Need new christmas candy/?? idea

Each year DIL and I try to add a new candy or something to our usual Christmas cooking/baking fare.

Usuals: Fudge and Caramels

Tried: Toffee..found one kind I think we'll make again (an English toffee someone posted here)

Tried: Marshmallows...what a waste. Lots of work (which isn't necessarily a bad thing), and seriously..store bought was just as good for me.

Tried: Krumkake...love his and try to make it every year.

Tried: Rosettes...like them, but couldn't get them off iron often. May need to try again now that i've read up on them more.

Any suggestions?

    This is not an actual candy but I give this out every year and everyone loves them.

    Pralines

    1 stick margarine
    1 stick butter
    place in sauce pan and turn on low to melt slowly. While this is being done line a large cookie sheet with aluminum foil.

    1 box graham crackers (I can get almost 2 trays out of a box of crackers)
    Place graham crackers close together until you have covered the whole cookie sheet.

    1/2 cup brown sugar
    add to butter mixture, stir until the sugar is mixed in then turn up heat and bring to a boil. When boiling stir constantly for 2 minutes.

    Remove from stove and add stir in 1 teaspoon of vanilla (watch out it will spit). Then pour this mixture over the cracker slowly spreading with a spoon to cover all the crackers.

    Then sprinkle chopped pecans over all; approximately 1 cup. Cook for 14 minutes in a 325 degree oven.

    When done take out and lift by foil and place on counter. When cool peel from foil and break into pieces.

    *If when you make the sugar mixture it doesn't get thick don't worry. Go ahead and spoon the brown sugar over the crackers and spread it around with a spoon to cover all. Pour any of the butter that is left over the crackers also. They will still taste the same and nobody notices the difference. I don't know why this happens since I have always cooked it the same way. Might have something to do with the weather, who knows.

    How about spicy pretzels or cinnamon baked pecans? Both of those are very easy to make and super tasty.. Or maybe even some Puppy Chow...

    Might be a few dessert tables for inspiration at the link below. I think it's important to vary the levels of desserts on the table and you can use pedestal cake plates or make your own pedestals using upturned bowls. You could wrap gift boxes with metallic gold gift wrap and use them as risers. A white linen cloth is always appropriate and with your clear glass you could use gold accents (shiny brass candle holders?) and pale pink flowers.     Brad, please don't be miffed at her, she may be doing the best she can. When someone's health is out of their control, and they are in a facility where they would rather not be, the change - even little changes in routine - can be hard. Can I guess that she has very certain ways she does things at home? All is very different for her there, just be patient, and loving. I don't pretend to know her current condition either so forgive me if I overstep...but when both my FIL and my brother's FIL were having heart issues, the lower oxygen levels by a heart not functioning up to par caused some temper, and some confusion too. Less oxygen in the blood almost looked a little like dementia, thoughts weren't clear. Better hydrated, and with some supplemental oxygen provided, thoughts/actions cleared again. Just be kind to her, and firm when you need to be, but still kind. This is a hard time for all of you having to deal with her being ill, hope tomorrow goes better. ;0)

    I know i mentioned my love for Barbour products in a thread earlier this month.. i shared the wash bag (dopp kit) i gave as gifts last year.. and a lunch bag I just love. Here is another product I just ordered this morning.. I am a yeti girl but my family is split. Not all like the Yeti cups. I have ordered a few of these travel cups.. and as in the photo below, they also have a bundle that includes the ear muffs. and i don't think i mentioned this previously-- my guy friend does not like wool on his neck. That makes it a challenge to find handsome plaid scarves. The barbour acrylic scarf is by far the best non-wool scarf I have found. (The also have cashmere/lambswool for those who don't mind the wool on their necks).

    I just thought of something else! Peppermint Bark... it's delicious, very pretty and very easy to make.. Paula Dean has a recipe online, just google it.. My daughter makes it every year and puts it in gift baskets, people just love it...

    chocolate covered Pretzels & Pretzel Rods with sprinkles, mini m&m's, toffee, whatever you might like. the list is endless. I've even done them with chopped reese's cups on top.

    Chocolate covered graham crackers with sugar Xmas layons or sprinkles (red,green,white).

    I have a candy making business and I teach the candy classes at AC Moore. I make chocolate covered popcorn in holiday colors, (red,white & green) for Xmas. Put in cello bag and tie with a pretty Xmas themed ribbon.

    Chocolate covered Oreos with xmas sugar layons. The list is endless. everybody likes chocolate so I don't think you can go wrong with that. Bark is also something that looks pretty and sells..

    Macadamia Nut Brittle
    1 cup nuts
    1 stick butter
    1/2 cup sugar
    1 tablespoon light corn syrup
    3/4 cup chocolate chips
    Line bottom and sides of 9"pan with foil. Butter foil.
    Cook nuts, butter, sugar and corn syrup until butter is melted and syrup
    is dissolved.
    Increase heat until golden brown and begins to mass together, stirring
    constantly (about 5 minutes).
    Spread into prepared pan.
    While still hot, sprinkle chocolate chips on top. They will melt -
    spread with spatula.
    Cool overnight.
    Remove candy from pan.
    Peel off foil. Break candy into chunks.

