You know, I think our traditional Thanksgiving meal is about as close as we get to indigenous food, right? The wild turkeys were here when the first Puritans arrived. The native Americans were raising corn and squash and beans, I think, and sunflowers as well, which was a major vegetable protein source for them via the seeds which are easy to preserve. Cranberries are native in some parts of the country, and so is wild rice. So, all those ingredients are more or less indigenous American foods. Maybe one problem is that our nation is so large geographicaly, so we do have more regionalized "America food" depending on what foods are readily available in each region instead of a well-known "American" cuisine. For example, if you grew up in Boston, you might argue that lobster and Boston baked beans are true American cuisine, but if you grew up in Georgia or South Carolina, maybe you'd insist it was barbeque, baked beans, cornbread and grits. I was thinking about what kind of native food a forager would find growing naturally here in Oklahoma....there's wild game, of course, and wild blackberries and wild grapes here in southern OK, and some of you probably have wild huckleberries or currants in some eastern parts of the state that we don't have here. Here in southern OK, we have the wild prickley pears (you can make jelly from them) and native pecans and walnuts, and persimmons. There's also several kinds of wild plums, and you can fish in the Red River for catfish. Dorothy, I think I am going to grow peanuts next year so we can make our own peanut butter without all the additives. I remember having a Mr. Peanut machine when I was a little kid....you put the peanuts in his hat and turned the handle and got peanut butter (a peanut paste probably would be a better description). It was simple, so it seems like it'd be simple to make homemade peanut butter in the food processor or blender. Carol, I love all those old Southern Living recipe books...they are my kind of cooking! Another great cookbook full of old-style southern cooking is Fannie Flagg's Original Whistle Stop Cafe Cookbook, which came out at about the same time that her book, Fried Green Tomatoes at the Whistle Stop Cafe, was made into the movie of the same name. If my grandmother and southern aunts had written a cookbook of the foods they prepared their entire lives, it would have been very, very similar to Fannie Flagg's cookbook. Dawn

Nanny wrote: "So, when Natal, or I, or someone else added those cranberries or nuts to their recipes, it was not to disobey your request, but to show others how their recipes were prepared. It's very easy to omit ingredients from any recipe, which is what I presume these women expect you to do." Thank you for replying, I wasn't going to come back into the topic but it's been bothering me all day because all I did was jokingly say "Ick" to a food I don't like. What I notice here is that others have made rude comments about Miracle Whip, a food *I* use, but were they called out on their "rudeness" to me? No. Why is it ALWAYS me, especially when I go out of my way to let you all know I'm laughing, just as I would if you were sitting before me. I'm not laughig AT you, I'm laughing at an ingredient in food! I have to disagree with you about people adding the ingredients that I specifically asked NOT to be added. Just as everyone goes into other's topics and apologizes for "hijacking" it, this was MY topic, and MY question. I'm not saying this to be mean, but I was the one who wanted some recipes which do not use fruits and nuts. Unless it was a fruit salad. :) So yes, when I get a reply I expect it to be for ME, and others are more than welcome to chime in. It's no different than if you did a topic on the other forum asking for painting advice on any color EXCEPT black, and everyone replied showing you their black rooms. lol. So I don't see how it was wrong for me to RME when I got the recipes with fruits and nuts. When we do a topic asking a specific question, should others reply for the sake of themselves, or to answer the OP's question? Lastly, I cannot believe how the word "Ick" offended others when no offense was meant at ALL. You all don't know me, but I'm known as the "Peace maker". Sure, I get my feelings hurt just like everyone else does, and I hate arguments especially if they're so trivial as me laughing and saying "Ick." I find it extremely rude to correct people on something so minor especially when it's obvious there was no intent on insulting anyone. I said it good heartedly. Just as I said the word "Yankee." Others have been calling themselves Yankees on this board all the time, but when I say it, it's considered offensive? I just get the feeling that some people here, but not all and just a minority, love to nitpick and bicker with others ad nauseum. We were having a fun and fascinating conversation about sandwiches and Miracle Whip vs. Mayonaise, until... I even found a place that sells the Mayo the "southerners" here like that I can order it online. Now, as far as being southern, I think I said this before. Both of my parents were born and raised in southern Virginia, and moved here to Oklahoma after they married. My father is a graduate of VA. Tech. Every single person in my family except my brother and myself are from Virginia. My uncle had a tobacco farm. I grew up with parents dipping cornbread in Buttermilk. ICK!!!! lol. See? I'm laughing about it, I still laugh at it to my mom when she does it! It's not a derogatory term because it's FOOD. But if you were to serve it to me, I'd be polite and eat it and if I didn't like it, you'd never know. Talking about food tastes is one thing and to turn it into nasty, nasty personal insults is another. Which I know you didn't do. I do however take offense because you are insinuating I am not "sophisticated" because I don't like fruit and nuts in my sandwiches. What? You have no idea what I eat. BTW, if anyone even cares at this point, I decided to make some Vegetable Bars and Tuna Salad finger sandwiches. :)

