Range with grill or griddle??

I am trying to decide between the grill or griddle option on my range purchase. (I am leaning toward the DCS dual fuel.)

A salesman who seems very knowledgable told me not to grill inside the home - too much smoke etc. He highly recommended a griddle.

Please tell me what you use the griddle for - I know you can cook on it. But why the griddle instead of a pan on a burner??? I am not a gourmet cook so this is a new option for me. :) What is the advantage of the griddle?

There was a good thread on this a few months back. You might do a search for it. I had just the opposite recommendation from Trevor at Eurostoves. He recommended the grill and using a griddle plate on top of it to have the best of both. I thought I would rarely use the grill but would use the griddle more often. I took Trevor's advice. We only do veggies and chicken on the grill but it does a wonderful job. We have been using our new range for about 4 months now and have used the grill at least once a week. We have yet to use a griddle plate on it but when the time comes, I know it will work well. BTW, with good ventilation, smoke should not be a problem. We have never had an issue with smoke.

We got the griddle instead of a grill on our 48" Wolf rangetop (after much angst -- we went back and forth right up to the day we placed the order). We had a wonderful dealer near us that offers demos -- you come in and sit at the counter and they cook things on whatever configuration you are considering. They also let you do the cooking if you wish. (I think the grilled emmenthaler and bosc pear pannini with black forest ham might have sealed the deal for us! ;) I think I would probably have used the grill as well, but was concerned about grease with meats (we grill a lot of lamb) and general cleaning/smoke issues despite assurances that it was easy to clean the grill. Plus my outdoor gas grill is just a few steps outside the kitchen door and can be used unless there is deep snow. At some point, we had a "eureka" moment when we realized that we really do tend to make "winter-type" dishes (stews, braised meats, soups) in the colder months and we tend to grill in warmer months ANYWAY, because we feel more like long-simmered coq au vin, etc., in the winter and we feel more like light salads with grilled shrimp tossed on top in the warmer weather.

So we got the griddle with lukewarm enthusiasm, but I have to say: I LOVE it! We do grilled sandwiches, paninis (we bought a press that you just set on top of the sandwich), fried eggs, pancakes, french toast -- all of which we now make more often because it's so easy to fire up the griddle. And what I really love is that you can also use it on a low setting to keep plates warm and/or "hold" prepared food for serving. It's proved to have many more functions than we expected and we're very glad we got it! So I would say try to think through your cooking/menu/eating habits, then decide whether you'd be likely to get enough use out of it to justify giving up the burners.

larsi, I'm sorry, I didn't think to check back on this thread and I did not see your question. I can't see how to send you a PM, so I'll answer here and hope that you see it. To activate the auto-shutoff on a Miele burner, touch the timer button (the one that looks like a stopwatch) TWICE...you will see that a red dot flashes next to the burner that is 'on'. If you have more than one burner on, then keep tapping the timer till the red dot lights up next to the burner you want to set. Then set the timer. You don't have to do anything else, once it's set, it's set. If you want to also set the "regular timer" you can do that as well. It will not clear the original timer setting. If you do want to clear the timer altogether for a burner, push both the + and - buttons simultaneously. Cleanup on this cooktop is a blast, isn't it? I also use microfiber--it does a stellar job of shining things up. Hope this helps, Cj

I had the 48" DCS in my last house. Overall we weren't impressed with the DCS, it needed service a couple of times in the first couple of years (we lived with it for 4). However, the griddle was great, we loved it. It was great for pancakes, toasted sandwiches and reheating pizza! We had the grill, but as vegans didn't use it much, maybe for veggie burgers etc. It did work well and seemed to get as hot as needed. I recently bought the 44" Aga Legacy for my real Victorian remodel. SOOOO unhappy with it that my awesome dealer (Yale Appliance in Boston) offered to take it back (long story). We picked out a 48" Monogram with the griddle today to replace it. We are very lucky that we can move a cabinet and fit the 48" in. I was sold on the Monogram by the chef who works at Yale. He is beyond knowledgable and has no incentive to sell me anything. He pointed out lots of features the Monogram has over the Viking, Wolf etc. I was also shopping ovens, and the size and rolling shelves of the Monogram sealed the deal. GE took the brand back from DCS and really put a lot of thought and engineering into the brand.

