Pecan Pie Cookies

For Cookies:

1 cup firmly packed brown sugar

3/4 cup butter, softened

1 egg

1 tsp. vanilla

2 cups all-purpose flour

1 tsp. baking powder

For Filling:

1 cup chopped pecans

1/2 cup firmly packed brown sugar

1/4 cup heavy whipping cream

1 teaspoon vanilla

Heat oven to 350Ã¯Â¿Â½F.

Combine all cookie ingredients except flour and baking powder in large bowl.

Beat at medium speed until creamy. Reduce speed to low; add flour and baking powder. Beat until well mixed.

Shape dough into 1-1/4-inch balls.

Place 2 inches apart onto ungreased cookie sheets.

Make indentation in each cookie with thumb; rotate thumb to hollow out slightly.

Combine all filling ingredients in small bowl; fill each cookie with 1 rounded tsp. filling.

Bake for 8 to 12 minutes or until lightly browned. Cool 1 minute; remove from cookie sheets.

Luckygardnr, I posted a recipe similar to that earlier this month. Don't they look like you could eat the whole batch in one sitting?

This looks like good football treats--why wait for the Kentucky Derby for hot browns?

KENTUCKY HOT BROWN BITES (Plain Chicken)

Mornay Sauce
1 tablespoon unsalted butter
1 tablespoon all-purpose flour
1 cup milk
Pinch of freshly ground pepper
Freshly grated nutmeg, to taste
1/2 cup coarsely grated GruyÃ¯Â¿Â½re or Swiss

Melt butter in a heavy-bottomed saucepan over medium-high heat. Stir in flour, and cook, stirring constantly, about 1 minute. (Do not let mixture brown.) Add milk, whisking constantly. Bring to a low boil, and cook, stirring constantly, about 2 minutes more. Season with salt, pepper, and nutmeg. Remove from heat, and stir in cheese. Allow to cool slightly.

Bites
1 can refrigerated crescent rolls
1 cup finely chopped turkey
1 cup mornay sauce
2 slices bacon, chopped
1 tomato, diced
1/4 cup grated Parmesan cheese

Preheat oven to 350 degrees. In a small bowl combine finely chopped turkey and mornay sauce. Lightly spray a mini muffin pan with non stick cooking spray. Unroll crescent rolls and press dough into one large rectangle. Cut rectangle into 24 squares. Press dough squares into muffin cups and shape up around the edges. Fill each muffin cup with some of the turkey mixture. Top each bite with some diced tomato, bacon and parmesan cheese. Bake 13-15 minutes or until lightly browned.

I am surprising my husband with this tonight. He grew up in Buffalo and this was one of his favorite meals.

1 pound diced ham
1 onion diced
margarine few spoonfuls
1 pound egg noodles cooked
4 eggs
1 quart of milk

Brown ham and onion in margarine

cook egg noodles
combine in casserole dish
eggs,milk and noodles blend until almost covered add ham and onions

Bake at 350 for 30 to 45 minutes
mix at least twice while baking

Harry wants me to make this. You can buy lemon curd but I saw it being made on Nate Berkus the other day. Sure is easy enough to do at home. LEMON COCONUT POKE CAKE (Taste and Tell) 1 (16.25-oz) white cake mix 1 (14-oz) can sweetened condensed milk 1 (15-oz) cream of coconut (usually found with the drink mixers) 2 cups lemon curd 1 (16-oz) container frozen whipped topping, thawed (such as Cool Whip) 2 cups sweetened coconut Prepare the cake according to package directions. While still hot, poke holes through the top of the cake with a skewer. In a bowl, mix together the sweetened condensed milk and cream of coconut. Pour over the warm cake. When the cake has cooled, spread the lemon curd over the top of the cake. If not serving right away, refrigerate. When ready to serve, top with the Cool Whip and then sprinkle with coconut. LEMON CURD (Nate Berkus website) 3/4 cup granulated sugar Grated rind and juice (1/3 cup) of 2 lemons 1/2 cup butter 3 eggs, beaten Put all ingredients in the top of a double boiler, over hot water. Stir until mixture is well blended and begins to thicken. This takes only a few minutes; it will continue to thicken as it cools. Pour into hot, sterilized jars and seal, or into scrupulously cleaned jars for refrigeration or freezing. Makes 1-3/4 cups

