Here's one of my favourite Spanish dishes - Although I have been making it for years the way a Spanish cook once showed me, this time I followed the preparation seen recently on a Spanish Cooking TV channel. Their ingredients included a small piece of or pork fat and a stewing chorizo (chorizo para guisar). If choosing a chorizo for this dish, be sure it is the right type which has the red pimiento colour. The small piece of tocino can be seen just to the right of the sprig of rosemary. Stewed Lentils (Lentejas Estofadas) 350 grams (1 1/2 cups) of small dark lentils - put them to soak the night before in water to cover 100 grams (3.5 oz) red stewing chorizo sausage - lightly pricked over with tines of a fork 50 grams (1.7 oz) salted tocino pork fat - cut into large diced pieces 1 TBSP flour 2 carrots diced fine 2 medium leeks, using only white stems sliced finely in rounds 1 lg clove garlic (this was optional but I wouldn't leave it out) - pass through garlic press 2 cups beef broth (I used 2 Knorr cubes) 1 bay leaf fresh rosemary - small sprig olive oil - about 1/4 cup 2 cups extra water to add after 1st hour 1. Soak lentils the NIGHT BEFORE in water to cover. * Note this if now often unnecessary with newer fast cooking lentils. 2. Next day drain and rinse lentils, put aside. 3. Heat olive oil in heavy cooking pot. When sizzling, add carrots, garlic and leeks. Lightly brown while stirring. 4. Add 1 TBSP flour and keep stirring for about a minute. 5. Add lentils, beef broth, whole chorizo, tocino, laurel and rosemary 6. Put on lid and simmer very gently for 1 1/2 - 2 hours. Check after 1st hour and add up to 2 more cups water as needed. 7. Adjust seasoning and serve. ***************************************** Lentil & Potato Potaje (Potaje de Lentejas y Patatas) 3 cups of presoaked lentils 4 medium potatoes - cut into large dice 2 slices of stale bread 3 cloves garlic vinegar salt Put lentils in large pot, cover with water and begin to boil. As soon as lentils have begun to cook do the following: In a frying pan with 1/2 inch of oil brown the garlic and then add the bread and fry until brown. Remove garlic before it's too dark. Put browned bread and garlic into a mortar and grind to a paste. During the early part of cooking the lentils add the paste from the mortar to the lentils together with the oil that's left in the pan After about half an hour and before lentils are tender, add the diced or quartered potatoes, salt and finish cooking until all is tender. Check and correct salt and a dash of vinegar before serving. Source: A cook friend from Mallorca. *************************************** LENTIL & VEGETABLE SOUP Ingredients: lentils - 250 grams (slightly over 1 cup) garlic - one whole head onion - 1 large - quartered Kasseler smoked pork chop - 1 large (or 250 grams other smoked pork or bacon) ham or pork bone as for making stock 4 medium carrots - sliced into coins 2 stalks celery - diced 5 medium potatoes - peeled and cut into 8ths 6 flowerettes of cauliflower green beans - handful sliced tomato puré - small 4 oz tin olive oil - 4 TBS fresh garden herbs: 1 bay leaf, several sprigs thyme, Italian flatleaf parsley 2 or 3 sprigs chicken stock 1 liter (4 cups) or water and 3 Knorr chicken stock cubes salt & fesh ground pepper water to cook lentils vinegar - 1 teasp garlic croutons - optional garnish Method: 1) Turn on oven to 350F. Put lentils in large heavy bottomed stew pot with water to cover plus about 2 inches, bring to boil and simmer 45 minutes. Check water level and add more as needed. 2) Meanwhile put whole head of garlic into shallow baking pan together with quartered onion, Kasseler or smoked pork and ham or pork bone, drizzle with olive oil and roast in oven at medium heat about 45 minutes. 3) Remove baking tray from oven when all is nicely browned and cut meat into small dice and add to lentil pot along with onion. Squeeze garlic from skin into lentil pot, adding ham/pork bone along with oil and juices scraped from roasting pan. 4) Add rest of vegetables to lentils, chicken stock (or water and stock cubes), tomato puré, fresh herbs and bay leaf, parsley - reserving one sprig, fresh ground pepper. Bring to boil and simmer about 1 hour until vegetables are done, adding more water if needed. 