Here is my version of broccoli cornbread...yummy

I wish for the life of me I could remember who posted that broccoli cornbread recipe. It has onions, broccoli, eggs, butter, salt and cottage cheese in the recipe. Sure is good. We had it with pork loin, white acre peas, country fried corn, sweet potato souffle, and sweet peach tea. Plus the broccoli cornbread. Yummy. No room for dessert, and I didn't make any either. Sorry pic is so dark...

Broccoli Cornbread

1 cup fresh broccoli or 1 10 oz pkg frozen broccoli
1 pkg Martha Washington (Cotton-pickin') cornbread mix
3 eggs
1 stick butter, melted
1 med onion, chopped
1 cup cottage cheese
1 tsp salt
Cook broccoli until tender, drain. Beat eggs, cottage cheese and salt together and add cornbread mix, butter onions and broccoli.
Pour into a greased 9 inch square pan and bake at 400 degrees for 25 minutes or until lightly browned.

When broccoli gets stressed, it crops early. The minature florets you're seeing are your "main" crop. All you can hope for now from these plants are side shoots, and given the size of the plants, these will be tiny as well. If you can get starts that are the proper size, I'd definitely be replacing what you have with them. If all the starts you can get are as badly overgrown as what you have, I'd be planting something else, and hoping for better luck next year... Cheers, Tim

I have always had a problem with worms in my broccoli.I live in Southern Pa. Zone 6? I am not real experianced, not sure if my info is accurate. Hope I can get some feed back from here. I didn't want to use BT because I don't like to have to keep applying. I wanted to try something I wouldnt have to keep after so to speak. I grew some indoors and planted them around April 1, and also direct seeded some about the same time. I got some row covers and put them on when they were a nice size but before I started seeing cabbage moths. I have about 12 plants at different stages. I have a few that are starting to produce the broccoli head. About 2" - 3" across. They seem to be maturing later than last year. Not sure if that is because of the row covers or just weather/growing conditions. I guess I wont know if this works or not till harvest time.

I like version 2 of your 3x6 beds. I hope the peppers are on the south side of the bed because the tomatoes will grow much faster and be these huge plants while the peppers will be slowly coming along. I have had many pepper plants wasted because they became dwarfs in a tomato forest. It looks like you are going to force the tomatoes to grow vertically rather than spread out. You can get more varieties in the bed that way, though you will have to aggressively prune and have a way to support 7 foot plants. Another way to go would be to use determinant varieties that would live more peaceably with their bed-mates and be less work. I think your 4x10 beds should be fine for tomatoes. They might grow a bit slower, but especially as they get big they will be in a position to take advantage of all available light. Maybe the bigger issue would be what would they be shading as they get big? For your herbs - think of what you like to cook with. I always need lots of basil and will have several different kinds. You might consider marjoram as an addition that you can use instead of oregano when you prefer something a bit sweeter and milder.

I've never made broccoli salad before but this thread inspired dinner tonight. I had some fresh broccoli crowns which I cut down into tiny florets, red onion, sunflower seeds, dried cranberries. I didn't have any of Jinx's tortellini but I had some leftover vermicelli (rough chop) and shredded some extra sharp cheddar. Sort of a deconstructed tortellini. I'd wondered if that would muck things up, but they were good additions. I would have loved to have added bacon, but I'm out, so I added some spicy BBQ sauce to the mayo that brought smoke, sweetness, and umami. A little honey and cider vinegar. S&P. It was delish! So much chewiness and crunch. I gotta make this more often.

That is the recipe I used, Sue. I looked for that cornbread post but could not find your broccoli corn bread post. I was going to supply a link. Thanks..I could have gone downstairs to the kitchen and retreieved the recipe but I am lazy. LOL Thank you so much for posting that recipe...It was delicious, and my husband was the one who LOVED the cottage cheese in it. He will not eat cottage cheese unless it is cooked. I like the way the cottage cheese gave the cornbread a moistness. Thank you, it was sure a hit!! Leftover cornbread will make a good snack...LOL

That sounds good but we don't get anything Martha Washington here. Can anyone tell me what is in it? I assume flour and cornmeal but what else and in what measurement? Pat

I think any small box of cornbread mix will do. Just substitute for White Lily, then go by Sues' recipe. That is what I would do. Someone else may have a different suggestion that is a good one. (I am not so sure I would use Jiffy cornbread mix, as Jiffy is too sweet, and more cakey than this recipe)

* Also, if I didn't have either I would use a cornbread mix in the larger bag and place all ingredients in except the cornbread mix and then add enough to where I thought the consistency was right. BUT, that is me...I have had to substitute in recipes alot(grocery store is so far) so I make do, and 9 x out of 10 it turns out good.

All of it sounds good to me except for the cottage cheese. I can't stand it. Do you taste it in the cornbread?

No you don't really taste the cottage cheese in the cooked cornbread. It just gives it a moister taste. But, I like cottage cheese. Now my husband Hates cottage cheese, but he LOVED this recipe with the cooked cottage cheese. He said he like it better than regular cornbread, so I am going to start using this recipe for our cornbread but leave the broccoli off unless I want it in there. It is just a better tasting cornbread. I don't think I will use it for my cracklin' cornbread recipe, though. I was thinking of ideas, and I think you could substitute the broccoli for corn, green tomatoes, or bell peppers. I think either of those would be worth a try....That is what I am going to experiment with anyways...LOL. But that is just me....LOL
