Instead of Grilling......

How do you modify a recipe that calls for grilling the meat? A

Would you bake it in the oven at 375 or 400 for instance?

Or broil it, maybe?

I had a cast-iron grill/griddle that sat on the burners, but it made such a mess, and smoked, and was a bear to clean. Now that I have a smooth-top, I don't think I would use one of those on it anyway.

I have a George Forman electric grill. It does a very good job of grilling with very little mess on my kitchen counter. And it isn't hard to clean. Not all that expensive either. Otherwise, I would broil in the oven.

We got the griddle instead of a grill on our 48" Wolf rangetop (after much angst -- we went back and forth right up to the day we placed the order). We had a wonderful dealer near us that offers demos -- you come in and sit at the counter and they cook things on whatever configuration you are considering. They also let you do the cooking if you wish. (I think the grilled emmenthaler and bosc pear pannini with black forest ham might have sealed the deal for us! ;) I think I would probably have used the grill as well, but was concerned about grease with meats (we grill a lot of lamb) and general cleaning/smoke issues despite assurances that it was easy to clean the grill. Plus my outdoor gas grill is just a few steps outside the kitchen door and can be used unless there is deep snow. At some point, we had a "eureka" moment when we realized that we really do tend to make "winter-type" dishes (stews, braised meats, soups) in the colder months and we tend to grill in warmer months ANYWAY, because we feel more like long-simmered coq au vin, etc., in the winter and we feel more like light salads with grilled shrimp tossed on top in the warmer weather. So we got the griddle with lukewarm enthusiasm, but I have to say: I LOVE it! We do grilled sandwiches, paninis (we bought a press that you just set on top of the sandwich), fried eggs, pancakes, french toast -- all of which we now make more often because it's so easy to fire up the griddle. And what I really love is that you can also use it on a low setting to keep plates warm and/or "hold" prepared food for serving. It's proved to have many more functions than we expected and we're very glad we got it! So I would say try to think through your cooking/menu/eating habits, then decide whether you'd be likely to get enough use out of it to justify giving up the burners.

"Saw them yesterday in a store where they cook on a daily basis. THe oven there was 2 years old and the grill and griddle looked almost brand new. " I would be cautious with such observations. We went to the Gaggenau distributors to see their ovens. The steam oven had its racks missing. I asked why, they said they had sent them out to be realy cleaned! So you never know if they replace them, pressure wash them, or whatever method to make sure they show well. BTW, we are still getting the steam oven as we don't care if it gets dirty....

I think the categories are up for intrepretation and I think it really should be up to the Sender. Even the apron I sent to Linda, which actually was packing material, could be classified as a Cooking Method or at least for me it could be. Serving pieces would definitely qualify as a Method. I buy specific pieces for certain dishes and I am sure others do as well and this is a "Method" in my book. I had trouble with the Ethnic Category which for most was probably easy. I almost went to the extreme of getting something "Made in China" for that one! Michelle

I can't imagine cob corn in a Foreman short of slicing them into halves or even fourths, unless you cut them into little disks which, eh. Seems like it'd take forever with dubious results trying to do it whole. I've thought a few times about a Foreman and nearly bought one with the removable plates that was on clearance but really couldn't justify it. Between an electric frypan the Nesco and the glass bowl convection oven, I'm not sure that it can do much for me in addition to what I have except 2 sided frying for burgers and such and actually the convection does almost the same. Plus I hear such mixed results with users. Guess it's a love it or don't even want it appliance. My biggest problem is the grease dripping into the tray. Not sure I'd want to deal with that.

broiling gives that quick sear, like using the grill...

know what you mean about the cast iron grilling pan...it always looks so easy when they use it on tv...but no matter how hot i got it or used a oil wipe, it was a huge mess! i do agree about the glass top...

Susan--the oil was probably the problem. Oil leaves a sticky, hard-to-clean residue on cast iron. CI needs to be seasoned with solid shortening (like Crisco).

A forman-type grill will probably be the closest to grilling outdoors. It can be done completely mess-free, if you line your Forman Grill, top and bottom with parchment. It cooks just as well (you'll still get grill marks) BUT the food stays more moist, and you won't have any mess cooked onto the grill to clean off later.
If you don't have one of those, then I'd go with broiling

I use a hard anodized aluminum grill pan on my stove top. I rub a bit of olive oil on it before I heat it up. After I remove my cooked protein, I pour water on the pan and use the
OXO Good Grips Grill Pan Brush to loosen all of the cooked on bits. Then, I turn off the gas burner. After our meal, I carry the cooled pan and wash it with dish soap and water. Usually, it cleans up easily.

It depends on the cut and type of meat. What are you making? I wouldn't broil chicken breasts for example.

If you can grill it you can broil it. I grew up with the broiler being in use all the time. Breaded of dipped in egg mixture was pan fried (or "grilled"). Anything naked or marinated was broiled. It's a great way to get a nice seared outside without drying meats out.

Roasting is a different process. You will not get the same texture by roasting in lieu of grilling.

An example would a recipe that has grilled chicken (skin on pieces) then brushed with a glaze. I have a number of recipes like that and they all sound so good.

I do my thick chops on the stove top to sear them then finish in the oven. I was wondering if chicken could be done similarly.