    A very simple candy that always goes.

    Melting chocolate(milk or white chocolate)
    Raisins
    chopped nuts (peacans or walnuts are good)

    Note: if you use white chocolate, golden raisins or dried apricots are a good replacement for raisins.

    Melt the chocolate, take off the stove and stir in the raisins and nuts.
    Drop by teaspoonfuls onto waxed paper, then let set in a cool place.

    My husband and I make candy for craft shows. One of our best sellers is so simple. Take two ritz crackers, add peanut butter to the center (make a PB sandwich out of the crackers) and dip in chocolate. We sell out every show. Another easy one that our children help us make are non-pareils. You just take chocolate coating wafers, put in the oven for about a minute at 350, take out of oven, sprinkle with non-pareils and let cool. Irish potatoes are amazing, too. I can email you the directions for those if you're interested.

    This peanut butter fudge is really creamy and easy. Yummy, too!

    PEANUT BUTTER FUDGE

    2 c. sugar
    2/3 c. milk
    1 jar marshmallow creme
    1 c. peanut butter
    1 tsp. vanilla

    Cook sugar and milk to soft ball stage. Remove from heat. Add remaining ingredients, mix well and pour into a 8 x 10" pan. Makes 2 lbs. You can roll into balls and dip in melted almond bark or chocolate coating.

    have you done the "bird nests" crunchy chinese noodles and peanuts mixed with melted chocolate...drop by tablespoon ful on sheet and let set...

    warning! do not sit outside on the porch to cool, when you have critters in the neighborhood...they ate the whole batch before i remembered it was out there!

    Kris Kringle Krunch - Helen
    Ingredients
    11 oz. white chocolate baking bar
    2 T. peanut butter
    1 1/4 c. Rice Krispies
    1 c. Spanish peanuts or regular peanuts
    1 c. mini marshmallows

    Directions
    Melt white chocolate and peanut butter in a saucepan over low heat. (Can do in microwave at 1/2 to 1 minute intervals, stirring each time until melted.) Let cool, but do not let mixture get cold. Add to Rice Krispies and peanuts and mix. Fold in marshmallows. Drop by teaspoon onto waxed paper. Store in refrigerator to keep crisp. Makes 30 pieces.

    Here is some I make & love:

    Chunky Peanut Brittle

    1 t. plus 1 ½ c. butter (no substitutes), divided
    2 c. peanut butter chips, divided
    1 ¾ c. sugar
    3 T. light corn syrup
    3 T. water
    1 ½ c. salted peanuts, coarsely chopped
    ½ c. semisweet chocolate chips

    Butter the bottom and sides of a 15 x 10 x 1 inch baking pan with 1 ½ t. butter. Sprinkle with 1 c. peanut butter chips; set aside. In a heavy saucepan, bring sugar, corn syrup, water and remaining butter to a boil over medium heat, stirring constantly. Cook and stir until butter is melted. Cook, without stirring, until a candy thermometer reads 300 degrees (hard crack stage). Remove from heat; stir in peanuts. Quickly pour onto prepared baking pan. Sprinkle with chocolate chips and remaining peanut butter chips. With a knife, gently swirl softened chips over top of brittle. Cool before breaking into pieces. Store in an airtight container. Yield: 2 ½ lb.

    ~~Fudge Krispies~~~~~These are sooo good~~~
    Taste like a Nestle Crunch !

    1pkg (2c.) milk chocolate chips( not semi -sweet )
    1/2c. marg.
    1/2c.light corn syrup
    2 tsp.vanilla extract
    1c.sifted confectioners sugar (powered sugar)
    4c.Rice Krispies cereal

    Combine choc.,marg & corn syrup in med. saucepan .
    Stir over low heat until melted & smooth. Remove from heat.
    Stir in vanilla and sugar. Add cereal Mixing lightly until well
    coated. Spread evenly in 13x9x2 inch pan. Chill until firm.
    Cut into 1 1/2-inch squares. Store in refr. 48 squares.

    ~*~Toffee Cookies~*~


    1 sleeve saltine crackers
    1 cup brown sugar, packed
    2 cups semi-sweet or milk chocolate chips
    1 c.Butter
    1c. finely chopped nuts

    Preheat oven to 400*. Cover a small cookie sheet with sides with foil; spray with Pam. Melt butter & brown sugar in a med. saucepan and cook approximately 3 minutes, stirring often. Place all crackers on foil. Pour sugar mixture on crackers and spread evenly. Bake 5 minutes. Mixture should boil but not burn. Remove from oven and sprinkle chocolate chips evenly on top.

    Set a bread board over pan and let set 3 min.Remove bread board .Spread choc.chips with spatula as frosting a cake. Sprinkle Nuts on top ,press slightly.Place in refrg. About 1 hour.Break into pieces.Store in refrg.