You can find lots of variations on this red kidney bean curry online at Indian cooking sites, etc. This is the only recipe I can vouch for. Mixing up just the right balance for a curry I'm finding is very difficult. Also, for some reason I am just much more in love with the flavors of the Mediterranean. Here's another recipe I make in the crockpot. It is a soup, but pretty thick. Black Bean Soup with Red Paprika Sauce 1 lb. dried black beans, soaked overnight and drained. 8 cups water or broth (I always use mild veggie broth) 2 chopped med. onions 2 ribs celery 2 cups chopped tomatoes 2 TBLSP paprika 2 tsp. ground cumin 2 bay leaves 1/2 cup cilantro 1 cup corn Simmer beans and veggies until beans are soft. Then add tomatoes and spices and cook a couple hours more. Add the red paprika "sofrito" after the soup is done, just before serving. Do not add peppers to the dish while it's slow cooking, because peppers get bitter made in a slow cooker. I basically throw in everything except the tomato into the crockpot, add the tomatoes towards the end, and then when it's finished I stir in the Red Paprika Sauce. Yummo! Part of the charm of this soup comes from having good paprika on hand. If you miss a smokey taste in your black bean soup you can throw in some chorizo or ham or something. Being vegetarian, I sometimes add a tiny dash of fake bacon bits. Or fake sausage. But this soup I like plain. Red Paprika Sauce 2 TBLSP olive oil 1 large red pepper, diced 3 scallions, minced 2 tsp. paprika, or less, to taste 2 tsp. salt 2 TBLSP lime juice Sautee the peppers and onions in the olive oil and add the paprika, salt and lime juice at the end. Stir into the black bean soup. That's what gives this soup its yumminess, the addition of this fresh herb sofrito at the end. Here's another one that is easy and hearty, but I don't make it because it takes me so long to eat it up. Bean Cornbread Crockpot Casserole from vegetarian.about.com Serves 6 1 med. onion, chopped 1 med. green pepper, chopped (add at the end to the crockpot) 2 cloves garlic or 1/4 tsp. minced garlic powder 1 16 oz. can of kidney beans 1 16 oz. can of pinto beans (I'm not a pinto bean fan so I probably would use black beans) 1 16 oz. can chopped tomatoes 1 8 oz. can tomato sauce 1 tsp. chili powder 1/2 tsp. black pepper 1/2 tsp. prepared mustard 1/8 tsp. hot sauce or chopped jalepeno to taste Cornbread topping to be added at the last 1.5 hours of cooking. 1 cup yellow cornmeal 1 cup all purpose flour 1 1/2 tsp. baking powder 1/2 tsp. salt 1 TBLSP sugar 1 1/2 cups milk 2 eggs 3 TBLSP veg. oil 1 can cream style corn (8 oz. can) Lightly grease crockpot. Add bean chili ingredients except peppers. Cook 8 hours on low. Add peppers and cornbread topping for the last 1.5 hours. Cook on high for the last 1.5 hours. (Directons sound kind of confusing but I think this is one of those "throw it in the crockpot and go to work and have dinner ready when you get home" recipes. So basically cook the bean chili all day on low in the crockpot, and when you get home make the cornbread topping and add the peppers. I'd sautee the peppers.) But I don't cook at all on the weekdays, so I made this on the weekend and adjusted the times accordingly. I cook the chili for 5-6 hours on low, then add the cornbread crust and the sauteed peppers, finish it off, and have it for Sunday dinner. And Monday, and Tuesday, and Wednesday, and Thursday, and Friday. Which is why I don't make this often!

Peppi, I haven't had time to make this yet either, but I am going to use your idea of mixing the paprika too. I like a little buzz to my food, and so does my husband. My mother in law seems to just be fussy no matter what, so if she doesn't like it with some zip, I'll make her a peanut butter and jelly sandwich or something. woodie, I LOVE the idea of serving this over spaetzle! We could eat spaetzle until the cows come home! What a terrific way to have this. My husband hates sour cream and would literally gag I think if he ever had to eat a spoonful of the stuff, yet.. YET! He loves my potato salad, my mashed potatoes, beef stroganoff, and allllll sorts of other things that have sour cream in them, even to the point of being a main ingredient! I make a fruit dressing that is ALL sour cream, grand marnier, and a little brown sugar, and he thinks the stuff is manna from heaven.. and has NO idea it is sour cream! He hates mayonnaise the same way. I think it is a mind set and not a tongue thing in his case. I would be interested in trying the smokey paprika too. I use lots of paprika in a rub recipe that I think would be wonderful to try the smokey stuff! And, adding it to goulash might be nice too! I have never seen it though, so, I wonder if I LOOKED for it, if it was always there! I JUST found and have been buying Hickory Smoked Salt for goodness sakes! LOL I am a late bloomer I guess!
