If you've tried tofu and didn't like it.....

.....maybe it was made with calcium sulfate. When we had our tofu business, we used only pure nigari (magnesium chloride) from Japan. Today's packaged tofu is made with nigari or calcium sulfate or a combination of the two.

I really dislike calcium sulfate tofu. I knew this, and yet I bought a package of it the other day. Magnesium chloride tofu is getting harder to find. Last night I cooked with the new tofu, and ended up throwing most of it out. Calcium sulfate is terribly bitter.

I don't know why they use it. Must be cheap.

I tried Tofu once and I don't remember it having any taste, but it was the texture i didn't care for.

Oh, Pat! My mom called me the other day from Redding and said, "Help me!" Haha! I guess the rain was REALLY coming down up there, because I could hear it over the phone. My dad went outside while Mom was on the phone with me, and he started moving potted plants to the shelter of the front porch. (Normally, he tunes out when Mom and I have one of our infamous, 2-hour plant chats.) Mom said, "What are you doing?" He said, "In case the hail starts, I want to save your plants, dear." Awwww! I LOVE the weather so far this year! It's not so bad when I see that tomorrow and Saturday are supposed to be into the upper 90s, because we'll soon have a cool down after that. For years I didn't care for potato chips or French fries though I liked potatoes prepared other ways, but the past few years there are times I crave them now. It's a combination of the oil/grease & salt. Rather than a certain food, I find that I now like specific dishes a lot more than I used to: stews, pot roast, sauerkraut, sausage, biscuits & gravy (notice the interest in heavy fat foods?) A kind of sad thing, I LOVED chocolate to the point of once buying & eating a whole BOX of Hershey's bars, & going to chocolate conventions for a few years. Now I've lost my taste for chocolate; I don't hate it, but I don't care if I have it or not, & when I do have a piece, it doesn't taste all that great. Calories I don't have to worry about, I suppose. It's also given me empathy for older people who have lost their taste for food.

O.K. - so I shouldda offered it in January, before you'd thrown the old one out! And I think that the issue of "frugality" hardly enters the picture, for both the large calendars and the small ones are free, originally ... but after the first month or so of the year, they're no longer available. So if you didn't get one that you wanted, you have to buy one. I didn't get a small one last year, and have one from about 2010 on the desk, altered/updated as indicated. If such isn't your cup of tea - no one said that you might be under any obligation to follow the suggestion. I have a similar zinger to offer today. ole joyful

Thanks for the comments. I learned my lesson from the past neighbors that you don't just talk to people like this, you have to take a stand right away. The last ones dropped a tree onto my house and tried to sneak it away before I got home. But footprints in the snow caught my eye. I don't believe in silly oxymorons like "passive aggressive". If you allow it, you condone their actions and actually acquiesce to their abuse. Better to be clear upfront rather than talk in cases like this. I don't understand people who have an 80' wide lot and feel they need to put their stuff on, and use their neighbors' property. It would have been easier for them to park their stuff on their own than to move it onto mine. I have to suspect it's their attempt at a claim. Been through that before too and said never again. To quote Barney Fife "Nip it... nip it in the bud!" :) And sleeperblues, you clearly didn't read what I said. I didn't have time to go and talk at that time anyway, but thanks for your comment.

Nasoya Extra Firm tofu was magnesium chloride only until recently. Now it's made with both ingredients together. I hope there are other options in other parts of the country.

Dotmom, if you ever want to try it again, I suggest mashing it (mixed with garlic and a little parmesan, a great substitute for ricotta in stuffed shells) or otherwise disguising the texture (which I love, BTW). I have a yummy recipe for Tofu Pan Pizza that has blended tofu in the crust.

I love tofu. I think most people who are turned off by it probably had it in big, chunky gooshy forms which are disgusting. I like it sliced thin and pan fried with noodles or vegetables. A lot of Chinese restaurants prepare it this way and it's awesome. Thanks for the tip on the ingredients. I never knew there were differences.

I like tofu in a soup or stew base like sukiyaki especially after it's been sitting in the base a while absorbing the tastes. Yum. I don't mind the consistency.

Thanks Susan for the chemical tip on tofu. I do know that I've had both good and bad tofu and definitely like the good better. :-)

Jodi- great, now I'm hungry for sukiyaki ... sigh

I've used tofu in sukiyaki, but I just don't like the taste.

I wish I could like it. I was a vegetarian once and had it many times, but since going back to eating some meat I haven't bought it in years.

I tried tofu a couple times and the best I can say about it is .....Yucky!!!!!!!!!!!!!!

In fact, the only practical purpose I have ever seen for tofu was they used tofu to make simulated fecal matter to test the efficiency of toilets.

I love tofu. For those who don't like the consistency should try baking it or buying pre-baked tofu and then adding it to recipes, it's much firmer.

I really love tempeh too and have been experimenting with that lately.

Jenn, you might like Tofu, Tempeh, and Other Soy Delights, a Rodale cookbook that was published in the 1980s. I contributed over 30 tofu recipes to the book. Our tofu business made tempeh as well, but Rodale hired someone else for that section.

I love tempeh, too, and was excited to find very fresh tempeh being sold at an Asian market near where my daughter used to live. She moved, so I don't get over there as often anymore. But now that you've mentioned it, I think I'm due for a trip.
