I have typed it exactly how the recipe is printed in the book. If you have a bread machine or kitchenaide by all means use it to do most of the kneading. I always like to finish the kneading by hand. You can also make these in to normal size bagels. I have used this recipe for over 20 years. I have tried other recipes but this is my favourite one. 2 cups warm water 2 packages active dry yeast 3 tablespoons sugar 1 tablespoon salt about 5 3/4 cups all-purpose flour, unsifted 3 quarts water with 1 tablespoon of sugar Cornmeal 1 egg yolk beaten with 1 tablespoon water about 2 tablespoons poppy or sesame seeds. . Stir together water and yeast in large bowl of electric mixer; let stand 5 minutes to soften yeast. Stir in the Sugar and Salt. Gradually mix in 4 cups of the flour and beat at medium speed for 5 minutes. With a spoon, stir in about 1 1/4 cups more flour to make a stiff dough. turn out on a floured board and knead until smooth, elastic, and no longer sticky, (about 15 minutes); add more flour as needed to prevent sticking - dough should be firmer than for most other yeast breads. Place in a greased bowl, cover, and let rise in a warm place until almost doubled ( about 40 minutes to 1 hour). Punch dough down and divide into thirds. Set 2/3 of dough aside on a floured board; cover with clear plastic. form remaining 1/3 dough in a log and cut into 16 equal pieces. To shape, knead each piece into small ball and poke thumbs through centre. With one thumb in hole (hole should be at least 1/2 inch) work fingers around perimeter, shaping ball into a small donutlike shape about 1 1/2 inches in diameter. Place bagels on a floured board or tray and let stand 20 minutes. Bring water-sugar mixture to a boil in a 4 to 5 quart pan; adjust heat to keep it boiling gently. Lightly grease a baking sheet and sprinkle with cornmeal. Lift bagels carefully and drop into water (about 6 at a time) boil gently for 1 minute turning only once (30 seconds each side). Lift out with slotted spoon and drain very briefly on paper towels, and place on baking sheet. Brush with 1/3 of the egg yolk glaze, sprinkle with seeds and bake in a 400° oven for 20 minutes or until richly browned. cool on racks. Repeat with remaining 2/3 dough (you may need to punch it down before shaping,) working with 1/3 at a time. Makes 48 cocktail size bagels.

I don't know what kind of cocoa you used but unless it's Dutch process, it will have a bit of a bitter taste.....due to the alkalai used in the processing. You can't successfully substitite cocoa powder for semi sweet chocolate.....you are also forgetting that semi sweet chocolate contains some sugar....as well as the cocoa butter removed to make the powder. Here's a recipe using just cocoa powder......it's simple enough, but not outrageously chocolate as Martha Stewart's. But if you try to sub milk for the yogurt or oil for the butter, they won't turn out.....they need the acid of the yogurt, brown sugar and the cocoa to make them light. COCOA FUDGE COOKIES 1 cup flour ¼ tsp baking soda 1/8 tsp salt 5 Tbsp butter 7 Tbsp unsweetened cocoa 2/3 cup sugar 1/3 cup packed brown sugar 1/3 cup plain low-fat yogurt 1 tsp vanilla extract Cooking spray 1. Preheat oven to 350° 2. Lightly spoon flour into a dry measuring cup; level with a knife. Combine flour, soda and salt; set aside. Melt butter in a large saucepan over medium heat. Remove from heat; stir in cocoa powder and sugars (mixture will resemble coarse sand). Add yogurt and vanilla, stirring to combine Add flour mixture, stirring until moist. Drop by level tablespoons 2 inches apart onto baking sheets coated with cooking spray. 3. Bake at 350° for 8-10 minutes or until almost set. Cool on pans 2-3 minutes or until firm. Remove cookies from pans; cool on wire racks. Yield: 2 dozen cookies.

I have brought this up at least once before, but here it is again. I'm sure that all of the advise or recipes will be useful particularly if this relative is a Type A personality. But most of us would prefer to be a little more relaxed and not over-react and then burn out from minor or major failure to maintain a stiff diet. I am certainly not an expert, but I spent many years with the group that is currently known for study and naming of Syndrome X, a set of conditions that often lead to type 2 diabetes. In addition, my supervisor was a type 1 diabetic. I am sure that current ideas for good diets for diabetics, most specifically low glycemic index foods, is the best approach. But that doesn't mean that one is required to eat those foods all the time. Moderation In All Things! Low glycemic foods are those that are low in sugar and slower to turn any starch into its sugars. The point is to keep blood sugars from rocketing up from a quick sugar dose. Therefore, cake and ice cream are mostly Out. Even there, moderation is the point. My supervisor's wife was the best baker of cakes. I guess he would have a very small slice and leave the rest for some family and bring it to the lab the next day for the rest of us to finish off. Occasionally, he would forget to bring lunch. He would then put a regular Coke in an ice bath to keep it cold for hours as he consumed it over several hours. I note pillogs mention of chili without beans. I doubt that the beans would be a serious problem. A slightly greater issue might be the brown sugar. Even there, the real issue is not over eating of that chili. One can eat cake too, if it were consumed like the slow Coke. Everything in moderation; a little more activity; a little less food (unless underweight); snacking ok if total is the same.

I like the idea of quiche or frittata, or you could go in another direction altogether and make bean burritos, or a "make your own" type of burrito bar which would cut down on assembly for the kitchen workers. Around here it's all fish fries, which I love. My old boss is Catholic and attended our local Lenten breakfasts before work every year. She once remarked that she almost felt slanderous, but that the Methodist women were the best cooks in the county. I just happen to attend the Methodist church, LOL, so maybe she was angling for breakroom treats... Annie