Hi borngrace, It's not so much a question of "needing" an internal or external blower, it's a choice. An external blower will keep the hood as quiet as a mouse when you turn it on, BUT, the downside is that you'll have a very large box mounted to the outside of your house! Some people are OK with that, many people are not. Some neighbors don't like it, either. Depending how close your neighbor is?? Internal blowers will be noisy, but nothing will get mounted outside. Just make sure (whatever way you go) you turn on the hood 10 minutes BEFORE you actually start cooking. An exhaust fan is supposed to circulate & move the air in the entire house before you even turn on one burner! So, when you start cooking, and start making smoke, it will disappear right away. Otherwise, if you wait until you see smoke, and then turn it on, you're too late. Many people do not know this or realize this, and we always get phone calls from customers saying that their new $2000 hood doesn't work. :) 1200 CFM should be PLENTY. BTW: Most large CFM rated hoods ARE loud. That's how you know it's doing it's job. Good luck! Chris

The 2009 code in many cold weather states require MUA systems for over 400 CFM M1503.4: "Exhaust hood systems capable of exhausting in excess of 400 cfm shall be provided with makeup air at a rate approximately equal to the exhaust air rate. Such makeup air systems shall be equipped with a means of closure and shall be automatically controlled to start and operate simultaneously with the exhaust system." "Makeup air required: Exhaust hood systems capable of exhausting in excess of 400 cfm (0.19 m3/s) shall be provided with makeup air at a rate approximately equal to the exhaust air rate. Such makeup air systems shall be equipped with a means of closure and shall be automatically controlled to start and operate simultaneously with the exhaust system." A2 is strictly enforcing this. I decided to go induction and stay under the 400 CFM. I was leaning toward induction and this just tipped the scale. I am probably going with a Broan evolution hood @ 350 CFM and 4 halogen bulbs using theater lighting. The zephyr genova is very discreet, but concerned that the single fan on the left might not do the trick (only 250 cfm). The ventahoods have a true HEPA filters. I figure A2 is pushing me into the future. If you go too high on CFM, there are dangers, so I plan to avoid the problems! Good luck!! PS - I plucked the Wolf induction on sale. Love the appearance of the surface and had no trouble with the controls - I used my knuckle to tap the power up and down when my fingers were slimed! I liked the large burner and the set up of the burners and only one cook as my husband only knows how to order pizza and not cook. I only tested it at the appliance dealer, so can't wait to the kitchen is done and I actually can really test it.

Lots of previous threads on this very question -

I would agree about grilling indoors -esp since most seem to have adequate nearby grilling outdoors

As far as griddle I opted on our 36" AG viking range to purchase the accessory griddle - it sits over 2 burners -does the same job as built in griddle - easy to clean & offers the ability to use all 6 burners in any config I need at a given time

I agonized over this decision & ended up getting the Wolf griddle model because I lucked into a great deal on one. Also, grew up using an O'Keefe & Merrit range that had a center griddle so I KNOW I'll get good use out of one. (Perfect for hash browns!) Another idea I had for the griddle--the thermostat goes as low as 100 degrees. So I think that by warming the griddle and then shutting it off, it will be really handy for raising yeast doughs.

But living in Wisconsin, part of me still really, really wants a winter grill. The other part doesn't like the idea of running a 1200 cfm exhaust fan in the winter...

Thanks everyone for your opinions. I decided to let my husband grill outside!!! And so I will go with the griddle. I can't wait to try pancakes on it.

I thought I was going to get the Griddle. I asked my husband which he would prefer, he said grill. I was concerned about the smell, as well. But we are spending a lot of money for the hood/ventilation so I guess might as well get our money's worth. The Presige insert should suck the smell out of the house!!!!

I used the 60 inch Prestige high capacity hood liner w/a 2500 CFM remote blower and had a 72"X28" capture area built to mount it in. Not a sliver of smoke escapes and I have yet to have to run it on full high when cooking.
