If you've tried tofu and didn't like it.....

.....maybe it was made with calcium sulfate. When we had our tofu business, we used only pure nigari (magnesium chloride) from Japan. Today's packaged tofu is made with nigari or calcium sulfate or a combination of the two.

I really dislike calcium sulfate tofu. I knew this, and yet I bought a package of it the other day. Magnesium chloride tofu is getting harder to find. Last night I cooked with the new tofu, and ended up throwing most of it out. Calcium sulfate is terribly bitter.

I don't know why they use it. Must be cheap.