    **People can't Believe that this is crackers!
    I have also tried Butterscotch chips & peanuts.Semi-sweet chocolate & peppermint candies crushed.(that one is really good!)
    This is a must in my house to make :-)

    ~~~MOUND BARS ~~~
    This taste like that famous candy bar.ItÂs so good & easy!

    2 c. crushed graham crackers
    1/2 c. sugar
    1/2 c. butter, melted
    Mix together and bake in 9x13 inch pan in 350 degree oven for 7-8 minutes. Mix 2 cups coconut with 1 can sweetened condensed milk. Spread on top of baked crust. Bake 15 minutes. Remove from oven.
    Melt 1 (12 oz.) package chocolate chips . Spread on top.Cool then cut into bars.

    ~~Twix Bars~~

    this is very good! almost better than the real thing.

    35 unwrapped kraft caramels
    1/4 cup water
    1 box Lorna Doone shortbread cookies (40)
    2 bags milk-chocolate chips 12oz ea.


    1. combine caramels with water in small pan, melt over low heat.

    2. place the cookies side by side on ungreased cookie sheet.

    3. spoon a dab of caramel onto each cookie, then place all the cookies in the refrigerator until the caramel firms up.

    4. in the meantime, melt chocolate chips in double boiler or microwave heating 1 min on high, stir, then 1 more min.

    5. remove the cookies from frig. resting each cookie on a fork, dip into chocolate. tap the fork on side to knock away excess chocolate. place on wax paper and cool at room temp. this will take several hours but the bars will set the best this way. putting in the refrigerator for 30 min will speed up the process.

    ~~KIT KAT BARS~~
    (very rich,cut into small pieces)


    Ritz crackers (I used 3 sleeves)

    1 1/2 c. graham crackers, crushed

    3/4 c. brown sugar, packed

    1 c. white sugar

    3/4 c. butter (must be real)

    1/3 c. milk

    1 c. butterscotch chips

    1 c. semisweet chocolate chips

    3/4 c. peanut butter

    Put graham crackers, brown sugar, white sugar, butter and milk into a saucepan and bring it to a boil. Boil for 5 minutes.

    Spray a 9x13? pan with butter flavored cooking spray. Put a layer of crackers (I used one sleeve) in bottom of pan and pout 1/2 of the mixture over it. Put another layer of crackers and pour the remaining mixture. Add one last row of cracker.

    In microwave melt butterscotch chips, chocolate chips and peanut butter together I stirred every 1 (one) minute til nice and smooth. When melted, spread evenly over the top.

    After it has cooled a bit, score the bars. Then let cool completely. I put in the refrigerator. After set up, cut into bars and store in an airtight container. I store in the refrigerator.

    Coyote or Reindeer "Droppings"

    2-cups brown sugar

    1-cup butter or margarine

    1/2 cup white corn syrup

    1/2 teaspoon baking soda

    14-1/2 ounce package Cheetos OR**buy ONE 11 oz size of CHEESE PUFFS

    Bring the sugar, butter or margarine and syrup to a boil for 5 minutes. Stir often Remove from fire. Add baking soda. Stir. Pour over cheetos, and toss QUICKLY . ***i USED TWO 9 X 10, ALUMINUM PANS Bake at 250 degrees F. for 1 hour, stirring every 15 minutes. Pour out on waxed paper rubbed with additional butter or cooking spray. Quickly separate the Caramelized Cheetos ****I used the bottoms of TWO broiler pans that I sprayed, put gloves on, and quickly separated, so you won't end up with big globs. Let cool, IF YOU CAN BEFORE SAMPLING!

    Last year I didn't feel like cutting and dipping caramels so I made the caramel and did a few other things with it. I dipped pretzel sticks in it, then covered them in chocolate. I put a nice dab on some Lorna Doones then covered them in chocolate. I let the caramel set first of course. I also used that caramel to make South Seas cookies, a coconut macaroon dipped in chocolate on the bottom and caramel drizzled on the top. They were a big hit.

    I've made peppermint patties that went over great at a bake sale.

    Mashed Potato Candy.

    1 cup mashed potatoes (no salt)
    1 large pkg flaked coconut
    1 pound (about 3 cups ) powdered sugar

    mix well by hand.
    Roll in marble shape.
    Let stand several hours. (So they can dry out a little)

    Melt large pkg of chocolate chip or mint chips
    Add 1 tsp wax.

    Roll balls in chocolate
    Set on wax paper till chocolate hardens.

    (these taste a lot like Mounds candy.)

    (We like to use Andes Cream De Menthe baking chips too)

    Some great recipes here, will have to print this one out. Last year we made pretzels with Rolo candies. Very easy, and a big hit. We used the round pretzels and put a Rolo candy on top, melted them in the microwave for about 30 seconds and after cooling they are quite tasty.

    We also make "Haystacks" every year, similar to the birds nests, but we use butterscotch chips and chocolate chips melted and chinese noodles. There is twice as much butterscotch as chocolate. These are the kids favorites so I still make them, but when making trays for gifts I usually leave them off because the butterscotch is so strong that it overwhelms all of the other flavors of the cookies!