5) When vegetables are tender, remove ham/pork bones and any bare thyme stems from pot, check for flavour and add salt as needed. Add vinegar and stir. 6) Serve with a bit of chopped parsley and more fresh ground pepper. Homemade garlic croutons are also nice as a garnish. Source: Recipe as I learned from a Mallorquin housewife years ago. ******************************* Lentil Purée Convert leftover stewed lentils into a delicious purée by putting them into a food processor and adding the following: 1 1/2 cups of chicken broth 2 lg cloves of garlic crushed and browned in 1/4 cup oil in small frypan 2 slices brown bread broken in small pieces and fried in the garlicky oil until brown Processed the above until smooth and then heat it gently. Dice more pieces of brown bread and toasted them in the frying pan with oil and garlic salt for the croutons. SharonCb

My Murgh Makhani is adapted from Madhur Jaffrey's recipe in her Indian Cookery book. It starts with freshly made tandoori chicken, which I kind of cheat when making, starting with a ready-made masala I buy at my local Indian grocer. Tandoori Chicken: Combine 2 tbsp tandoori masala with 2 tbsp plain (really plain - no gelatins or other weird ingredients) yogurt, 2 tbsp lemon juice, and 2 tbsp veg oil and marinate 1 kg skinless chicken parts for at least 6-8 hours. Cut gashes into the chicken flest and rub in the marinate for maximum infused flavour. Grill over hot coals until done OR bake on a rack in a 450F oven for about 30 minutes. Murgh Makhani: 1 recipe freshly made tandoori chicken 4 tbsp tomato paste + enough water make 1 c. 1 cubic inch of fresh ginger, peeled and finely grated 1 1/4 c. 10% cream 1 tsp garam masala 3/4 tsp salt 1/4 tsp sugar 1 fresh hot green chili, finely chopped 1/4 tsp cayenne, or to taste 1 tbsp chopped cilantro 4 tsp lemon juice 1 tsp ground roasted cumin seeds Combine these ingredients and mix well. This can be prepared in advance and refrigerated until needed. When chicken is ready, heat 1/2 c unsalted butter in a saute pan. Once melted, add the combined liquid ingredients. Bring to a simmer and cook on med heat for a minute or so, whisking in the butter. Add the still-warm chicken pieces, and serve as soon as everything is heated through.

Chicken breasts are really not suitable for braising. You might get away with it if you are very very careful not to over cook, but a little too long in the braising liquid and you will have something tough and stringy instead of the tender delectable meat you would have if you used chicken thighs. Braising is a wonderful technique because it makes tender out of tough and is pretty well care free....brown the meat on the stove top, toss in some liquid and something flavorful, cover and put it into a slow oven for..."some" time...the time is not critical it can cook longer is dinner is delayed. but not chicken breasts. After browning, you might want them to oven cook with some white wine and onions and sliced red peppers....for about 25 minutes, which is not really enough time for the vegetables to be cooked to the flavorful mush they are supposed to be. Brown your chicken breasts on the stove top, brown the skin well, in just a touch of butter...the fat will soon cook out of the skin. Then for 2 half bone in breasts add about 1/2 cup of white wine...a moscato works well for this, let that simmer up then add 1/2 cup of apricot preserves that you have stirred up with 2 tsps of soy sauce, pour over the chicken, put on the lid and turn the fire way down and let simmer until the meat is no longer pink in the thickest part....should take about 20 to 25 minutes. Then remove the chicken to a platter, turn the heat up on the braiser and let it reduce a bit....spoon the sauce over the chicken. Linda c