I want to try every recipe posted today. Georgysmom, your white gazpacho sounds good. The recipes I've read have white grapes added, which seems odd to me, but maybe it's good. I think I like yours best. Jude, I had the Parade magazine in front of me ready to post the wild rice recipe. Doesn't it sound good? Luckygardnr, I've never made polenta because I've heard it's just like grits (which I love). But I'm going to make your recipe when our granddaughter and her DH come next month. In fact, I think I'll make all three recipes. Thanks for the menu help, guys!! This is more of a cool weather dish, at least for us. CREAMY CROCKPOT SPAGHETTI (Picky Palate) 1 pound lean ground beef 1/2 teaspoon kosher salt 1/4 teaspoon freshly ground black pepper 1/4 teaspoon garlic powder or salt 3 jars 26 ounce pasta sauce 1 pound spaghetti noodles 1/2 cup Parmesan Cheese 4 ounces cream cheese 1-2 cups chicken broth 1. Cook/brown beef into a medium skillet over medium heat until crumbled and browned Season with salt, pepper and garlic powder. Drain fat from pan if necessary. 2. Pour one jar of pasta sauce into bottom of crock pot on high heat. Break spaghetti noodles in half and place noodles over sauce. Pour cooked beef over noodles, sprinkle with Parmesan cheese and top with cubes of cream cheese. Pour another jar of pasta over cream cheese, close lid and let cook on high for 3 hours. After 3 hours, give a good stir (will be thick) and add last jar of pasta sauce and 1-2 cups of chicken broth (more if you want a thinner sauce). This was what I was going to make the other night, but found out my puff pastry was shells instead of sheets. Guess what's on my grocery list? SALMON IN PUFF PASTRY (Parade Magazine) 12 ounces pastry puff sheets, thawed if frozen 2 (6 to 7 ounce) salmon fillets 2 tablespoons fresh parsley, chopped 2 tablespoons fresh basil, chopped 3 tablespoons unsalted butter, softened salt (to taste) freshly ground black pepper (to taste) 1 egg, lightly beaten Preheat the oven to 400 degrees. Using a rolling pin, roll the pastry into four pieces, each about 5 by 8 inches. Transfer two pieces to a large baking sheet lined with parchment paper. Remove the skin from the salmon and place a fillet in the center of each of those pieces. In a small bowl, combine the parsley, basil and butter. Stir until the herbs are thoroughly mixed in. Season with salt and pepper. Spread the butter mixture on top of the salmon. Dip a pastry brush into the beaten egg and let the excess run off. Brush the edges of the pastry around the salmon with the egg. Cover each piece with the remaining puff pastry. Pinch the pastry together firmly to seal, then lightly press the tines of a dinner fork along the edges for a decorative effect. Brush the top of the pastry with the remaining egg. With a sharp knife, cut two small slits into the top of each pastry so the steam can escape during baking. Bake for 20 minutes or until the pastry has risen and is crisp and golden. BEEF STEW WITH BACON (Williams-Sonoma) (Slow Cooker) 4 oz. thick-cut bacon, chopped 3 Tbs. flour 1 tsp. salt, plus more, to taste 1/2 tsp. freshly ground pepper, plus more, to taste 3 lb. boneless beef chuck, trimmed of excess fat and cut into chunks 3/4 lb. fresh cremini mushrooms, halved if large 1/2 lb. baby carrots 1/2 lb. frozen pearl onions 3 garlic cloves, minced 1 cup dry red wine 1 cup beef broth 2 Tbs. tomato paste 1 Tbs. minced fresh rosemary In a large fry pan over medium heat, cook the bacon, stirring occasionally, until crisp, 5 to 7 minutes. Transfer the bacon to paper towels to drain. Pour off the drippings into a small heatproof bowl, leaving about 1 Tbs. drippings in the pan. Set the pan, reserved drippings and bacon aside. In a sealable plastic bag, combine the flour, the 1 tsp. salt and the 1/2 tsp. pepper. Add the beef chunks and shake to coat evenly with the flour mixture. Return the fry pan to medium-high heat. When the drippings are hot, add half of the beef chunks and cook, turning once, until well browned, about 5 minutes on each side. Transfer the beef to the slow cooker. Repeat with the remaining beef chunks, adding the reserved drippings if needed. Scatter the mushrooms, carrots, onions and garlic on top. Return the pan to medium-high heat and add the wine, broth and tomato paste. Mix well, bring to a boil and deglaze the pan, stirring to scrape up the browned bits on the pan bottom. Pour the contents of the pan over the vegetables and beef. Cover and cook on the high-heat setting for 4 to 5 hours or the low-heat setting for 8 to 9 hours. The beef should be very tender. Stir in the reserved bacon and the rosemary. Cook, uncovered, on the high-heat setting for 10 minutes more to thicken the sauce slightly. Season with salt and pepper and serve. Serves 6.

These are really tasty and since I have a lemon tree bearing fruit all year long, I make these a lot. Easy and no artificial ingredients.
Here is the Lemon Brownies recipe......

Preheat oven to 350 degrees F. Use 9X13 inch pan.
Brownies
1.5 cups flour
1.5 cups sugar
1 cup real butter- room temperature
4 eggs- room temperature
juice from half a lemon....I use over 1/4 cup
zest from one lemon
(1 tsp. baking powder) I use it but can be left out.

Glaze
1 cup powdered sugar
2 Tablespoons fresh lemon juice and zest as desired. I use lots.

Grease and flour pan.
Put dry ingredients into a bowl. Add butter and mix. ( I use food processor and just pulse it a few times.)
Stir together eggs, juice and zest and stir into batter. ( I use food processor for this, too.) I don't over mix it.
Pour into prepared pan and bake for 30 minutes or until set.
Original recipes call for cooling the brownies before mixing up glaze but I mix it up after removing from oven and add mixed glaze while still very warm.
