulations on your upcoming cruise! I love it that you had wine with bacon and eggs. Audrey, your dinner looks and sounds fabulous. We had baked potatoes last nite. Shirley, I've yet to make red beans and rice. What's throwing me off from making it, much as I'd like to, is that we only have kidney beans, as far as a red bean, and I know that isn't the kind to use. I made quinoa with toasted almonds and red currants the other day. We like quinoa. Kath, for some reason companies change their recipes. In the event of making things healthier, taste gets compromised. Less fat and salt is less flavour it seems. Prairie Rose, do you make the light fluffy dumplings? That's what my Nan made and that's all I've ever known. I've never attempted it; I should! Raven, that looks divine!! We love roasted vegetables! Erin, I hope you feel better. That's dedication, coming onto a dinner thread when you're not feeling that great. Betsy, that's nice comfort food. Gyr_Falcon, that's a great sounding meal! Glad to see you here.

I was super hungry for country cookings, so Paw Paw Patch satisfied my cravings:

Country fried steak
green beans
creamed corn, which I love on a cornbread muffin half

Patti, you got a lot done today. We are having chicken tempura, fresh corn on the cob (nothing beats the August corn here!) and tossed salad. Busy week here as family comes in for my mother's 92nd birthday. 6 siblings, 1 cousin and my husband for her birthday dinner tomorrow, a leg of lamb. 7th sibling coming later in the week.

My meal was very simple..... a bowl of beef barley soup and a cut up orange tomato.

That's quite a busy day for you, Patti.

Weather here in Ohio was pretty but way too hot/humid.

Sue, cold fried chicken is almost as good as hot. Glad you had a great time with your girls. They sure are good to include you in their activities. Not all kids do that, you know!

Raven, you are becoming a lady of leisure! Won't be long before I'll be eating BLT's again. Enjoy!!

Glenda, I'm making CFS for Harry tomorrow. Yep, my poor car sits in the driveway because the golf cart takes up the garage (that and a bunch of junk). I told the office ladies at radiology it wouldn't be raining for a while. 'Cause that's the way it works!

Pam, won't it be fun to see all your brothers and sisters--and what a nice birthday dinner for your mother. You have me beat by one--I'm one of seven. Yum--tempura!

Shirley, I need to make beef barley soup for Harry when it cools off a little. The lack of humidity is what made today so wonderful. I had a great time just looking around the stores.

I don't have an idea yet...lol...
Hubby chose not to go to work..which throws me off my day.. :0)

Probably depends on what is thawed in the meat drawer..He and Kam will leave for Football soon...then I'll have about an hour before getting Kellan to Drivers Ed...

I'll have a game plan soon.

So I've got super cheesy stuffed shells with sausage sauce over them in the oven...chop a romaine heart, toss with ceasar and Parm...call it dinner...

(Stuffed with ricotta, mozz, cheddar/jack blend, Parm and a fair dash of Italian seasoning and garlic powder.)

DH and I ended up having crab cakes sandwiches. My youngest had a Kindergarten Playdate tonight up at the school. All the new Kindergarteners & parents are invited to come meet each other. (Our school year starts day after Labor Day-Sept 3rd) Was fun, but bittersweet to see my "baby" going to the big school :(