Ingredients: 9 oz (250 grams approx) *shaved dry brown bread 6 garlic cloves 6 fine stalks spring onions 1 small cabbage 2 medium size ripe tomatoes fresh Italian parsley 1/2 cup good quality olive oil 1 teaspoon red sweet pimento powder (paprika) salt water * Note: this refers to a type of local bread often used in soups (sopas) as a way of using up stale bread. It's a round, flat and heavy tan-coloured dense country bread loaf which is sliced crosswise paper thin, the cut pieces having a half-moon shape and being as thin as a slice of salami. (An electric meat slicer does the job well if you can find a heavy loaf of brown country bread.) Method: Heat the oil in an open, shallow casserole dish and add the peeled garlic cloves; remove them when browned and set aside. Add the finely chopped spring onions to the oil and when lightly golden add the finely chopped cabbage. Stir fry together then add the pimiento powder and enough water to cover all. Mash the browned garlic cloves in a mortar and pestle, add a little water to dilute the paste then add to the casserole. Season with salt and cook until tender at a low heat on the stove top. Then add the bread slices, scooping up the cabbage mixture and piling it on top of the bread to sink it down. Let return to a boil and remove from the stove. This soup is usually brought to the table and served out of the same casserole. I don't have a photo of the finished product but I do have my Mallorquin clay casserole which is what is normally used. (photo of dish with another recipe in it) I brought mine from Mallorca 20 years ago and whatever comes out of it tastes wonderful. It works equally well in the oven or on an open gas flame. Baked Lettuce & Cheese (Lechuga al Queso) ----------------------------------------------------- For 2 persons: 2 heads of lettuce 4 TBS butter 4 TBSP grated cheese salt, white pepper and water 1) Remove damaged outer leaves from lettuce, wash and put in saucepan in boiling salted water. Cook 10 minutes. 2) Remove from pan and rinse under cold water. Drain. 3) Cut each lettuce in two lengthwise, fold the pieces in half and place them in a buttered baking dish. Sprinkle with pepper and cheese and dot with the rest of the butter. 4) Put the dish in the oven for about 5 minutes and serve the dish at the table. Source: 'Cocina Balear' - Ana Maria Calera Spanish Poor Man's Style Potato Casserole -( Patatas a Lo Pobre) ------------------------------------------------------------------------------- Serves 5 as a side dish: 2 lbs potatoes 1 onion 1 small green pepper 1 small tomato, sliced 1/3 cup olive oil 2 cloves garlic, chopped 2 TBSP chopped parsley 1 bay leaf 1/4 teasp thyme 1/4 teasp sweet paprika (or saffron) 1/4 cup white wine 1/4 cup water salt & pepper 1) Peel potatoes and slice fairly thinly. Peel and slice onions. Cut peppers in strips. 2) Pour a little of the oil into the bottom of a flame-proof earthenware casserole or oven-safe pan. Arrange alternating layers of potatoes, onions, green peppers and tomato slices, sprinkling each layer with some of the chopped garlic and parsley. 3) Break the bay leaf into pieces and tuck them among the potatoes with the thyme. Sprinkle with the paprika and pour over the remaining oil. 4) Place the casserole on a medium heat just until potatoes start to sizzle. Add the wine and water. Season with salt & pepper. 5) When the liquid comes to a boil, cover the casserole and put in a medium oven (350F/180C) until potatoes are tender, about 45 minutes. Let the casserole rest 10 minutes before serving. Adapted from: 'Tapas and More Great Dishes from Spain' - Janet Mendel Fresh Garden Peas with Lettuce -------------------------------------- 1 large onion, sliced 1 young lettuce, broken into largish pieces 1/2 lb fresh peas butter sugar - about 1 TBSP salt & pepper 1) Sauté a large sliced onion in a little butter, then transfer to a large saucepan, add lettuce and shelled peas. 2) Add a little more butter, salt & pepper to taste and the sugar. Mix well and add a little water. Bring to the boil and then simmer very slowly with lid on, until peas are tender, about seven minutes. Source: 'The Bar we Found' - Anne Oates - Palma de Mallorca 1972 Danish Style Cauliflower and Cheese Sauce ---------------------------------------------------- 1 large white cauliflower 1 TBSP butter 1 TBSP flour 2 cups milk 2 egg yolks 1 cup grated cheese sugar, salt breadcrumbs 1) Boil the cauliflower until nearly tender. Drain and place in a baking dish. 2) Make a white sauce with the butter, flour and milk. Stir in the egg yolks and then the grated cheese. Season with sugar and salt. 3) Separate the cauliflower into pieces and pour over the sauce. Sprinkle with breadcrumbs, dabs of butter and place in hot oven. Bake until golden brown and serve. Source: 'The Bar we Found' - Anne Oates - Palma de Mallorca 1972 Curried Potato Salad ------------------------- 6 large potatoes 1 cup tart French dressing 4 hard boiled eggs chopped onion chopped celery chopped green pepper salt heaping TBSP curry powder 1) Boil potatoes in their jackets. When cool enough to handle, remove skins and slice potatoes into large bowl. 2) While still warm, coat slices with French dressing which has been mixed with the curry powder, and leave to penetrate while the potatoes are cooling down. Then add other ingredients and mix them in lightly taking care not to disturb the shape of the potatoes. 4) Crisp in the refrigerator before serving. But it's a very simple dish which I used to see in Mallorca in small family restaurants and still see today on restaurant menus. I also made it when my girls were small. For three people: 3 ripe bananas 3 eggs rice - three servings tomato sauce or puré - about 1 cup S & P oil or butter 1) Boil the rice until tender in salted water. Drain. 2) Split the bananas lengthwise and sauté gently in butter or oil. 3) Heat the tomato sauce. 4) Fry the eggs in butter or oil keeping yolks runny. 5) Arrange the rice in the centre of each plate, with a banana half on each side, cover the rice with an egg and pour sauce over top. Add salt & pepper. Poached eggs instead of fried are also good. ************************ This is one of those 'survival'-type dishes - it is now served in some of the top restaurants of the Balearic Islands. It's so easy to make as well. Vegetable & Bread Stew from Mallorca - This is a much loved hearty meatless peasant dish from the Balearic island of Mallorca. Although called 'sopas' or soup, it is actually a stew-like combination of available winter vegetables such as chard, cabbage and cauliflower cooked in water, oil, garlic, paprika and salt, which is then poured over thinly-shaven slices of dry salt-free country bread - called sopas - which are a day or two old. These thin bread slices are available in nearly every corner 'colmado' - as the small neighbourhood grocery stores are called. Those who have grown up with sopas Mallorquinas on the table will probably always look forward to having it again, and again. You can prepare this dish and have it ready in less than an hour. Ingredients for 4 persons: 1/2 lb (200 grams) of thinly shaven slices of country bread (Website showing photos of loaf). A dense country-style bread is needed for this and it should be stale, dry and sliced paper thin. - about 8 young leaves & stems - roughly chopped small cabbage - Chinese cabbage if possible - roughly chopped 1 onion cut in julienne handful of - roughly chopped - (quantity as in foto) cauliflower - a few florets broken in pieces 1 ripe tomato, peeled and diced 2 teasp sweet paprika powder 4 TBS olive oil 2 green peppers - cut in large dice 2 - 2 1/2 cups water optional: chicken stock cube salt fresh ground black pepper 4 cloves of garlic, peeled and crushed 1) Put the oil in a shallow flame-proof earthenware or ceramic casserole (eg Corning Ware or similar). When oil is hot, add the onion, green pepper and garlic. Saute without browning. 2) Add the tomato and the large diced vegetables. Sweat the vegetables and blend in the paprika powder. Season with salt & fresh ground pepper. 3) Add the water and let simmer gently for about 15 - 20 minutes, then taste to check seasoning. (Note: After pouring in the water I added a Knorr chicken stock cube, broken up and scattered over top.) 4) Once vegetables are tender, turn off stove, remove them from the pot with a slotted spoon and transfer them to a warm bowl, leaving the broth in the casserole dish. There should be about an inch of broth. 5) Arrange the thin shaven slices of dry bread over the bottom of the casserole dish so the broth is totally absorbed, and put the vegetables back in the casserole on top of the bread. Let rest for at least 15 minutes before serving at the table. 6) Serve at the table in the same earthenware casserole dish. NOTES: The bread used in this recipe is typical to Mallorca and is a simple bread made of unbleached partially whole wheat flour, water and yeast. It is therefore dense and able to absorb the broth without becoming mushy. There are many variations of 'sopas mallorquinas' as the ingredients depend on what is available in the garden at the time. However those listed above are the main ones used and will give the true flavour of this dish. SharonCb
